    How To Smoke Shrimp

Were going to use aluminum foil for this, but you can also use skewers or baskets too. I often find that using these can leave the shrimp prone to drying out however, so I prefer to use foil.

The butter in the foil will help to infuse the shrimp with flavor, while also preventing it from drying out.

I often think with BBQ shrimp, the bigger the better. So dont be afraid to go large and get something large. In this recipe weve gone all in with 16-20 ct, which is one of the largest you can get . I would say anything up to 24ct is fine.

This shrimp is cooked in a beautiful butter sauce . If the fat content here scares you dont worry. Most of this can be discarded when it time comes to serve.

We start by melting the butter in a microwave-proof dish or jug, before adding a dash of Worcestershire sauce and a couple of pinches of fresh parsley.

Add a liberal amount of BBQ rub to the shrimp before transferring it all to the aluminum pan. Toss the shrimp around and then pour the butter mixture over the top. You dont want to submerge the shrimp here, but have them sitting about half covered.

Heat up smoker to 250°F and add a couple of bits of hickory wood to your coals. Place the shrimp pan on your smoker grates, close the lid, and cook for 20-30 minutes. Toss the shrimp with tongs at around the 10-minute mark.

At around the 30-minute mark, the shrimp should have developed a beautiful pink color and a smokey flavor.

Which Shrimp Is Best For Shrimp Scampi

The shrimp section at the grocery can be a little intimidating. First, youll find cooked shrimp and raw shrimp. You definitely want raw shrimp for this dish.

Then, there is peeled, deveined, unpeeled, tail-on. So many choices. You cant go wrong with any of those. It all comes down to how much work you want to do and how much money you want to spend.

No matter what, I always buy deveined shrimp, because deveining it myself is so time consuming.

Once you find deveined shrimp, you can choose between peeled or unpeeled. The unpeeled shrimp are usually less expensive, because it requires less work on the production side. I often buy unpeeled shrimp because I like the flavor the peels add to dishes, but they do require you to peel them as you eat them.

For grilled shrimp scampi, I like using peeled, tail-on shrimp. The tails still provide added flavor to the broth and are a lot easier to remove as you eat.

Ingredients In These Cajun Shrimp Foil Packets

I am currently on a Cajun kick. I literally cannot get enough of the stuff. Originally I had thought to just do a simple lemon butter sauce, but then I remembered CAJUN! With so much awesome flavor, Cajun Shrimp Foil Packets were the clear winner. I like to think of it as my version of a shrimp boil.

As far as the spice level, thats up for you to decide. If you are super sensitive to spicy foods, or you just dont like spicy food, then I advise against adding any cayenne to your shrimp. On the flip side, if you are a spice lover like me, then your shrimp with asparagus will thank you.

Raw shrimp on a skewer, ready for the grill â How to grill shrimp

    1. For the best possible results, buy fresh shrimp on the day that you plan to grill them. Shrimp thaw quickly and can go bad even more quickly. Make sure that you buy either jumbo or colossal sized shrimp for easier grilling.

    2. Shrimp can be grilled with or without their shells. I like to peel the shrimp prior to grilling. Remove all of the shell except for the part that is around the tail of the shrimp. Removing the shell will allow the marinade to penetrate the meat and give the shrimp more taste.

    3. Devein the shrimp by using a small, sharp knife to cut down the back of each peeled shrimp. Pull out the back vein while washing the shrimp under cold water. The vein is noticeable in jumbo or colossal shrimp.

    4. Give the shrimp flavor in the marinade of your choice. My favorite is just a simple brush of olive oil on the shrimp with some salt, pepper and squeeze of lemon.

    5. Thread your shrimp on a skewer for easy grilling. You can use a wooden skewer or metal skewer, both options work well.

Take the shrimp off the grill and it is time to enjoy, perfect for a shrimp cocktail or to pair with your favorite dipping sauce!

    • Pre-cook the potatoes in the microwave until they start to get tender. The exact time will depend on how big the potatoes are, but you want them to be at least half way cooked so they dont take too long on the grill.
    • Slice the corn off the cob, or cut the whole cob in chunks, depending on the look youd like.
    • Preheat the grill to 375 degrees.
    • Make your foil packets, one packet per person with as much shrimp, potatoes and corn as youd like. Add about 2 tablespoons of butter per packet and 1 teaspoon of seasoning. You can adjust this amount depending on what you think youd like best.
    • Grill the packets for about 20 minutes. Keep the packets sealed until you are ready to serve them.

How Do You Keep Shrimp Moist On The Grill

Shrimp Boil Foil Packs STEP BY STEP || TERRI-ANNS KITCHEN

Brine the shrimp before grilling, broiling, or baking to give them the best chance of remaining moist. Shrimp come from salt water, so it may appear silly to soak them in a salt water brine and occasionally hit with sugar, but soaking them in salt water brine causes moisture to accumulate in the shrimp. This moisture keeps the shrimp from drying out.

Temperature And Length For Grilling Shrimp In Foil

Reduce the temperature for grilling your shrimp foil packs on a bbq grill to medium heat fire.

If the fire is scorching, your shrimp will not cook properly, and the outer layer will get done too fast with the meat still raw in the middle.

Place the foil pack on the side of the grill so that it is not over direct fire.

In grilling, the masters call it “indirect heat.” You can grill the shrimp for 8-10 minutes, and it will be ready to serve.

When grilling shrimp in the oven using a broiler, keep the temperature between 300-350°F. Place the foil packs in the middle rack of the oven and broil it for 10-12 minutes.

Be mindful when opening up the packs because it will release a lot of steam aside from being incredibly hot to the touch.

Should I Grill Shrimp With A Shell On

You can grill shrimp in a peeled form and also in a shell. It all depends on the characteristics of the product and the wishes of gourmets. Such moments help to choose the appropriate cooking method:

    • If you buy large-sized shrimp, with the head and shell removed, then you will only have to check for the presence of an intestinal vein and remove it before cooking.
    • It is more convenient to cook small shrimps in a shell, so as not to waste time on cleaning.
    • Serve tiger and king prawns peeled on skewers. Leave the tail for easier dipping it in the sauce.

    • You really dont want the foil to break open when turning, so make sure to double up and not have just one layer.
    • Customize this recipe with other favourite summer vegetables, such as small even sections of corn on the cob. You can also omit one veggie and add extra peppers if you want.
    • I used fresh garlic in the jar, as I need to use it up. Yet you can also crush your own if you wish. Fresh or jarred gives best results, yet you can use powdered if necessary.
    • I used tail off thawed uncooked jumbo shrimp for my recipe. You can leave the tails on if you want, it does give a bit more flavour to the recipe, but also more work when eating it.
    • If you have frozen shrimp, the best way to unthaw is to place them all in a colander and run cold water over the shrimp to unthaw quickly. This should only take a few minutes.
    • As you can see, I didnt add salt in the spices. I find our shrimp to be salty, so adding more would be too much. Yet if you know that your shrimp isnt salty, go ahead and add about a 1/4 teaspoon kosher salt to the spices.
    • If you want more of a spicy grilled shrimp recipe, add some cajun seasoning or cajun spices.

The amount of time these packets take to cook will depend on how large your shrimp pieces are. We used medium-size shrimp that we already cooked and peeled, so we just needed to heat them through and make sure the potatoes were cooked completely. This took about 20 minutes. If the shrimp you have are salad-style and are tiny, you may want to cook the potatoes longer in the microwave so the packets dont have to be on the grill as long.
