How to Cook Grilled Lamb Chops

In a food processor fitted with a blade attachment, combine the garlic cloves, rosemary, thyme, red pepper flakes, kosher salt, and fresh ground pepper. Pulse a few times until the garlic is minced.

Add the olive oil to the food processor and continue to pulse until the ingredients have created almost a paste. If the mixture seems a little too thick, you can add a little more olive oil to loosen it up.

Using a very sharp butchers knife, you will need to cut the rack of lamb into individual chops. It does take a little effort to get through, so if you are not comfortable with this, ask your butcher. He would be more than willing to help you out with this task.

To marinate the chops place the lamb into a resealable plastic bag and pour the marinade over the chops. Seal the bag and massage the chops to make sure that they are well coated in the marinade. Place the bag in the refrigerator for an hour or two.

Remove the chops from the resealable bag and place them on a platter on your counter for at least 20 30 minutes. This will allow them to come up to room temperature before you cook them on your grill.

Preheat your grill you want it to be medium-high heat to high heat before you put the lamb on. The key is to make sure you have a nice sear on the outside of your chops.

  • Always use a meat thermometer for best results. When youre cooking any cut of meat, a meat thermometer makes it simple to cook to your preferred doneness every time. Especially when youre grilling out!
  • Cut against the grain when slicing meat. The grain looks like parallel lines running through the meat. Cutting against the grain will give you the most tender bites!

In the case of lamb loin chops, theres only one way to go grilling. Think of them as petit T-bone steaks. On one side of the chop, youll find the lamb loin and on the other, the filet. Grilling them sears in the flavours while keeping them moist and very tender.

CUT & PASTE

This cut of meat is especially perfect when enhanced with bold flavours. In this recipe, we create a marinade that is a pungent, bold-flavoured paste with rosemary, garlic and kosher salt. Its rubbed into the chops after theyve been lightly coated in oil, ensuring it sticks to the chops during grilling.

GRILL DRILL

As I explain in the video, I had my butcher cut some very thick chops in half to give me smaller chops, about 1-inch thick. Cooking them on a hot grill for about 2 minutes per side does the trick. The loin chops come off the grill tender and juicy with medium-rare to medium doneness. Wait until you take your first bite! A good rule is to stay at the grill during the grilling process.

Two important things to remember when youre grilling lamb.

  • Dont overcook it! Lamb should be cooked to an internal temperature of about 145 degrees F. Thats a nice medium-rare and it leaves the meat super tender. If you want to cook your chop rare, shoot for 130 degrees F. Use a meat thermometer to ensure the accurate temperature of your meat.
  • Good quality meat! I am not going to lie. Up until a few months ago lamb was not a favorite of mine. I didnt hate it I just thought it was kind of gamey and not my cup of tea, but now that I know what to look for Im loving it!

    Here are some of my top tips to help you make the best grilled lamb chops ever:

    • Im not a fan of adding fresh garlic to my lamb since it burns almost instantly on the grill, leaving behind a bitter taste. If you want to add garlic, I recommend adding a 1/4 teaspoon of garlic powder to the spice rub.
    • Dont have a grill? Cook the lamb chops using a cast iron grill pan or cast iron skillet over medium-high heat. Cook for 2 minutes on one side, then for 3 minutes on the other side for medium-rare or 3 ½ minutes on the other side for medium.
    • I highly recommend letting your lamb chops sit in the fridge with the lamb chop seasoning overnight for maximum flavor. This allows the flavor to really infuse into the meat, making it even more delicious. Make sure to remove your lamb from the fridge 20 minutes before cooking to bring it to room temperature. Youll still get tons of flavor if you skip this tip.

We believe this is the best way to get the freshest lamb chops possible. Pro Tip: Purchase a lamb roast with meaty, round ends and straight bones.

    If you prefer your lamb chops cooked until they are medium-rare, you will need to grill them for three to four minutes on each side. The internal temperature needs to reach 135 degrees Fahrenheit. For juicier meat, let your chops sit for about ten minutes before you serve them.

    The flavor of lamb chops is delicious all by themselves. You will not need to use a lot of seasoning. You can use a lamb marinade for BBQ or just a little pepper, salt and olive oil. We recommend adding some rosemary and garlic as well because they will enhance the flavor of your lamb chops.     • For proper lamb temperatures be sure to see my post on Lamb Cooking Doneness.
    • For a small batch of my favorite lamb seasoning to use with this recipe combine 1 teaspoon salt with ½ teaspoon of dried parsley, ¼ teaspoon of dried rosemary, ground sage, and onion powder, then teaspoon of dried oregano, dried orange peel, paprika, and ground black pepper. Mix in a spice grinder, food processor, or mortar & pestle if desired.
    • If you do not have dried orange peel, you can substitute 1 teaspoon of grated orange zest from a fresh orange per dried orange peel.
    • Do not marinate your lamb for more than 24 hours. The citrus in the rub will begin breaking down the meat giving it a mealy texture.
    • Use a meat thermometer to check the internal temperature! It’s much easier than eye-balling your lamb chops. Lamb chops are done when the internal temperature is 135°F .
    • For thick lamb chops, add 1-2 minutes overall cooking time.
    • If you’re up for it, you can save a bit of money by purchasing a whole lamb rib roast and cutting the individual chops with a very sharp knife.

    How To Grill Lamb Chops Step

  • remove the chops from the fridge and allow them to come to room temperature
  • while they are resting, brush with olive oil and sprinkle with spice mix, salt and pepper
  • allow to rest for 20-30 minutes
  • when you are ready to grill, get the grill screaming hot!
  • sear the chops 2-3 minutes on side one, flip and do the same for side two
  • remove from the grill immediately, place on a platter and cover with foil
  • allow them to rest for the juices to redistribute into the meat, this will keep them flavorful and juicy!
  • Loin chops and rib chops work great on the grill. This recipe uses rib chops. The end of the bone has been removed. However if you have the opportunity to buy full chops with the rib, get those! Many remove the fat from the ribs, I dont! I recommend keeping the whole rib intact. Fat = flavor, plus the bone is easy to grab and makes for great finger food!
