If youve ever grilled chicken before then you know how easy it is to end up with totally dried-out chicken meat. Its the worst, especially when grilling chicken wings! A simple brine is the first step to avoiding dry & tough grilled wings.

Since chicken is pretty lean, it always benefits from brine or a marinade. Using an easy beer brine infuses the wings with rich & flavorful moisture to keep the chicken nice & juicy. The beer also adds a rich, earthy flavor thats pretty hard to beat . Beer brine is a 2 minute step that makes a world of a difference in your grilled chicken wings. Dont skip it!

For best results, use a big, hoppy beer like IPA, porter, or stout. Beer brine infuses wings with rich & flavorful moisture to keep the chicken juicy on the grill!

Choosing the right beer for the beer brine. For best results, I recommend a big, hoppy beer like an IPA, porter, or stout. You can also use a lighter beer like a pilsner or ale, but Ive found their flavors dont add as much of a wow-factor to the chicken. Even if youre not a big IPA lover or beer drinker , the earthy flavor of hoppy beer is pretty perfect with grilled chicken wings. If you prefer not to use beer, buttermilk is a great alternative.

Brining chicken wings couldnt be easier. It sounds fancy, but think of it just like marinating!

What Temperature Should Chicken Be Cooked To

Chicken breasts and chicken tenders are done via any cooking method when they register 165 degrees F on an instant read thermometer.

Chicken thighs and legs are safe to eat when their internal temperature reaches 165 degrees F but they are juicier and more tender when cooked to 170-175 degrees. F. Chicken thighs contain more connective tissue than chicken breasts which takes longer to break down. Cooking them to a higher temperature will ensure that the dark meat becomes even more tender and juicy verses chewy and rubbery.

Leftover And Reheating Wings

Once the wings have been cooked, they will keep in the fridge for three or four days. The best way to reheat them is on a medium grill for 10 to 12 minutes, turning them halfway through.

They also can be reheated in a 350ºF oven for 10 to 15 minutes. The wings should be placed on a rack, similar to our baked chicken wing recipe, to keep the outside nice and crispy.

The Tequila Lime Dip will keep in the fridge for 3 to 4 days. Besides chicken wings, its also great with fresh vegetables and as a topping for tacos.

What Can You Do With Leftover Marinade

The chicken wing marinade recipe below makes about 3/4 cups, which we have found to work great for 12 wings. Cut it down or double it as needed, but dont worry if you end up with leftover marinade.

If you end up with leftovers, you can use the marinade as a sauce if you like. The important thing to note here is that you must bring it to a boil to kill any pathogens from the raw meat before using it. Then, whisk together a small amount of water and a tablespoon of cornstarch per cup of liquid you are trying to thicken and whisk it into the marinade mixture in a small saucepan over medium heat. Whisk continuously until thickened.

Next step is cooking the wings. My favorite way to cook marinated wings is to grill them like this. You can also follow the instructions for baking found in this Jerk Chicken Wings recipe, which is essentially to bake them at 450°F until they reach an internal temperature of 165°F, about 40 minutes, flipping them halfway though.

Whipping up these chicken wings only requires 3 ingredients and at least a 6-hour marinade .

  • Prepare the Chicken Wings: First, pat the wings dry with a paper towel and place them into a large bowl.
  • Season the Chicken Wings: Next, add in the ranch dressing and garlic parsley salt, and toss the wings until well-coated. Cover the bowl with a lid or plastic wrap and allow the wings to marinate for at least 6 hours and up to overnight.
  • Grill the Chicken Wings: Bring the grill to 400°F and assemble the wings on the grill grates. Cook them on each side for 7-10 minutes. Serve alongside your favorite dipping sauce and dig in!
