The strip steak is from the strip loin of the steer. The short loin lies behind the ribs and includes the strip loin and the tenderloin, as well as the bones between those two cuts. A T-bone or a porterhouse steak is a whole cross-section of the short loin, the NY strip is a cross-section of the strip loin, while a Kansas City strip is a NY strip with the bone on .

However, no one can answer that right off the bat because its different for every possible combination of these variables.

From years of grilling this delicious cut of meat, I can tell you that it depends on many factors, like the kind of grill pan youre using and what size of steak.

But if you have no idea how to grill NY strip steak perfectly, I will teach you the proper way to grill that brings satisfaction and allows you to wow your friends and family.

How To Grill The Perfect New York Strip Steak

Tender, juicy, and flavorful Grilled New York Strip Steaks with ...

The New York strip steak with is probably the easiest of the more popular cuts to grill. Unlike grilling the perfect ribeye, this cut is simple for a few reasons.

First, its uniform in shape. Similar to this incredible bourbon basted London broil, but unlike a skirt steak, for example. Its nearly impossible to cook a skirt steak to a uniform doneness because of the shape and inconsistent thickness of the cut.

Second, the strip steak isnt typically cut too thick, like a filet mignon, for example. The thickness of the filet mignon makes it difficult to cook evenly throughout unless youre using some of the more advanced cooking techniques.

Finally, the strip steak doesnt consist of more than one muscle, like the ribeye for instance.

The ribeye cap cooks much faster than the eye of the ribeye, so its challenging to get a consistent doneness on that cut as well.

We wont be using the reverse-sear method that I am such a fan of on this New York strip steak. A typical strip steak isnt cut thick enough to take advantage of that technique.

Instead, we will use the multi-flip technique. Theres an old myth floating around that you should only flip a steak one time once you place it on the grill.

Preparing The New York Strip Steaks For The Grill

Time the fatyou will not want to eat the fat, and when the fat melts over the grill’s high heat, it will cause flair-ups and hot spots.

Rest to room temperatureeven 15 minutes will help. This is very important with thicker steaks, and it will help you get to your desired internal temperature without overcooking the surface.

I don’t oil the strip steaks. I can’t detect a difference compared to oiling the grill’s grates.

Season with salt and pepper. Another seasoning, like our All Purpose Seasoning – 7:2:1 and 7:2:2, can be used depending on your taste. But remember, salt will pull water out of the meat, and it will take about an hour to be reabsorbed. So any seasoning with salt should be applied one hour before cooking or immediately before cooking.

There is no need to tenderize a prime or choice grade strip steak, but you can use a marinade like The Best Steak Marinade, which has ingredients that will also tenderize.

What Is A Strip Steak

A strip steak is a cut of beef that comes from the short loin of the cow. Youve likely heard of the T-bone steak or the porterhouse steak read my blog about the difference between those two cuts if youre interested.

In any case, both of those steaks are actually a combination of the filet mignon and the strip steak. The strip steak is slightly less tender than the filet mignon, but it generally has better marbling. Better marbling equates to more flavor, of course.

How To Season Grilled Steak

Some of the biggest reasons a steak might not be flavorful is the cut or quality of steak itself or the steak might not be seasoned well enough. For this recipe I grilled up a Private Reserve 14oz beef strip loin steak from Omaha Steaks. These are thick, beefy, robust steaks of extraordinary quality.

Once you have a great cut of beef, you just have to know how to season grilled steak appropriately. More often than not, people tend to under season their beef. If you are just salting a steak, I prefer to use kosher salt. You can see and thus control how much salt lands on your steak prior to or after cooking.

If you are using a seasoning blend, be quite liberal with how much you put on the steak. Remember, some seasoning will stick to your plate as your carry it to the grill or your stove. Some seasoning will also stick to the grill itself or possibly the pan you cook it in.

How to Cook Strip Steak on the Grill
  • Scale the ingredients up or down depending on how many people you plan to serve. You can easily cook twice as many steaks, or cut it back to just 1 pound of meat.
  • Seasoning: we love the simple combination of herbs and spices in our all-purpose “house seasoning,” but you can substitute with any seasoning blend of your choice. Pick your favorite steak seasoning blend, or just use a good amount of kosher salt, freshly-ground black pepper and garlic powder.
  • Indoor Grilling: if you don’t have access to an outdoor grill, you can grill these steaks on the stovetop by using an indoor grill pan. Just make sure that the grill pan is preheated really well over high heat so that you can achieve that great sear on the outside.

How To Buy Strip Steaks

If you have a choice and can discuss it with the butcher , try to get a steak from the rib end of the tenderloin.

Buy the best grade of beef you can afford. USDA Prime is the top of the range, with only about 2% of the beef in this country earning that label. This will ensure that your beef has nice fat marbling throughout, which is what gives beef steaks their incredible flavor, not to mention tenderness. USDA Choice comes after that, and within Choice there are different levels, so once again, it will come back to the conversations you have with your butcher as to what is best behind the meat counter that day. The grade Select is below Choice, and will be leaner still.

A freshly cut steak should be a pretty bright red color, and have no dark spots. It will turn a more brownish red as it ages, which doesnt mean its bad, just that it was not cut as recently, and the exposure to oxygen causes the darkening of color. Steer clear of any streaks with an odor that is slightly sour, or anything but fresh.

How Thick Should A Strip Steak Be On The Grill

I like a 1-inch-thick steak, but a 3-4-inch-thick steak can also work and may be great however, make careful to regularly monitor the internal temperature, otherwise you will overcook the meat. You have been forewarned about this. A different procedure will be required if you wish to cook a strip steak that is at least 1 12 inch thick or larger.

How Long To Grill

A 1-inch strip steak takes about 9-11 minutes over high heat to reach 140°-145° internal temperature, which is medium still with a little pink but firm.

Like most cooking, there are many variables.

  • The size and thickness of the meat
  • The exact temperature of the meat
  • The grill temperature at the start of cooking
  • How much heat your grill loses during flips
  • Your desired final internal temperature

You must have an instant-read meat thermometer to do cook steaks correctly.
