Can I Use Metal Skewers On The Grill

Flat stainless steel metal skewers are the most reliable as they discourage the food from spinning round each time you turn them on the grill. They should be ideally about 12 inches long. Metal skewers are also re-usable, making them an environmentally friendly choice.

Recommended Tools For Grilling

  • Skewers If using wooden skewers like these, I recommend soaking them in water for 20-30 minutes prior to grilling as they can get burnt really easily over a hot grill. If using metal skewers, make sure that you handle them with care using a hot pad or kitchen tongs as they will get pretty hot.
  • Grill Use a proper grill, a BBQ, a grill pan, or an oven.

Variations Of This Recipe

  • SPICY if you like a little more heat, add some cayenne pepper to the rub and/or use a spicy bbq sauce!
  • OTHER MEAT Ive used chicken breasts here because my kids prefer white meat, but boneless chicken thighs would be amazing, and even juicier! Cubed pork tenderloin would be another amazing option, as would shrimp!
  • OTHER VEGGIES the sky is the limit on what veggies you can add. Peppers and onions are a pretty common variety, but zucchini, yellow squash, tomatoes, etc are also delicious! Mango would also be amazing used in place of the pineapple.
  • while its pretty to have the alternating chicken, fruit and veggies, it can be a little tricky to make sure the meat is fully cooked and the veggies and fruit arent burnt. If youre new to grilling, or simply want this meal to be even easier, do separate skewers of chicken/bacon, and veggies/fruit.
  • STORE-BOUGHT RUB there are so many great pre-made rubs out there nowadays, and you can certainly use one of those if youd rather not make your own.
  • HOMEMADE BBQ SAUCE if youd rather use a homemade bbq sauce, you can absolutely go for it! I really love my Bourbon BBQ sauce on these kabobs.

Tips For Skewering With Success

Grilled BBQ Chicken Kabobs

You can make these chicken kabobs with metal skewers or wooden skewers.

  • If usingmetal skewerslike these or these, be sure not to touch the skewer ends after the kabobs are cooked, as they will be HOT. Use a hot pad or tongs to hold the skewer end while you remove the chicken and vegetables from them prior to eating.
  • If usingwooden skewerslike these, soak the skewers in water for 20 minutes prior to grilling to prevent them from catching on fire.
  • My other big skewer tip is not to crowd the vegetables and chicken together too tightly when threading. The chicken and vegetable pieces can lightly touch, but you want to make sure the heat can circulate so that the chicken cooks through.

Yogurt Is The Secret To Super

Plain, whole-milk yogurt works its magic in multiple ways here. First, it evenly distributes the spices and seasonings in the marinade. Second, the lactic acid that gives yogurt its signature tang breaks down the protein in the chicken, making it juicy and ultra-tender. Sugars like lactose naturally present in yogurt also caramelize and brown on the hot grill grates, giving these kebabs beautiful grill marks.

If possible, skip thick Greek yogurt its concentrated consistency can cause the kebabs to stick to the grill grates. But If Greek is all youve got, stir in a splash of milk to loosen it up.

Cut the meat into evenly sized pieces. Marinate if desired. Cook kebabs in a 375 F oven for 20 to 30 minutes, turning occasionally. Any Night Every Night All

How to Make Grilled Lemon Chicken Kabobs

While I sometimes like to play around with different flavor profiles for my grilled chicken skewer recipes , more often than not, the nights when I grill chicken kabobs are also the nights when I havent planned ahead.

I designed the chicken kabob marinade to be made with pantry ingredients so that you can always have what you need to make it on hand.

Chicken breasts are a standard freezer item too, and while Ive suggested my favorite assortment of vegetables, you can certainly use a smaller or larger variety depending upon your preferences and what you have lurking in your produce drawer.

The Best Chicken Kabob Marinade

This pantry marinade has a Mediterranean spin that takes the chicken from ordinary to extraordinary.

  • Olive Oil. To keep the chicken from sticking. Also, for healthy fats and flavor.
  • Red Wine Vinegar. For brightness, pop, and to help the chicken tenderize.
  • Honey. To balance the acidity of the vinegar and help the chicken caramelize on the grill.
  • Dried Herbs. To go with the Mediterranean chicken kabobs theme, I selected oregano and rosemary. Feel free to swap thyme or Italian seasoning, or create your own custom kabob mix.
  • Garlic. Four cloves, no less. Go ahead and up the amount if you have a house of serious garlic lovers.
  • Salt and Pepper. Kabob marinade essentials.

How Long To Marinade Chicken Kabobs

This marinade is so flavorful, you could literally toss the ingredients in the marinade, skewer the chicken and veggies, and then grill immediately.

For Maximum Flavor Place the chicken and the veggies, along with almost all of the marinade in a large plastic bag and refrigerate for 1 hour, or even better, overnight. The longer the meat and veggies sit in the marinade, the deeper the flavor will be. Be sure to discard the marinade from the chicken, but use the reserved for brushing on the kabobs while grilling.

For Fast Turn-Around If you are in a crunch for time, you will still get amazing flavor without letting the chicken and veggies sit in the marinade for an extended time. Even 15 minutes is great! Be sure to save some of the marinade for brushing on the kabobs while grilling.

EXPERT TIP: After you have placed the chicken and veggies on the skewers, place them in a large baking dish and place it in the fridge until ready to use. If preparing the kabobs ahead of time, simply cover them with plastic wrap or foil until ready to use!

Grilled Chicken Kabob Ingredients:

To make these grilled chicken kabobs, you will need:

  • Boneless skinless chicken breasts : You can either purchased fresh or frozen chicken . Also, note that some chicken also comes pre-brined nowadays! So check the label, and if your chicken has already been brined, skip that step below.
  • Oil: Since we will be grilling over high-heat, I recommend any olive with a higher smoking point such as avocado oil, safflower oil, grapeseed oil, or just a regular olive oil.
  • Kosher Salt: An essential ingredient in our brine, which we will also use to season the chicken.
  • Seasonings: I included an all-purpose blend of smoked paprika, garlic powder, salt and black pepper in the recipe below, which is super-delicious and goes with pretty much anything. But feel free to sub in any dry seasoning blend that you prefer.

You will also need:

  • Skewers: Either reusable metal skewers or wooden skewers
  • Grill: Time to fire up the charcoal or gas grill! Or if you prefer to cook the chicken indoors, you can use a grill pan instead.

Traeger Grilled Chicken Kabobs

Grilled BBQ Chicken Kabobs

These kabobs are one of the best chicken dishes Ive ever had, hands down. Like no question.

So tender, and juicy, and all the things you wish your chicken was all the time, but never actually is.

Thats partly due to this amazing marinade that Jeremiah threw together the other day, and also partly due to the magic that somehow works in the Traeger Grill. You can see our other Traeger recipes here in our Traeger Grilled Chicken post, and also this Traeger Grilled Chicken Sandwich recipe.

You can add any kind of veggies you want onto these. I, personally, think zucchini would be amazing, and some big chunks of onion. Jeremiah thinks that these are perfect as is, and I cant really argue with him.

Theres something about the combination of the warm, toasty pita bread, those peppers, mushrooms, and chicken, and the dressing that just makes these sing.

Tips For Cutting Chicken For Kabobs

Use a sharp knife. Make sure your knife is sharp and can easily cut through the meat. You want the pieces to have clean edges and still be thick enough to slide thread through the skewers.

Thaw and trim chicken. Before cutting, double check that your breasts are thawed completely. If theyre still frozen in the middle, theyll be harder to cut through. Also make sure to trim any extra fat or skin off.

Cut all pieces evenly. Its important that all pieces are cut the same size to ensure that they cook evenly on the grill. Aim for 1 1/2 to 2 inch chunks.

Do You Grill With The Lid Open Or Closed

How to Grill: Chicken Teriyaki Shish Kabobs Recipe

When you first place your kabobs on the grill, youll keep the lid open to sear the food, usually for a couple of minutes. After that, lower the lid and close the bbq to keep the heat inside and continue cooking.

Half way through cooking, youll want to flip the food youre grilling, whether its kabobs, chicken, or hamburgers. At this point, youll open the lid, flip, allow the flames to give the other side a sear, and close the lid to finish cooking.

If your grill has a vent and youre using charcoal, you might want to keep it open to let some air in and keep your charcoal flames lit.

Serve the charred chicken with summery sides like grilled vegetables, or slide the pieces off of the skewers and serve atop crunchy salad greens or pasta salads.

How To Keep Chicken Kabobs From Sticking To The Grill

Grilling chicken kabobs is sometimes challenging, especially when the chicken meat sticks to the hot grill each time you try to turn the meat. The next time you cook chicken kabobs on your gas or charcoal grill, you can take a few steps to prevent the chicken from sticking. With a few tools and some preparation, you’ll wind up with perfectly cooked kabobs and no bits of burnt meat stuck to your grill grates afterward.

How To Grill Kabobs The Basics

Youll want your grill set to medium-high heat for this. A nice, even medium heat will get you good cooking heat, nice charring on the outside, and not burn your kabobs.

So once youve got your kabobs in order, whether theyre meat or vegetables, make sure your grill is hot enough.

Then, place the kabobs on the grill, at a 45 degree angle, so the bits dont fall between the grates and you get the first part of the criss cross pattern.

Let the kabobs sit on the grill for at least 5 minutes, with the lid on. If youre cooking meat it will usually take a few minutes longer than vegetables.

Once the 5 minutes are done, open the lid and flip on the other side. Cover again and leave for another 5 minutes. Then open the lid, rotate, and close again until the meat or veg is done.

What youre looking for when grilling kabobs is the food being done, and getting some nice marks on it as well. A hot enough grill will help a lot, both to cook your food evenly, and to leave some nice grill marks.

The lid should be closed at all times, so the kabobs will also get cooked by the hot air, aside from getting that smoky flavor.

Those are the basics. Next up, well talk about what can go on a kabob, and later Ill give you a recipe for a nice chicken kabob.
