Carbon Live Fire Mexican Grill has been serving Chicagos Bridgeport neighborhood since 2007. While Chicago may be known for its pizza and hotdogs, Carbon set out to redefine the citys profile by serving the best tacos and burritos that could be found in the neighborhood. Founded by Bill Post, CEO of WJP Restaurant Group, the restaurant first opened up at 300 West 26th Street.
Carbons avowed purpose is to provide their customers with delicious healthy Mexican food at a competitive price. According to Carbon, what sets their food apart from the competition is their dedication to steak. Carbon uses a more tender steak than traditional burritos, so they do not need to chop it up beforehand. This means that customers can enjoy mouthfuls of large, flavorful steak instead of tiny little bites. Carbon also tries to remain health-conscious, cooking their tortillas with olive oil and offering whole wheat options.
