There are a few things you can do to prevent your chicken from sticking:

  • Pat your chicken dry.
  • Ensure your grill grates are clean and wipe them down lightly with some oil before grilling.
  • Start with a hot grill I usually wait until my grill up to high heat before putting my meat down since, by opening the grill, it is going to lose heat fast. Also, the extra hot grill grates sear the meat faster help prevent sticking.
  • Dry rub using a dry rub or other seasoning can also help prevent some sticking.
  • How Do I Decide What Spices To Use For Dry Rub Wings

    A lot of what I do is my take on foods Ive seen or eaten on my travels. These wings were recreated from a dishful of deliciousness I enjoyed on a recent adventure. I simply pulled out a few spices from my cabinet and started blending until I got the flavor profile just right.

    Cooking is rocket science and lots of times it comes down to using ingredients that you like, rather than exactly what the recipe calls for. I went through a few variations of spice combinations to come up with the one I eventually used for my dry rub and hope you enjoy them as much as I did.

    If youre not sure about the flavors, make half a batch my way and try your own seasoning blend on the other half. Who knows maybe youll find a tasty compromise or enjoy them as is.

    Pat the seasoning into the wing to get an overall coverage of the wings with the seasoning. Feel free to use less seasoning, I like mine bursting with flavor!

    How To Tell If Chicken Is Done

    Use a Thermometer to test

    Using aninstant read thermometer, insert into the middle of the thickest part of the chicken, without touching the bone. The chicken is done when the temperature reaches 165º.

    Check the Color of the Chicken

    Another way to test chicken for doneness is to cut into the thickest part. Chicken is done cooking when you can no longer see pink. Tip: Don’t let the chicken cook until the fibers separate, or it will be overcooked.

    When You Get Home Preheat Your Grill

    Theres no need to wait around after you apply your dry rub to your meat. You can put it right on the grill after you put on the dry rub.

    If you want to wait or need to wait until later, thats okay, too. Remember that you dont have to wait for the spices to seep into the meat.

    That said, we suggest trimming and rubbing your meat, wrapping in plastic, and . It simply produces better flavors and great results.

There are plenty to choose from in the grocery store spice aisle, but making your own dry rub means you control the flavors and eliminate any preservatives and extra salt.     Chicken in general needs a lot of seasoning because on its own, it doesnt have tons of flavor.

    I purposely kept things neutral with my flavor profiles and Im not just talking about seasoning salt, though it definitely helps. With enough of a hit of garlic powder, dried mustard, brown sugar, onion powder and smoked paprika, the mixture works magically to produce super delicious chicken without anyone really knowing why.     Grill Barbecue Or Smoke Your Meat

    Once you apply a generous layer of dry rub to your meat, you can transfer it directly to the grill or smoker, or once it has had time to marinate.

    Cook meats as you normally would. Ensure the internal temperature is heated to a safe level by checking your meal with a meat thermometer.

    Remove the meat from the grill, let it sit and slack off if necessary.

This usually takes another 15-20 minutes, though times will vary considerably depending on the thickness of each piece of meat.
