How To Make The Best Sundried Tomato Cream Marry Me Chicken:

BEST Grilled Chicken Marinades
  • Start by heating olive oil in a skillet over medium-high heat. Sear the chicken breasts for about 4-5 minutes per side. Season well with salt and pepper.
  • Remove the chicken from the skillet and add finely diced garlic. Cook for only 1 minute since garlic can easily burn. Add thyme, red pepper flakes, chicken broth, and cream to skillet. Cook until cream sauce begins to thicken — about 5 minutes. Stir in sundried tomatoes.
  • Remove from heat and add chicken to the skillet. Spoon sauce all over the chicken. Place in an oven set at 375 degrees and cook for 15-18 minutes to until chicken is cooked through. If using thinly sliced chicken breasts, reduce baking time.
  • Top with fresh basil and freshly grated parmesan cheese, if so desired.
  • Almost five years before I started Modern Honey, I entered and participated in recipe contests all over the country. One of my most memorable ones had to be Cooking Channel’s Perfect 3 Contest to find the most perfect cookie recipe. The grand prize winner would be flown to New York City to film a segment for a show in the Food Network Studios.

I wanted to win this contest so badly so I got busy right away in the kitchen concocting a brand new cookie recipe in an attempt to woo the judges. I came up with a saucepan browned butter cookie with toffee notes and both white chocolate and semi-sweet chocolate chips. I named them, “I WANT TO MARRY YOU COOKIES” and shared my own little love story.

I have previously always used plastic bags for these chicken marinades.

Im trying to move more towards storing them in reusable containers to cut down the plastic waste, but struggling to fit too many sturdy containers in the freezer PLUS the marinade/freezing works better in a container where you can remove the air .

So Im on the hunt for reusable plastic bags to store them in. Ill update the post when Ive tested some!

Where Do Chicken Fajitas Come From

    The BEST Chicken Marinade

Chicken steak or shrimp fajitas have to be one of my favorite Mexican foods and one of the most beloved Mexican foods, right alongside tortilla soup, carne asada, carnitas, tacos, burritos and enchiladas so I was surprised to find that fajitas dont come from Mexico at all! Fajitas originated in Texas in the 1930s when vaqueros cooked skirt steak then throwaway butcher meat- over the campfire. In fact, Fajita has its roots in Tex Mex the word faja is Spanish for strip, or belt, and ita means little describing the little strips of meat.

It wasnt until the 1980s that what we know as Steak and Chicken Fajitas served with sizzling onions and peppers alongside tortillas rice and beans were popularized by numerous restaurants in Texas. Before that, fajitas as we know them, where relatively unknown even in Mexican food rich states as California and Arizona! Mind blown.

    So Easy Grilled Chicken Marinade

Say goodbye to dry, bland grilled chicken breasts. This recipe guarantees juicy, flavorful chicken every time.

Sometimes in cooking the simplest dishes are the hardest to get right, and grilled chicken is a perfect example. Because boneless chicken breasts are so lean, they often turn out dry, rubbery, and bland. Contrary to popular belief, marinating alone will not save grilled chicken from drying out in fact, its often the marinade that causes the problem!

My technique and marinade ensure tender, juicy, and flavorful grilled chicken every time. You can serve the fillets on their own as a healthy main course , topped with cheese on a toasted bun, or, as I often do, sliced over a Caesar salad. Bonus: the recipe is quick and easy. You do all of the prep ahead of time and you wont even dirty a single bowl.

Do I Have To Add Chipotle Chili Powder

You are probably familiar with all of the chicken fajita marinade ingredients except perhaps chipotle chili powder and liquid smoke but I recommend purchasing them both as they will become pantry staples.

Chipotle Chili powder is ground up dried chipotles and adds a smokey heat as opposed to just pure heat. It can be found in any grocery store along with the rest of the seasonings. It is sometimes called chipotle chili pepper or chipotle chile powder. If you need to make these Chicken Fajitas NOW, then you can substitute the chipotle chili powder with ¼ teaspoon cayenne pepper. Cayenne pepper is spicier, so that is why youll want use less.

Yes, you may freeze either the chicken after it is cooked or the chicken when it is added to the chicken fajita marinade. I do not recommend freezing the bell peppers as they will become mushy when defrosted.

What Temperature Should Chicken Be Cooked To

Chicken breasts and chicken tenders are done via any cooking method when they register 165 degrees F on an instant read thermometer.

Chicken thighs and legs are safe to eat when their internal temperature reaches 165 degrees F but they are juicier and more tender when cooked to 170-175 degrees. F. Chicken thighs contain more connective tissue than chicken breasts which takes longer to break down. Cooking them to a higher temperature will ensure that the dark meat becomes even more tender and juicy verses chewy and rubbery.

How Do I Make Easy Chicken Fajitas

  • Slice Chicken. The Chicken Fajitas recipe starts by slicing 2 chicken breasts in half horizontally. This ensures tender chicken that doesnt dry out.
  • . And then comes the magic. The chicken is marinated in your homemade chicken fajita seasoning of chili powder, cumin, smoked paprika, oregano, garlic, etc. swirled in a bath of lime juice, orange juice, soy sauce, and Dijon Mustard. Marinate in the refrigerator 6 hours up to overnight .
  • Cook Chicken. When ready to cook, let chicken sit at room temperature for 15-30 minutes, this ensures even cooking. Next, heat 1 tablespoon olive oil in a large skillet over medium high heat. Once very hot, dab excess marinade off chicken and add to skillet. Cook chicken undisturbed for 2-3 minutes, or until nicely browned on one side. Turn chicken over, cover , and reduce heat to medium. Cook for approximately 2-4 more minutes , or until chicken is cooked through.
  • Rest Chicken. Remove cooked chicken to a cutting board, tent with foil and let rest 5 minutes before slicing across the grain into strips. This resting time allows for moisture to redistribute and reabsorb evenly throughout the chicken. If you slice your chicken without letting it rest, the juices will ooze out and you will be left with dry chicken.
  • Assemble: Layer tortillas with Chicken Fajita mixture and desired toppings.
