Medium rare is no problem. The reason you cook beef ribs all the way through is so that you can get them to fall off the bone and fork tender. If you cook your ribs too long, they will still be tough, but thats not the point.

The point is to get the meat tender enough that it can be sliced and served with a side of mashed potatoes and gravy. If you dont want to cook your ribs for a long time, then youll need to cut them into bite-sized pieces and serve them on a bed of rice or pasta.

How To Boil Ribs

Braised and Grilled Beef Short Ribs with Sticky, Spicy Beer BBQ Sauce

Boiling ribs or simmering ribs is one of the most straightforward was of precooking them for grilling. You can use any liquid to boil your ribs in and add as many seasonings as you want. Or, if you just want pure porky flavor, keep it simple with salt.

  • Add the ribs to a large stockpot and add enough cool water to cover.
  • At this point you can also add any seasonings or aromatics to your water. There are so many options here, and youre only limited by your culinary imagination. Think of it like making a flavorful soup. In fact, you can even keep the leftover liquid for making other dishes later.
  • Bring the pot to a boil, reduce the heat to low and cover. Simmer for about two hours, adding more water if needed.
  • Check the ribs for tenderness. You should be able to poke through the meat easily with a small knife or fork and reach the bone. If the meat isnt tender enough yet, cook for longer in 30-minute increments until it is.
  • You can speed up this process by using a pressure cooker or Instant Pot. Remember to use the natural pressure release method to prevent shredding the meat.

    Go Easy On The Seasonings

When it comes to seasoning ribs, you want to be very conservative good ribs have a great flavor all on their own and don’t need a lot of enhancement. It is also important to avoid adding barbecue sauce to ribs early in the process. Most barbecue sauces, whether store-bought or homemade, contain some kind of sugar . This can cause your barbecue ribs to burn, even when cooked indirectly.

Try using a good rub before you grill, and if you like, a barbecue sauce after the grilling is done. If you are adding a sauce, try using a mop. A mop is a thin barbecue sauce that you brush on during grilling to help maintain moisture and to add flavor. Sometimes you will hear it referred to as a baste.

You can also fill a spray bottle with a thin barbecue sauce, thin meaning it is practically water. Try a mixture of paprika, water, and a few other seasonings. By spraying the ribs with this mixture during grilling you will add moisture, reduce burning, and add flavor to your barbecue ribs.

Adapted from Ray Lampe | Ribs, Chops, Steaks, & Wings | Chronicle Books, 2010

Youll usually see beef back ribs in 4-to-6 bone pieces and they typically dont have much meat on them. Theyre usually pretty cheap, and thats a good thing because, like I said, there just isnt much meat on them. The meat needs a lot of cooking to make it tender, but when its cooked right, its really good meat, so its worth the effort. Wrapping these in foil is essential to get them tender.

If youre the adventurous type, add a half cup of strong coffee to the package when you wrap the ribs. I think youll find it to be a pleasant surprise.Ray Lampe

How To Place Beef Ribs On The Grill

Beef ribs need a long time to get cooked through. If you try to rush it, you can have chewy ribs, which are sometimes not done inside.

You may also burn the outer layer and end up with dry, uncooked ribs.

For the beef ribs to cook over the grill for a long enough time, it needs to be on indirect heat.

That means when you prepare the fire, leave one side with less to no coals so that it can be less hot than the rest of the parts.

Place the ribs on the colder grill section and turn it regularly to cook evenly on both sides.

If you notice it is too cool and not cooking, you can shift it slightly to the warmer part.

If you find your ribs cooking too fast on the outside and possibly drying out, quickly move them to the less heated section or remove them from the grill entirely until the heat reduces enough to avoid the ribs burning.

How Long Can Beef Ribs Rest

After resting in a cooler for 2-3 hours, ribs will still be above the temperature that is considered acceptable for consumption. When attempting to rest your ribs for an extended length of time, there are several procedures to take. Meanwhile, while the ribs are cooking, fill your cooler with a kettle of boiling water and set it aside to prepare for 15 minutes.

How To Tell Your Beef Ribs Are Done

In this low and slow method, your beef ribs will take six to eight hours to cook. You may see the fleshy part start to loosen from the bone as they reach the end. Use your tongs to see how tender they are. You can also cut into the meat to make sure there is no pink remaining.

If your ribs are in a rack, you can twist the center rib. If it comes away from the meat easily, your ribs are ready.

What about a meat thermometer? Ribs are not the most practical cuts into which to try to insert a probe. Some areas are pretty thin. Temperature measurements near the bone do not tell you about meat in the center of the rib.

However, where meat thermometer placement may be tricky, toothpicks work like a charm. When ribs are ready, a toothpick should slide easily in and out of the flesh between the bones.

    2. In a small bowl mix the rub ingredients.

    3. Remove the membrane from the back of each rack of ribs. Cut each rack crosswise in the middle to create two smaller racks.

    4. Season each half rack evenly with the rub. Using eight 18-by-24-inch sheets of heavy-duty aluminum foil, double wrap each half rack in its own packet.

    5. Brush the cooking grates clean. Place the ribs on the grill over direct medium heat and cook for 1 hour, with the lid closed, occasionally turning the packets over for even cooking, making sure not to pierce the foil.

    6. Remove the packets of ribs from the grill and let rest for about 10 minutes. Carefully open the foil packets, remove the ribs, and discard the rendered fat and foil.

    7. Drain and add the wood chips directly onto burning coals or to the smoker box of a gas grill, following manufacturers instructions. When the wood begins to smoke, return the ribs to the grill, bone side down. Grill over direct medium heat, with the lid closed as much as possible, until they are sizzling and lightly charred, 10 to 12 minutes, turning and basting once or twice with the sauce. Remove from the grill and let rest for about 5 minutes. Cut into individual ribs and serve warm with any remaining sauce.
