Because boneless chicken breasts are so lean, they often turn out dry, rubbery, and bland. Contrary to popular belief, marinating alone will not save grilled chicken from drying out in fact, its often the marinade that causes the problem!

My technique and marinade ensure tender, juicy, and flavorful grilled chicken every time. You can serve the fillets on their own as a healthy main course , topped with cheese on a toasted bun, or, as I often do, sliced over a Caesar salad. Bonus: the recipe is quick and easy. You do all of the prep ahead of time and you wont even dirty a single bowl.

How To Make The Marinade For Grilled Chicken Breast

Im Ukrainian and believe simple ingredients make food shine. With this easy recipe, you dont have to marinate chicken long and you are well on your way to a fast grilled chicken dinner. Thats it!

  • Boneless skinless chicken breasts
  • Oil: I like extra virgin olive oil as it enhances the flavor when used in a marinade.
  • Lemon: You will need a fresh lemon as you will be using both the zest and juice. The acidic juice helps tenderize the meat.
  • Garlic: Freshly grated will bring out the best flavor!
  • Seasonings: Oregano, salt and pepper for additional taste.

Grilling Your Marinated Chicken

Its time to grill!

Remove your chicken from the fridge. Line a rimmed baking sheet with paper towels.

Lay your chicken on the paper towels and then take a few extra and dab the top of the chicken. It is not nessecary to remove all the buttermillk, you just dont want it soaking in the milk beofre it goes on the grill.

Leave the chicken out at room temp while your grill heats.

Set your grill up for direct and indirect grilling. If you use a charcoal grill that means you will leave one side of the kettle empty and pile the hot coals on the other side.

Start your chicken over the direct side. Grill for about 4 minutes.

Flip the chicken . Cook for another 4 minutes over direct heat.

Now move to the indirect side of the grill. Check the internal temp. If the chicken is not at 160-165 degrees pop the lid on the grill and let it cook over indirect heat until it reaches 160-165 degrees. This could be anywhere from 1 minute to 5 minutes depending on how thick and big your chicken breasts are.

Once they are cooked through remove your chicken breasts from the grill and let them rest for 5 minutes. I do not like to tent my chicken with foil because it can prolong the carry-over cooking and end up overcooking your chicken.

How Do You Know When Chicken Is Done

The best way to gauge whether your chicken is done is to use a thermometer to test the thickest part of the breast. The thermometer should read at least 165 degrees F. I use an electronic thermometer with a remote so that I can just leave the chicken on the grill and monitor its progress by using the remote inside the house.

  • The cooking time will vary depending on the thickness of your breasts. The best way to check that the chicken is done is to use an instant read thermometer which should register at 165F.
  • Cook the chicken on a medium-high heat. If the grill is too hot, the outside of the chicken will burn and the middle wont be cooked through.

Tips For Grilled Chicken Breast

  • Choose chicken breasts that are all about the same size and shape so that theyll cook evenly. I stay away from the overly thick chicken breasts because they take a lot longer to cook.
  • The marinade can be made up to one day before you plan to use it.
  • You can serve your grilled chicken breast as-is over mashed potatoes or rice, or make a double batch and use the leftovers in other dishes. I like to add diced grilled chicken to salads, pasta dishes and pizza.
  • This chicken will stay fresh in the fridge for up to 3 days, which makes it great for meal prep.
  • Its best to cook this chicken over medium heat, as you dont want the exterior to burn before the inside is cooked all the way through.
