1. In a small bowl combine the rub ingredients. Pat the wings dry, and then place them in one layer on a sheet pan. Sprinkle with the rub, working it in on both sides with your fingers. Refrigerate the wings, uncovered, to air dry for about 4 hours.

2. In a small saucepan over medium heat, combine the sauce ingredients. Stir until the butter melts, and then remove from the heat.

Preheat The Gas Grill

Preheat your gas grill to medium . Please avoid putting too much heat as it can char the outer part of your chicken wings, leaving the inner side undercooked. Preheating is important because it allows your chicken wings to cook faster. It also prevents them from sticking on the grate. Placing your chicken wings on cool grates also reduces the chances of it creating flavorful sear marks. Preheat your gas grill for about 15 minutes before you place your chicken wings.

How To Grill Crispy Chicken Wings On A Gas Grill

Grilled Wings 4 Ways Recipe by Tasty

This method uses 2 zone cooking. The wings will be cooked in indirect heat at first and then will move to the direct heat side of the grill to finish off and get crispy.

1 Prepare Your Chicken Wings: Dry off your wings fully with a paper towel and remove the wing flap if necessary.

2 Prepare Your Dry Rub and Toss With Chicken Wings: In a large bowl, whisk your dry rub together along with the baking powder until it is evenly combined. Toss your wings into the bowl and coat them evenly with dry rub. This will vary by dry rub, but for every 1.5 pounds of wings, use 2 tbsp dry rub and 2 tsp baking powder.

3 Let the wings marinate in the dry rub mixture UNCOVERED in the fridge for at least 2 hours or up to 24 hours.

4 Preheat Your Grill: When youre ready to grill your wings, turn on one side of the grill and preheat it until the temperature stays at 400 degrees. While youre waiting for the grill to preheat, remove the wings from the fridge and allow them to rest at room temperature for 10 minutes.

5 Grill Over Indirect Heat: Place your wings on the indirect heat side for 10 minutes making sure the grill temperature stays at 400. After the first 10 minutes, flip and cook for another 10 minutes.

6 Grill Over Direct Heat: Place wings over direct heat for 10 minutes flipping halfway through. This will ensure that the chicken wings get nice and crispy and finish cooking through. Remove from heat and eat as is or toss in buffalo sauce or BBQ sauce before serving.

When I gave the recipe a whirl, I followed Jessies lead to a tee. I preheated the oven to 375°F and patted the chicken wings dry with paper towels. Then I arranged them on a lined baking sheet and dusted the wings all over with chili powder, salt, and pepper before letting them chill for 15 minutes. It was somewhere in this liminal space of inaction that I thought, Huh, no oil? There is not a meat or vegetable that I place in my oven without first dousing it with some kind of fatthe secret ingredient to crisp, caramelized outsides. But Jessie reassured me that would come later: When youre cooking them in the oven, you just want the fat to render out a little and lock in the moisture before grilling.

I sent my tray of wings into the oven for 30 minutes and went about making the marinade, whisking together honey, chili crisp, fresh lime juice, and fish sauce. A lick of my pinky finger sent a jolt of vinegary brightness across my tongue. I pulled the wings from the oven and plucked them off the tray with tongs to store overnight in an airtight container. In truth, I was a little worried at this point they were beige and fleshy and kind of sad looking. How was this all going to play out? Would my wings char to perfection on the grill as my guests ooo and ahhh? Or would I decimate them into dry little hunks and ruin the meal?
