- Cook for 5 minutes, stirring often. Remove from heat and cool to room temperature. Glaze can be made a day in advance and refrigerated until ready to grill.
- Pour glaze over cod in a bowl and toss to coat.
- Prepare a grill fire to 300° with pecan or oak.
- Place fish on a grill pan over indirect heat on your grill. Brush with glaze and close the lid.

Prepare the cod with a simple dry brine. In a small bowl, mix equal parts of kosher salt or coarse sea salt with white or brown sugar. Generously coat both sides of the cod fillet with the brine mixture and place them into a tray. Cover the tray with plastic wrap and place them in the fridge for at least an hour.
Once the fish fillets have been in the refrigerator for at least an hour, remove the fish from the tray and rinse fish under cold water. Be sure to get all the brine off, or your fish will be very salty. Once the fillets are rinsed, pat them dry with a paper towel and place them on a cooking pan or cutting board.

Tips For How To Grill Cod
You can make grilled cod right on the grill grates: no foil required! It infuses the cod with smoky flavor and a crispy exterior. Here are our tips for how to grill cod:
- The temperature for grilled cod? Medium high heat, or 375 to 450 degrees. Medium high heat makes for a perfectly cooked piece of cod.
- How long to cook grilled cod? 4 minutes skin side down, then 2 to 4 minutes skin side up! The best way to measure whether its done is using an internal thermometer. Stick it in the thickest part of the fish and it should read 130 degrees Fahrenheit. This should be right when the cod starts to flake when pulled with a fork.

How To Make Cod On The Grill
Start Your Grill Heat an outdoor grill to medium-high heat .
Measure foil Tear off a large piece of foil. There should be one piece of aluminum foil for every cod fillet .
Place the fish Place several sprigs of fresh herbs on each piece of aluminum foil and then place the cod fillets on top of the herbs. Sprinkle the salt and pepper across the cod fillets.
The herbs and cod should be placed so they will be in the center of the packet.
Make the butter sauce Melt butter and combine with diced shallot, and minced garlic in a small bowl. Pour mixture across the fillets. Place several lemon slices across the top of the cod.
Grill the fish Close the foil packets around the fish fold foil towards the center and crimp edges of foil to seal packets. Reduce the grill to medium heat. Place the cod foil packets on the hot grill rack, if possible not directly above any flames. The fish will cook best with indirect heat so place it to the side of the flame. Cook for 8 to 10 minutes or until the fish flakes apart.
The fish will be cooked when internal temperature of cod reaches 145 degrees F.
Serve Remove the packets from the grill and place the cod on plates. Top with additional fresh herbs if desired and serve immediately.
