This video is really different from the first video for two reasons. The first is that it shows you a completely different way of arranging the charcoal. This method is called the Snake Method or the Fuse Method. The second difference is that, after the ribs get plenty of smoke for the first couple of hours, they are wrapped in aluminum foil.

He doesnt really go into why the ribs are wrapped but pitmasters do this for two reasons. First off, wrapping the ribs in foil accelerates the cooking process and get the ribs off the pit faster. Secondly, wrapping the ribs helps protect the color and prevents them from taking up too much smoke.

Whether or not you should wrap your ribs and exactly how to wrap them is a matter of preference and debate. Dont worry about that part right now and instead take a few minutes to learn how to set up a snake!

Seasoning Slicing And Serving

I prefer my steak the Argentine way: cooked with nothing but salt and pepper, perhaps served with a nice sauce. There is, however, something to be said about Korean-style kalbi, although to be honest, I’ve found that the nicer the restaurant and the higher the quality of the meat, the less likely you are to see an over-marinated steak.

Short rib is a bit tougher than the premium cuts of meat, so once again, slicing thinly against the grain before serving is the way to go.

In this low and slow method, your beef ribs will take six to eight hours to cook. You may see the fleshy part start to loosen from the bone as they reach the end. Use your tongs to see how tender they are. You can also cut into the meat to make sure there is no pink remaining.

If your ribs are in a rack, you can twist the center rib. If it comes away from the meat easily, your ribs are ready.

What about a meat thermometer? Ribs are not the most practical cuts into which to try to insert a probe. Some areas are pretty thin. Temperature measurements near the bone do not tell you about meat in the center of the rib.

  • Prepare BBQ for indirect cooking, use a smoker or an indoor oven. Set the temperature of your BBQ kettle, pellet grill or smoker to 250f or your indoor oven to 302f .
  • For gas BBQ’s with 3 or more burners, set for indirect cooking at 356f .
  • Hood/lid/door will need to be closed for the entire cook whether you use a BBQ kettle, smoker, pellet grill, indoor or gas.
  • You can add 2-3 chunks of wood to a BBQ Kettle for a smoked flavour.
Ingredients

3-4 bone-in trimmed beef short ribs Olive oil Enough 50/50 mix of beef stock/water, apple juice/olive oil or plain water to spray the ribs throughout the cook

For the seasoning:1 tablespoon ground sweet paprika 2 teaspoons dry mustard powder3 teaspoons garlic powder1 teaspoon of light brown sugar1/2 teaspoon celery salt1 teaspoon black pepper1 teaspoon sea salt

Triple the seasoning ingredients and place in a jar, store in the pantry for 2 months.

Method

Step one – Combine the sweet paprika, mustard powder, garlic powder, onion powder, celery salt, pepper and sea salt in a bowl. Set aside until needed.

Step two – Trim ribs of excess fat and pat dry with paper towel.

Step three – Cover the ribs entirely with olive oil and the rub seasoning. Refrigerate for 2 -4 hours if you have time. Allow the ribs to reach room temperature before starting the low and slow cook. Coat the ribs again right before placing them in your preferred heat/cooking source.

Step four- Place the ribs on grill grates.

What Cut Of Meat Do We Need For Korean Bbq Short Ribs

So what makes them Korean beef short ribs? The flavors understandably and also the way they are cut.

Normal beef ribs that are commonly called short ribs are sold with the bones intact and usually with 3 bones in them, running the full length of the ribs of around 8 in length. Yet Korean short ribs are sliced around ¾ of an inch to an inch thick, and through the whole rack of around 4 to 6 bones. So you end up with small pieces of bone in each slice.

Although these are cut from exactly the same cut of beef, they are cooked totally differently. Whole short ribs are a tough cut and need to be cooked low and slow to break down all of the connective tissue and the hard muscle.
