The key to the perfect baby back ribs on the pellet grill is to cook them low and slow. These ribs will be cooked at 225*F for about 4 to 5 hours.

Remember these will take a while to cook, do not expect them to be done early.

Its best to get the internal temperature to about 185*F. This is a great temperature to get a combination of ribs that fall off the bone slightly, but not completely. This temperature makes the meat perfectly tender and it just really melts in your mouth.

I suggest doing the brown sugar rub in the recipe card or your own choice of rib rub to give them some additional flavor, then when they are cooked, add a nice layer of barbecue sauce before serving.

Let the ribs rest for about 10-15 minutes before cutting them and serving.

Wood Pellet Pork BBQ Ribs are amazing. I am so excited to get cooking on the Traeger, mostly because I do the food prep and my husband cooks. I dont know about you, but we are so happy to start cooking more outside.

Season The Baby Back Ribs With A Dry Rub

After the ribs have been cleaned up it is time to season them with a dry rub. You have lots of choices when it comes to rib rubs including:

  • 2 tablespoons kosher salt
  • 2 tablespoons coarsely ground black pepper

Season both side of the ribs generously and let the ribs sit at room temperature for at least 30 minutes to give the rub time to fully bind to the meat.

You can buy ribs at the butcher shop, grocery store, or mass market retailers like Costco. Ribs from the butcher will usually be sold individually and pre-trimmed so you know what you are getting. The butcher will usually have their ribs cut down into St. Louis style while the mass market retailers sell spare ribs that you cut down yourself.

When buying ribs, look for marbling and uniformity of the rib so it cooks evenly, and make sure there are no shimmers. That is where the butcher got too close to the bone and nicked it with their knife. Look for marbling. Fat provides a lot of flavor but find ribs that have the least amount of fat because youll end up trimming it. Look out for blood spots on the meat. This usually means the animal suffered and muscles tensed up.

Smoking The Baby Back Ribs

Once the smoker is ready at 300°F and you have your ribs rubbed with your choice of pork rub. You can place them into the pellet smoker and close the lid.

You will want to check them for color and see if there are any overly dry areas on the rub. If there are dry areas, give a quick spritz of a 50/50 mix of apple juice and apple cider vinegar. And close the lid and let the ribs smoke away for a further 30 minutes.

After an hour and a half, your ribs should have a deep mahogany color on them and if you rub a finger on the ribs, the seasoning shouldnt come off. This means they are ready for the wrap stage.

To wrap your ribs, you will need 2 sheets of foil per rack of ribs. Due to the bones, they can be sharp and if you pierce the foil, you have a secondary layer of protection to hold in the valuable juices.

You will want to add some brown sugar, maple syrup, honey, butter and some of the spritz to the foil and lay the ribs meat side down on the wrapping ingredients.

Fold up the foil and make sure you have the ribs tightly wrapped to prevent air pockets and any chance of steaming the ribs.

These then go back into the smoker for an hour. At this time you can put all of the sauce/glaze ingredients into a heat-proof pot and stir them up and place in the smoker to thicken up and allow the sugars to dissolve.

After an hour, unwrap the ribs and stick a probe into the meat between the bones and if there is no resistance, they are ready for the next stage.

How To Keep The Ribs Moist

As the ribs are cooking, its very important to spritz them with liquid every 20-30 minutes. This is going to help the meat retain its natural juiciness.

You can spritz with juice, ciders or beer, but honestly water works great, too.

Throughout the cook, open the lid and look at the ribs. If they appear a little dry, give them a really good spritz. Its okay if the water puddles a bit on top. The ribs will soak it right up.

The other key to juicy ribs is cooking them at the right temperature and to the right temperature.

When developing this recipe, I cooked some individually smoked pork ribs at a grill temp of 225F degrees, and I found that they dried out a bit too much. Cooking them between 250-275F degrees was the sweet spot.

Youll know theyre ready when the internal temperature of the meat reaches between 200-208F degrees.

145F degrees is the perfect temperature for pork chops, but for pork ribs to be tender, they need to be cooked a lot further than that. As the meat starts to form a nice bark, stick a Thermapen into the meat, avoiding the bone. Once it hits this goal temp, theyre ready to be sauced.

How Long Does It Take To Cook The Potato

1 hour of cooking unwrapped and slathered in barbecue sauce . Lay the unwrapped ribs on the grill with the bone side down. You want to start checking for doneness within the first 20 minutes or so. As they get 20-30 minutes to being done apply and reapply as much barbecue sauce as you want. Towards the very end you can even crank the grill temp up, if you want to make sure your sauce gets nice and tacky.

Even though the Ninja Foodi Grill has a grill setting, I prefer using the roast setting with the air fryer basket.

The reason I use the basket is because it helps provide even air flow on all sides of the ribs. Preheat the Ninja Foodi Grill to Roast with a temp of 250F degrees and a time of 2 hours or so.

Once the grill is pre-heated, add the ribs. You can fit 8-10 at a time. Close the lid and cook for 1 1/2 hours, spritzing occasionally with liquid.

Simply put, the 3-2-1 method is a best odds process for making delicious BBQ ribs that remain moist and tender after a long cooking time. It breaks down like this:

3 hours of smoking time.

2 hours wrapped in foil and placed back onto the pellet smoker.

1 hour unwrapped, place back onto the grill and sauced. This portion of the cooking time is completely subjective. If your ribs are the right temp and feel after 20-30 minutes, remove them.

A total cook time of 6 hours.

The bone side of the ribs will have a thin paper-like membrane that should be removed. If you do not remove it, and smoke it for hours, the papery membrane will thicken and create an unpleasant texture when biting into the ribs.

Chefs Tip: Use a sharp knife to start a small cut along one corner of the rib bone and membrane. Then use a paper towel to grab the slippery membrane. Pull that corner gently and remove the membrane. The towel helps avoids losing grip on the slippery membrane.

After smoking the ribs for three hours, the meat should have a dark mahogany color. Take it out and put it on a heavy-duty tin foil. You could also use two layers of foil.

Next, apply melted butter on top of the ribs using a brush. Follow this up by brushing it with melted honey. Alternatively, you can apply maple syrup then spread brown sugar along the length of the meat.
