With this brine strength, the tenderloins tend to taste a little salty on the surface, so I rinse them and pat them dry.
If I have more time, I halve the amounts of sugar and salt in the brine recipe and soak the tenderloins for 1-1/2 hours. With this weaker brine, Ive found the tenderloins dont need to be rinsed. I simply pat them dry. Either way, brining not only improves the flavor but also helps the pork stay juicy.

How To Prepare Pork Tenderloin For The Grill
Many recipes will ask you to remove the pork tenderloin from the fridge for at least 30 minutes before grilling. That rest time is baked into this process here, so we dont call it out in addition to the 30 minutes that will accrue during which youll remove the silver skin, make the dry rub, and wait for the grill to heat. But you should definitely remove the silver skin a connective tissue that doesnt break down during cooking while the tenderloin is cold, so do this step first.
After removing pork tenderloin from its packaging, pat it down with paper towels. Using a sharp knife, slip the tip under the silver skin at one end of the tenderloin and slowly guide the knife from one end of the tenderloin to the other, pulling away the silver skin with the other hand. You may need to turn over the tenderloin and repeat this step on the other side to ensure its completely removed.
Once the silver skin is removed, make a quick rub for the tenderloin. Salt and sugar are required for seasoning and encouraging caramelization, but you can adjust the other spices as you desire. Dry rubs flavor tenderloin and keep it moist, without preventing the crisp crust from forming .

How To Grill Pork Tenderloin:
Add all of the ingredients for the marinade to a blender and blend until combined. Transfer the pork tenderloin and marinade to a sealable bag, seal, and refrigerate at least 1 hour, up to 12 hours.
When youre ready to grill, bring the marinated pork tenderloin out of the refrigerator and allow it to come to room temperature . This ensures the pork cooks evenly on the grill. If you dont have time to do this step, no worries the tenderloin will still taste great!
Preheat The Grill: If using a gas grill, preheat the grill to medium-low . If using a charcoal grill, light the coals and allow them to heat until they begin turning white and have embers. Spread the coals over the bottom of the grill, insert the grill rack and then cover in order to preheat the grill.
Grill the Pork Tenderloin: Place the pork tenderloin on the hottest part of the grill. Replace the cover, and cook for 1 to 2 minutes or until grill marks appear. Flip the tenderloin, and continue cooking, covered, 1 to 2 minutes.

Pork tenderloins long, sausage-like shape provides a large surface area on its exterior to absorb a marinade. You can then use the marinade as a pan sauce to pour over the tenderloin for serving.
I like to stand up the ziplock bag so that the tenderloin is fully submerged in the marinade using the drawer and something heavy like a pot or jar.
Pork tenderloin is very versatile in terms of the variety of different marinades you can use. It goes particularly well with any marinade that includes:
- Any type of mustard such as brown mustard or dijon mustard.
- Soy sauce or tamari.
- Anything with acidities such as lemon or lime juice, vinegar such as apple cider vinegar, balsamic vinegar, etc.
- Fresh herbs such as thyme, parsley, rosemary, cilantro.
- Garlic or garlic powder.

Here Are Four Simple Steps For Creating A Scrumptious Pork Loin At Home:
1. Prep the meat. Preparing your roast for grilling is quick and easy! Begin by trimming any connective tissue on the pork loin. Next, drizzle the outside of the roast with olive oil and season well on each side with Smokey Mos BBQ Spice Rub. Pat the spices on the ribs so that they stick to the meat. The rub flavors the meat and makes for a thin, crispy crust. The pork loin can be trimmed and rubbed up to 24 hours in advance. Remove from the refrigerator 30 minutes before grilling.
2. Fire up the grill. To cook pork loin, we suggest using a grilling technique known as zone cooking. One area of the grill will be turned to high, while the other will be low or unlit. Use the high-heat area for direct cooking use the low-heat area to cook it to the correct internal temperature over indirect heat.
If youre cooking with a charcoal grill, arrange the coals on one side of the grill and leave the other side empty. If youre using a gas grill, heat one side to high or medium-high heat and leave the other side unlit.
3. Cook. Sear the loin for 5 minutes per side over direct heat. Then, move it to indirect heat. Cook the roast for 1 to 1 ½ hours, or until the pork reaches an internal temperature of 145°F. That fat is going to keep the pork loin moist and flavorful. When the time comes to put the roast into the pan, youre always going to want to place the fat side up. This is so when the meat cooks, the fat melts off and drips down into the roast, infusing it with flavor.
Tips For Making Smoked Pork Tenderloin:
As with just about any oven or smoker, they all tend to heat differently so having a meat thermometer on hand or a probe attached to your pellet grill is key to getting this perfectly tender.
This does not need to be wrapped in foil, but you can marinate it if you prefer. We typically just season it with seasoning, then add a coat of barbecue sauce to the pork tenderloin.
The pork tenderloin will be placed right on the grates of the smoker or pellet grill.
We will add sauce throughout the smoking time to keep it moist.
Once you have that one, simply check on it throughout the cooking time and get the internal temperature up to at least 145*F to be considered done.
Let the pork tenderloin rest for 5-10 minutes before slicing and serving.

Can Pork Tenderloin Be A Little Pink
Yes! And it actually SHOULD be a pale pink color in the middle. The USDA now recommends that pork be cooked to an internal temperature of 145 degrees Fahrenheit , where previously it was 165 degrees Fahrenheit. At 145 degrees Fahrenheit you will have the juiciest pork tenderloin possible which will be a pale shade of pink in the center, but still fully safe to eat. Pork tenderloin that is not pink in the middle has been overcooked and can easily dry out.
