How to BBQ Ribs at Home on Your Gas Grill!

Tear off 4 large square sheets of aluminum foil. Drizzle all 4 foil aluminum square pieces with olive oil. Put 1 Tablespoon of butter on each foil sheet. Dice potatoes into cubes . Leaving the skin on. Divide up the cubed potatoes and place on top of the butter on each aluminum foil square.

Evenly sprinkle minced garlic and diced onion over each of the four servings. Then sprinkle with kosher salt & pepper. Drizzle with a bit more olive oil.

Put steak pieces on top of potatoes. Season with a bit more salt and pepper and your favorite steak seasoning. Drizzle with a bit more olive oil and put another pat of butter on top. Also, another good tip to keep your meat from getting dried out while cooking is to add a large ice cube on top of the meat!

Fold up each of the sides to make a nice little bed for the potatoes, making a square, so none of the butter and oil can escape while cooking. Preheat grill to medium-high heat Grill packets for about 35-45 minutes. Check periodically for doneness. Be careful when opening the packets because the steam is gonna come outta there fast and furious.

Begin Cooking The Ribs On The Grill

Preheat your BBQ grill to around 200 degrees Fahrenheit. You should then oil the grill.

You may need to increase the grills preheating temperature to get the wood to burn, and a temperature of around 375°F is ideal. Before putting the ribs on the grill, turn the heat down to 200°F once you observe smoke coming from the smoke bombs.

Another important consideration is placing the rack of ribs on the grill. To grill the ribs, use indirect medium heat. Direct heat or overheating will dry it out or overcook it before being served.

How To Tell If They Are Done

This is the biggest issue. Too long, and they are dry and overcooked. Too short, and they are tough. I’m combining three things.

1) Temperature, I want the instant-read temperature at 190° plus range. More like 200°-205° is better. It is hard to get an accurate temperature due to the thin meat and the bones interfering.

2) I want to see some bone. This means the ends of the rib bones are sticking out some.

3) When I pick up the ribs with tongs holding them about of the way up, they crack some.

If you use a larger rib like a St. Louis or similar, they will also take longer. DO NOT GO BY TIME ONLY HERE.

How To Smoke With Wood Chips On A Gas Grill

The best way to really take your grill smoking to the next level is by using wood chips.

To do this youll need to invest in a smoker box. These are small steel boxes that contain lit wood chips. They then sit on the grates of your grill, while the smoke they emit infuses your meat with added flavor. Theyre tend to be fairly cheap and are durable enough to last you for at least a good few years.

Note that we want to put the chips in a smoker box to help them last longer and emit stronger smoke. If you put them directly on the burners then theyll just burn out quickly and create a load of ash, which will create a bad cooking environment.

Alternatively, you can use foil. However I would recommend against this because I just dont find it as safe or as durable as using a purpose made smoker box.

  • Rubs ribs under cold water. Dab dry with paper towel.
  • Use blunt knife to remove membrane from ribs, and any other excess fat.
  • Combine rub ingredients in small bowl. Apply rub liberally to meat.
  • Wrap ribs in foil and transfer to refrigerator. Leave for one hour.
  • Preheat gas grill to 225°F . Set up for indirect grilling by igniting one half of the grill, and cooking the ribs on the other.
  • Cook for 4-5 hours, or until internal temperature of meat has reached 145°F . Spritz with spritz ingredients in spray bottle every 30 minutes.
  • Brush topside of ribs with BBQ sauce. Cook for 30 more minutes.
  • Remove from grill and rest for 10 minutes. Serve and enjoy.

What You Will Require

Due to the indirect cooking method, your gas grill must have at least two burners and be large enough to accommodate the rack of ribs on one side while leaving room on the other. The heat source will be on the opposite side of the grill from the rack of ribs.

To grill ribs, youll need the following tools and ingredients:

  • Fuel for your gas grill
  • 1 rack of pork spareribs
  • Wood chips or chunks for smoke
  • 1/2 cup apple juice
  • Good barbecue sauce for ribs

Applying Bbq Sauce On The Ribs

At last we come to probably the most essential part of barbecue ribs, the barbecue sauce itself. So choose a good authentic barbecue sauce, or else it might ruin the whole rib. A good barbecue rib is sticky with sauce.

Therefore, apply the bbq sauce on one side of the ribs. And then keep the ribs on the grill to let it cook for a bit.

After that, apply the sauce to the other side of the rib and again keep it on the grill to cook.

Repeat this process until you have at least two coats on each side of the rib.

After five minutes of your last coat, you can remove the rib from the grill. Further, let the ribs rest for 15 minutes before you serve it.

The Wrap: In order to get the ribs tender, and to save the beautiful color, be sure you wrap them tightly with foil or butcher paper.

The Thermometer: Dont trust your grills thermometer, use a reliable leave-in thermometer so you know the temperature at the grill grates where the ribs are cooking.

The Smoke: Pellets or wood chips, fancy box or foil packet, just leave it over the direct heat of the grill and it will produce a nice smoke for your ribs. You dont need to see so much smoke that you think somethings on fire. Clean smoke is almost transparent, and clean smoke is a must for good flavor.

The Moisture: Gas grills tend to offer a pretty dry cooking environment, because they dont seal like a Kamado style grill. This means youll need to spritz the ribs every hour to keep them moist.

The Lid: Keep it closed as much as possible. Once you close the lid, dont be peeking in on the ribs, no matter how tempting. That lets the heat and smoke out.

How to Cook Ribs on a Gas Grill

Where you place the ribs on the grill is most important. You need indirect heat to cook ribs without drying them out or overcooking them. The goal is to hit temperatures up to 375 F/190 C.

If you have a grill with the burners running front to back, you will need to use one of the burners on either end. Let’s say you are using the left side burner. This means you place your smoke bombs directly over this burner . The ribs will be placed on the grate to the right of the hot burner. If the rack of ribs is short enough to be placed running parallel to the burners, set it near the hot burner but not over it. Otherwise, you might have to place it in a more diagonal position on the grill, which will require rotating the rack of ribs occasionally to even out the cooking.

Place the rib rack bone-side down on the grill, close the lid, and adjust the grill until it holds a temperature of 300 F/150 C. Let the ribs cook for 30 minutes. Don’t open the lid as keeping it closed will hold in as much smoke as possible. Don’t expect a lot of smoke to billow out of the grill as there won’t be a tremendous amount of smoke production.

Pork Ribs On A Gas Grill

Start by removing the ribs from the packaging. Rinse the ribs and pat dry with a paper towel.

Remove the membrane from the bone side of the ribs. Check this YouTube video for an easy demonstration.

Coat the ribs with a thin layer of yellow mustard and then sprinkle the BBQ rub liberally. Be sure to cover both sides. The ribs can sit for up to 24 hours refrigerated.

Set up your gas grill for indirect cooking. See our short tutorial on Two Zone Grilling.

Turn on one burner on the direct side on to its lowest setting.

Fill the Smokist Pouch with your desired wood and place on top of deflector or flavorizer bars. For the Tube Smoker, fill and light with a propane torch before placing it in the grill.

Allow the grill’s temperature to level out and the smoke begin to roll. Hopefully it will stay below 300°F and hover around 250°F.

Once the grills’s temp has settled in go ahead and place the ribs in the rib rack on the grill on the indirect side. Close the lid to your grill and let it cruise for about 3 hours. And Remember: If you’re looking you ain’t cooking! Don’t keep opening that lid!

Place the wrapped ribs back on the indirect side of the grill and close the lid. At this point you can raise the temperature of the grill about 50°F. Allow to cook for another 90 minutes to 2 hours.

Gas Grill Ribs Cooking Instructions

  • Prep the ribs by removing the menbrane of the back side of the ribs and trim any bone fragments or excess fat. Brush about 2 tbsp of mustard on each rack then season liberally with dry rub.
  • Once the Grill is up to temperature Place the ribs on the grill grates on the oppisite side of the water pan over indirect heat. Smoke the ribs for 1 hour before sliding the water pan over, remove the grill grate and replace the foil pouch with a fresh one. Replace the foil pouch once an hour with a fresh one.
  • The ribs will smoke for 3 hours before you will mop with a 50/50 blend of apple juice and apple cider vinegar. You can add a few teaspoons of liquid smoke to add a little extra smoke flavor. After the 4th foil pouch has burned off its time to wrap the ribs in foil.
  • Add a few tbsp of butter to each rack before wrapping in foil and cooking for about 90 minutes. Unwrap the ribs and brush with bbq sauce and cook for 20-30 minutes to let the bbq sauce set. Slice and serve the ribs and no one will know you smoked these baby back ribs on a gas grill.

    Oven Roasted Baby Back Ribs

  • Season the ribs all over with rib dry rub, cover well, and refrigerate overnight.
  • Preheat the oven to 325°F. Allow the ribs to come to room temperature, then lay them bone-side down on a wire rack. Fit the wire rack on a baking tray lined with foil.
  • Add to the oven and bake for approximately 1 hour. After 1 hour, brush with BBQ sauce and continue cooking for 15 minutes. When the ribs reach 195°F to 200°F, they are ready to enjoy.
