I have been able cook a decent crispy grilled chicken wing on my charcoal grill, but the gas grill is better. The reason is direct heat. I usually set up my charcoal grill for indirect heat cooking wings. So when the fat renders out of a wing, it will fall onto bottom of the cool side of the grill and thats not what we want in this case.

A gas grill typically has radiant heat bars below the cooking surface to try and evenly distribute heat. So when those fat drippings fall on to the heat bars they will vaporize. Those vapors then come back up and adhere to the meat. That is what gives grilled food its grilled taste. Weber actually calls those radiant heat deflectors, flavor bars, for a reason.

Chicken Wings Should Be Washed And Dried

Before grilling chicken wings, make sure theyre thoroughly cleaned. You must verify that the wings are well cleaned. Wash each wing and each surface separately under running water. Make absolutely sure there are no hairs on the wings. While washing the wing under running water, remove all of the extra feathers. After youve double-checked that the wings are clean, pat them dry with a clean cloth. But, before you let the wings set, dont forget to chop them into smaller, few more parts. When you dry the wings, youll be able to keep them from decreasing in size when you grill them.

Cut the Wings into Pieces

Cut the wings with a sharp knife now. The wing is made up of three parts, and its your responsibility to break it down into those three sections.

The drumette , the wings or the double-boned wing portion, and the wingtip are the three elements that make up the wings.

Cut the wingtip first, then the drumette, and finally the wing portion in that sequence. When cutting, begin at the point where the joint meets the wing piece the tissue is softer than that of the solid bone. Slice through the bone as you find this section, and youre done. Once that you have the wings prepared in small servings, set them aside to dry while you prepare the sauces.

How Long Do You Grill Chicken Wings

Grill chicken wings between 40 to 45 minutes at 300°F on a charcoal grill until no longer pink.

I would also highly recommend investing in a meat thermometer if you do not already have one. With a meat thermometer, checking the internal temperature is very important. This is done by inserting the meat thermometer into the thickest part of the chicken without hitting the bone. When the chicken wings have reach an internal temperature of 165°F youre good.

How To Grill Chicken Wings With Charcoal

Heat Grill. Set up the grill for dual zone cooking with all of your coals off to one side for a direct heat some and an indirect heat zone. Aim for a target grill temperature of 375 to 400 degrees F.

Prep Wings. Prepare the wings by removing them from the packaging and patting them dry with a paper towel. place the wings in a large bowl and season with baking powder and your favorite dry rub or seasoning of choice. Return to the fridge for 20 minutes while the grill is heating up.

Grill the Wings. Once the grill has reached grilling temp place the whole wings on the grill in the indirect cooking zone. Be sure not to overcrowd the wings leaving an inch of space in between the wings. Cook for 30 minutes then spray with cooking oil and flip the wings over.

Continue Cooking. Cook the wings for another 30 minutes then spray again with cooking oil. Continue cooking until you reach an internal temperature of 190-200 degrees F. for fall of the bone tender wings.

Crisp the Wings and Sauce. Right before the wings are done cooking you can place the wings over the direct of the grill for 30-60 seconds for extra crispy slightly charred wings. At this point, you may sauce the wings if you like just before serving.

Serve. When ready, serve hot and enjoy!

Wings are comprised of three sections: the wing tip, the middle joint, and the drumette. The Secret To Getting Crispy Chicken Wings On The Grill

To take this barroom classic from the fryer to the grill we had to figure out how to handle the fat and connective tissue from the wings, which creates a problem as it drips into the fire.

To get crisp, well-rendered chicken wings with lightly charred skin, succulent, smoky meat and minimal flare-ups, we quick-brined the wings and tossed them in cornstarch and pepper. These steps helped the meat retain moisture and kept the wings from sticking to the grill.

We then cooked them right over a gentle medium-low fire. The moderate temperature minimized flare-ups and the direct heat accelerated the cooking process. Also, though we normally cook white chicken meat to 160 F, wings are chock-full of collagen, which begins to break down upwards of 170 F. Cooking the wings to 180 F produced meltingly tender wings.

These few minor adjustments gave us crispy, juicy chicken that made a great alternative to fried wings. We also developed several easy spice rubs to take the wings up a notch if youre looking for some new flavor options.

    Should I Marinate My Wings

    Note that some people marinate their wings first. Im not opposed to this but I dont find it necessary. Why not? Two reasons. First, wing meat is very tender and juicy as it is so you dont need the marinade for extra moisture. Second, if you have a flavorful sauce smothering the wings at the end, it overpowers the marinade anyhow. I say, skip that extra time and effort and get the wings on the grill ASAP.

    Arrange Chicken Wings Around The Hot Coal With The Bone Part Of The Wings Pointed Towards The Flame And The Fat Part Up

    Note that the hot coal is at the centre of the grill . Place the marinated wings in a circle around the hot coal. Notice that the bone side of the wings are pointing towards the flame, the fat side of the wings facing up and all the wings are placed in an almost perfect circle. Whole wings mean that the wing flat is connected to the drummette, and some still have the wing tip still attached.
