For Boneless Chicken Thighs Direct Heat Is Best

There’s no questioning that opting to grill boneless, skinless chicken thighs is going to be quicker and more convenient for a busy weeknight dinner. If you’re used to only cooking bone-in thighs, Perry and Bonom emphasize that boneless thighs require a different approach on the grill.

While bone-in chicken parts do best over indirect heat, “boneless thighs benefit from a quick cook over direct high heat for 8 to 10 minutes,” Perry says. “Also, boneless thighs don’t have any skin to worry about burning over direct heat, like you would a bone-in version.”

Grilled Chicken Thighs Marinade

If you prefer to use a marinade instead of a spice rub, you can use my Chicken Marinade recipe to marinate the chicken thighs before grilling or try my marinated Cilantro Lime Chicken. Youll combine the marinade ingredients and chicken thighs in a bowl or zip-top plastic bag and then let the chicken marinate in the refrigerator for at least 30 minutes and up to 12 hours before grilling.

Should Chicken Be At Room Temperature Before Grilling

You dont want the raw meat to sit at room temperature for an extended time. Bacteria multiply rapidly, especially in the temperature danger zone between 40 to 140°F . They can double in as little as 20 minutes, be careful on those hot summer days! Never leave food out of refrigeration for over 2 hours, or it could cause food spoilage or illness. However, its okay to let it sit at room temperature for no more than 15 minutes while preheating the grill to take the chill out of the chicken for even more cooking.

How To Make The Best Grilled Chicken:

Add all of the ingredients to a large zip lock bag.

Seal the bag and shake it around until the chicken thighs are well-coated in oil and seasoning.

Refrigerate for at least 1 hour, ideally 8.

If you use a gas grill: Preheat the grill to medium-high heat .

If you use a charcoal grill: Prepare your coals in a charcoal chimney to heat the coals quickly. Once the coals are hot, arrange them either in the very center of the grill or off to one side , so that there is a cool part of the grill where you can cook on indirect heat. If you dont have a charcoal chimney, arrange the coals in a pile on one side of the grill.

Place the chicken thighs on the grill grate over direct heat and grill for 3 to 5 minutes, or until the skin turns golden brown. Flip and sear on the other side for 3 to 5 minutes, until golden-brown as well.

Move chicken pieces to unlit side of grill and cover the grill. Cook, flipping occasionally, until internal temperature reaches 165°F.

Use tongs to transfer the chicken to a cookie sheet or plate. Let chicken rest 5 to 10 minutes before serving. This allows the juices in the chicken to distribute throughout the meat, producing an even more tender result.

Serve with your choice of side dishes and enjoy!

Buffalo Chicken Thighs Recipe | Traeger Grills

Whether you cook on a gas grill or a charcoal grill, it pretty much takes the same amount of time to fully cook your chicken thighs. Remember you want an internal temp of at least 165 degrees F. Also, keep in mind that you want to cook chicken over medium heat . If you try to cook it over a very hot grill, you will end up charring the outside and not properly cooking the inside.

One more thing to keep in mind is that boneless chicken will cook quicker than bone-in chicken. Although grilling bone-in chicken may take a little more time, it is more forgiving. Plus, it is generally juicier and more flavorful. The boneless chicken will dry out more rapidly, so it must be cooked with a little more care and attention.

How To Know When Grilled Chicken Thighs Are Done

    Easy Grilled Chicken Thighs

Be careful here the color of your chicken things doesnt indicate if they are done or not.

According to the USDA, even fully cooked chicken can have a pinkish tinge in meat and juices .

Dont forget to use a meat thermometer to check the internal temperature of the meat. This goes for both bone-in and boneless thighs.

If the temperature reaches 165 degrees, the meat is cooked.

If the temperature is higher than this, you may end up with overcooked, tough chicken pieces.

However, if you dont own a meat thermometer, youll know your meat is done when the juices run clear once you move the chicken out of the grill grate and let it rest for one minute.

In case your chicken thighs arent done yet, you can return them and grill thighs some more.

Pro tip: If you dont have it, my advice is to get a meat thermometer. Itll be useful not only for chicken thighs but breasts as well, as they are difficult to cook evenly.
