How To Grill Chicken Breast
- Clean, oil, and preheat the grill to a surface temperature of about 450°.
- Prepare chicken breasts for grilling by evening out the thickness, brining if desired, brush with oil, and season to your taste.
- Place over direct heat with a closed lid. Flip every 5 minutes until an internal temperature of 165°.
- Remove from heat and rest for 5 minutes before serving.
If You’re Grilling A Whole Chicken

Use a food thermometer to check your chicken. Poultry should cook to an internal temperature of 165 degrees, per the U.S. Department of Health & Human Services. When fully cooked, remove the chicken pieces from the grill.
How To Cook The Chicken On Your Gas Grill:
- Do NOT close the lid on your grill
- Cook chicken breasts on medium-high heat for 5-7 minutes per side
- Turn chicken frequently to cook evenly on both sides and pay attention to hot spots on the grillyou may see some pieces of chicken start to blacken. While it may look appealing, it will become dried out and crunchygross!
- Keep one of your burners on a lower temperature so you can transfer chicken thats cooking too quickly and slow the burning so it doesnt dry out the meat
- Do NOT overcook! I recommend removing the chicken when the internal temperature hits 157-160 degrees Fahrenheit and covering with foil so the carryover cooking brings it up to the USDA minimum of 165 degrees Fahrenheit.

Clean And Prepare The Grill Grates
Cleaning the grill prior to cooking is the best way to start. Ensure that no food from the previous cooking session is stuck to the grills.
After the grill is clean, you can moisten the grates with cooking oil. First, dip some paper towel in cooking oil. Use tongs to hold the paper towel and gently rub the grates with it.
There is some extra effort involved with this procedure. But doing it is certainly much better since the chicken will not stick to the grill rack.

- Visual check: Cut into the center of the chicken breast with a knife. It should be white, with just the slightest hint of pink. If its pure white and looks stringy inside, its overcooked. Note: using this method while the chicken is still cooking or before resting will cause some liquids and moisture to drain out.
- Test for firmness: Remove chicken from the grill. Once cooled slightly, press in the center with finger. It should have a little bit of give but also not be squishy feeling. Note: this method takes practice is the least accurate.

- Allow the grill to heat properly. The grates on the grill should already be hot before you add the chicken to the grill.
- Shake off excess marinade before grilling. As you pull the wings out, using a pair of tongs, give them a shake to get rid of excess wet marinade. This will help the meat develop a good sear as the wings cook.
- Keep the grill covered, but be sure to rotate and flip the wings every 3 to 5 minutes for even charring and to prevent burning.

How To Cook Chicken On A Gas Grill Without Burning
Now we will discuss some of the steps about how to cook chicken on a gas grill without burning.
- Never close the lid of the grill
- Cook chicken on medium-high heat that might be 425 degrees F for 5 to 7 minutes a side or until the internal temperature reads 157 to 160 degrees.
- Flip the breasts frequently to even cook on both sides of the chicken. And pay full attention to the hot spots on the grill. You may see that some pieces of the flesh start to blacken, while it may look appealing as it will become dried out and crunchy obviously.

Greek Style Rotisserie Chicken
Place the whole set up on to the grill, making sure that the bird is centered on the rear burner. Turn on the rotisserie motor. Place a drip pan under the bird and add the wine. You want to brown the chicken for about 15 minutes, or until the bird is crispy looking on the outside.

Sometimes in cooking the simplest dishes are the hardest to get right, and grilled chicken is a perfect example. Because boneless chicken breasts are so lean, they often turn out dry, rubbery, and bland. Contrary to popular belief, marinating alone will not save grilled chicken from drying out in fact, its often the marinade that causes the problem!
My technique and marinade ensure tender, juicy, and flavorful grilled chicken every time. Tips To Make Perfectly Grilled Boneless Skinless Chicken Breasts On A Gas Grill:
- Invest in an instant-read thermometer
- Butterfly and pound chicken breasts to avoid overcooking and drying out of thinner portions this video provides a quick and easy method for butterflying and pounding
- For the juiciest chicken breasts, I prefer using a dry brine and adding flavorings just before grilling chicken breasts for the juiciest chicken.
- The issue with dry brining is that it takes at least 3-4 hours for the salt to penetrate the meat, so wet brining is best if youre short on time. We choose to wet brine more often because were impatient and sometimes grill on a whim.
- Heres the brine we typically use:
- 3 cups of orange juice
- 2 ounces of salt we use Morton table salt as it dissolves easier
- 1 Tbsp olive oil
- Mix all ingredients until salt is diluted and put in a large Ziploc bag or brining bag and let sit for no more than 2 hours. Season with your desired spice blend/rub after removing from the brine and drying the breasts.
