The Best Grilled Cod Tips

Cajun spice is the perfect blend of spices that give a ton of flavor with just a bit of spice.

  • Prepare The Grill: One of the most important things you must do before every grill is to clean it. It prevents your food from sticking and protects foods from cross flavors and contamination. Heat your grill on high for several minutes. Then using a grill brush clean off the grill grate.
  • Oil It: Using tongs, take a folded wad of paper towel that has been dipped in oil and grease the grill grates lightly. This will help keep the fish from sticking.
  • Save Marinade: Before basting the fish, be sure to reserve some in a separate bowl. You do not want to use marinade that has been in contact with the raw fish. And you want to make sure you have some leftover marinade to brush on with a clean brush at the end. It is quite magical.

How To Dry Brine Cod Fillets

Perfect Grilled Cod A Couple Cooks

Prepare the cod with a simple dry brine. In a small bowl, mix equal parts of kosher salt or coarse sea salt with white or brown sugar. Generously coat both sides of the cod fillet with the brine mixture and place them into a tray. Cover the tray with plastic wrap and place them in the fridge for at least an hour.

Once the fish fillets have been in the refrigerator for at least an hour, remove the fish from the tray and rinse fish under cold water. Be sure to get all the brine off, or your fish will be very salty. Once the fillets are rinsed, pat them dry with a paper towel and place them on a cooking pan or cutting board.

How To Grill Cod

You can grill cod in foil or place it directly on the grill grates.

  • Cod In Foil, The Pros. Its easier because you dont need to worry about the fish sticking to the grill or falling through the grates.
  • Cod In Foil, The Cons. If you use foil, you wont have grill marks. You will have a great flavor though!

Ultimately, Im a sucker for a good grill mark. I opted to grill the cod directly on the grates without a packet. Be sure to see Tips for Grilling Cod below if youd like to do the same.

Tips For How To Grill Cod

You can make grilled cod right on the grill grates: no foil required! It infuses the cod with smoky flavor and a crispy exterior. Here are our tips for how to grill cod:

  • The temperature for grilled cod? Medium high heat, or 375 to 450 degrees. Medium high heat makes for a perfectly cooked piece of cod.
  • How long to cook grilled cod? 4 minutes skin side down, then 2 to 4 minutes skin side up! The best way to measure whether its done is using an internal thermometer. Stick it in the thickest part of the fish and it should read 130 degrees Fahrenheit. This should be right when the cod starts to flake when pulled with a fork.

How To Make Cod On The Grill

Start Your Grill Heat an outdoor grill to medium-high heat .

Measure foil Tear off a large piece of foil. There should be one piece of aluminum foil for every cod fillet .

Place the fish Place several sprigs of fresh herbs on each piece of aluminum foil and then place the cod fillets on top of the herbs. Sprinkle the salt and pepper across the cod fillets.

The herbs and cod should be placed so they will be in the center of the packet.

Make the butter sauce Melt butter and combine with diced shallot, and minced garlic in a small bowl. Pour mixture across the fillets. Place several lemon slices across the top of the cod.

Grill the fish Close the foil packets around the fish fold foil towards the center and crimp edges of foil to seal packets. Reduce the grill to medium heat. Place the cod foil packets on the hot grill rack, if possible not directly above any flames. The fish will cook best with indirect heat so place it to the side of the flame. Cook for 8 to 10 minutes or until the fish flakes apart.

The fish will be cooked when internal temperature of cod reaches 145 degrees F.

Serve Remove the packets from the grill and place the cod on plates. Top with additional fresh herbs if desired and serve immediately.

Clean You Grates Well Once The Grill Is Preheated

Once the grill is preheated, its time to clean the grates. Contrary to popular belief, you should clean the grates when theyre hot, not after theyve cooled. Use a stainless-steel brush to remove all debris and bits of food from your last grilling adventure to ensure your cod doesnt stick to the grills surface.

Properly Prep Your Cod

You need to extract as much moisture/water from the fillets as possible using paper towels or a clean kitchen towel. By eliminating excess moisture, youll ensure a more even cook on the grill. Next, you can let your cod sit in any marinade or seasoning of your choice. And to ensure those flavors are really absorbed into the fish and enhanced during the grilling process, let your cod marinade for at least 30 minutes.

Use Aluminum Foil To Protect Your Cod On The Grill

Perfect Grilled Cod A Couple Cooks

There are a few ways to use foil when grilling your fish, but arguably the best technique from a flavor perspective is to create a pouch by folding the foil around the cod loin and securing the edges so you have an enclosed cooking surface. This foil packet acts like a little flavor bomb, with all the marinade, seasoning and fresh flavors locked up so your fish can really absorb the goodness.

In addition to enhancing and really marrying your fish with the flavor of the marinade, using an aluminum foil packet will also help maintain the consistency and texture of the fish. No using tongs to flip your fish or scrape it off the grill grates, which can lead to premature flaking or even dropping a piece of freshly grilled fish into the flames.

If Youre Feeling Fancy, Banana Leaves Offer the Same Type of Protection

And they also happen to look professional, so you end up with a perfectly cooked, restaurant-worthy presentation. Either way, the foil or banana leaves can help maintain the integrity of your fish fillet and help concentrate the flavors during the cooking process.

Step 19

Just a few steps from my kitchen is the door to a shady terrazzo where we relax and eat many of our summer meals. On one wall is a beautiful old-fashioned brick fireplace for cooking meats over wood coals. But often, I have to confess, I do my everyday grilling on a convenient gas grill with adjustable burners. And usually I grill fish or shellfishits always quick, and my family loves it.

Step 20

Here are my basic preparations for all fish or shellfish before grilling. Theyre useful for either gas or charcoal grills, although every grill differs in heat output and cooking times:

Step 21

First, make plenty of garlic-infused oil, ahead of time, to flavor all fish and shellfish, including clams, mussels, and oysters in the shell.

Step 22

For one cup of oil, drop 1/4 cup of sliced garlic in 1 cup extra-virgin olive oil with 1/4 teaspoon salt. Let the oil infuse for 1/2 hour to 1 hour before using then remove the garlic slices. The oil can be refrigerated for a week or more.

Step 23

Step 24

Clean and scrape the grill rack well, and get it intensely hot over high heat or hot piled coals before putting on the fish.

Step 25

Grease the hot grill rack lightly before putting on food, with an oiled paper towel, or a piece of cured pork skin from prosciutto end .

Step 26

Sear fish without turning until deeply marked by the grill, anywhere from 2 to 5 minutes. Thorough searing minimizes sticking.

Cooking Cod From Frozen

Yes, you can cook cod from frozen, including on the grill! Personally, I prefer to thaw the cod first for maximum control, but in a pinch, you can use frozen cod fillets.

  • Rinse the frozen fish under cool water, removing any ice crystals.
  • Pat the cod dry.
  • Grill as directed, adding several minutes to the cook time.

Tips For Cooking Cod On The Grill

  • Wipe the grill grate multiple times with oil. I use a paper towel dipped in oil with tongs to wipe the grill grates usually. And when it comes to fish, I add a couple of extra coats because it helps to build a barrier between the grill and the delicate fish so that it doesnt stick or fall apart.
  • Use a fish basket. If you are worried about the cod sticking to the grill or falling apart, then I would recommend using a fish basket. Its an easy way to cook delicate fish on the grill without any issues.
  • Do not overcrowd the grill. This will lead to uneven cooking and make it harder to flip the cod without tearing it.
  • Only flip the cod once. Flipping the fish multiple times will lead to it falling apart. So, be patient and only flip it once halfway through cooking.

    • 2 tablespoons olive oil
    • 210ml toasted cumin seeds
    • 3 tablespoons sea salt
    • 4 tablespoons freshly cracked black pepper
    • 2 lemons, quartered

  • Lightly coat the cod with the oil.

  • Place the cod fillets on the grill and allow to sizzle for about two minutes per side.
  • Be careful when turning the fish so that it doesn’t fall apart. Also, do not over-cook the fish or in most certainly will fall apart!
