How To Avoid Grill Flare
Cooking over indirect heat will minimize flare-ups, but your grilled chicken thighs will drip fat as they cook and will build up on the bottom of of the cool side of your barbecue and in your drip pan each time you cook.
Always check your BBQs grease pan and anywhere in your BBQ that grease builds up between grilling and empty out any accumulated fat. Then after grilling, once youve transferred your cooked chicken to a platter, crank up the heat for a few minutes to burn off excess fat to avoid a potential grease fire later on.

Should Chicken Be At Room Temperature Before Grilling
You dont want the raw meat to sit at room temperature for an extended time. Bacteria multiply rapidly, especially in the temperature danger zone between 40 to 140°F . They can double in as little as 20 minutes, be careful on those hot summer days! Never leave food out of refrigeration for over 2 hours, or it could cause food spoilage or illness. However, its okay to let it sit at room temperature for no more than 15 minutes while preheating the grill to take the chill out of the chicken for even more cooking.

The Best Chicken Thighs To Use For Grilling
In my opinion the best chicken thighs to use are bone-in chicken thighs. The bone-in keeps the meat tender and juicy while also infusing flavor from the bone into the meat. However, if you prefer to use boneless you can definitely do that as well. The cook time will be less with boneless. It just depends on your preference.

How To Keep Chicken Thighs From Drying Out
Honestly, the best answer is dont overcook it and watch the temperature! Ive found the best grill temperature is around 375°F. It is hot enough to sear the chicken, but not too hot to overcook it.

Grilled Boneless Chicken Thighs Pro
- Trim excess fat from the chicken thighs – Rastelli’s chicken thighs come nicely trimmed, but if your chicken thighs have excess fat on them you may want to trim it. This will help the chicken to cook evenly and for the chicken not to shrivel up as it cooks.
- – the longer you let the chicken sit in the solution, the more flavor it will impart onto the meat. At a minimum, marinate the chicken for 30 minutes – 2 hours. For optimal flavor, marinate for 12 – 24 hours.
- Scrape the grill grates before heating up the grill – removing any old burnt food bits from the grill before preheating protects the flavor of the chicken and keeps any burnt food chunks from sticking to the chicken.
- Drain/discard the marinade – the solution imparts plenty of flavor into the chicken so we won’t need to reuse it in the recipe. If you’d like, you can pour the marinade over the chicken as it cooks, but you can also just discard it after adding the chicken to the grill.
- Rest the chicken before serving – this allows the chicken juices to redistribute in the meat, making it more tender and succulent. Let the chicken rest at room temperature for at least 5 minutes. If you are concerned about keeping the chicken hot, you can tent the chicken with foil or cover it with a bowl or plate while it rests.

There are a few important things to know when youre grilling chicken thighs that are bone-in and skin-on that are really important, no matter what grill youre using.
I call these the holy grail of grilled chicken thighs:

Cook them skin side down first, for at least 15 minutes
When Im putting my thighs on the grill, I cook them skin side down first and for longer than I cook the other side. Theres nothing like crispy skin with a kiss of smoke and char.
Dont over cook them
I use a digital read thermometer to make sure Im cooking meat perfectly. For these Traeger grilled chicken thighs, theyre done when the middle of the thickest part of the chicken next to the bone reaches 165F. Once you hit that, immediately remove them from the grill.
Let them rest before serving
Once the chicken is cooked, let it rest before serving for about 10 minutes. This helps the juices to draw back into the meat, giving you more flavor and moisture!

How To Smoke Chicken Thighs
Chicken thighs are one of the easiest meats to cook on the smoker. These are perfect for a weeknight dinner or on the weekend with your favorite side dishes!
Preheat the smoker. The first thing you want to do is preheat the smoker and bring it up to temperature. Set the smoker temperature for the chicken to 225 degrees F. Top it up with wood pellets of your choice. Our favorites are the Competition Blend and Hickory Blend.
Season. Apply olive oil to the chicken thighs with a brush or your fingers. Apply chicken rub liberally on the chicken. You can either place a couple of teaspoons on a plate and roll the chicken leg in the rub or apply with a spoon or an electric salt and pepper grinder filled with the spice rub. Ensure it covers all parts of the chicken thigh top, bottom, and sides. Use your fingers to push the rub into the meat.
