What Is The Best Cut Of Meat For Grilled Pork Chops

There are four different cuts of pork chops. The most preferable is the center cut rib chop.

  • Rib Chop: This is the most desirable cut of pork chop. It comes from the rib section and has a large bone running along one side. This cut is very tender with a nice pork flavor.
  • Loin Chop: This pork chop cut has a t-bone in the middle. It has two different kinds of meat on it, with loin meat on one side, and tenderloin meat on the other side. These two meats cook at different rates so it is a more difficult cut to work with.
  • Boneless Chop: This is the most lean cut of pork. It is very easy to over cook this cut and dry it out as it has very little fat, connective tissue, and doesnt have any bones. This is the most commonly sold pork chop cut in the United States, but it is certainly not the most desirable because it is lean, and so easy to overcook.
  • Shoulder Chop: This is the least desirable cut of pork chop and is not commonly found in American grocery stores. They have lots of flavor, but also have a lot of gristle and bones. This cut of chop is best braised.

    • Get the grill nice and hot. Similar to pork tenderloin, pork chops are a lean meat, so they stay juiciest when cooked quickly over medium-high or high heat.
    • The total grilling time will vary depending on a number of different factors, such as the temperature of your grill, the temperature of your chops when they go on the grill, and the size and thickness of your meat. As a result, its always best to use a meat thermometer to know exactly when your pork is done. Youre looking for an internal temperature of 145°F.
    • Allow the meat to rest for at least 5 minutes before slicing. The juices will redistribute throughout the meat so that the pork chops stay nice and juicy.
    • Health Benefits of Pork Chops: Grilling pork chops can be a healthy way to prepare this lean cut of meat. Pork chops have 24 grams of protein in a 3-ounce portion and offers a good source of zinc. A 6-ounce grilled pork chop seasoned with olive oil and all-purpose seasoning has about 250 calories, 13 grams of fat, zero carbohydrates, and 31 grams of protein. Juicy Grilled Pork Chops | How to Dry Brine Pork Chops

Pork chops are far more lean than they used to be back in the day, and is the same reason why they can easily be overcooked. To make sure they come out juicy and flavorful theres a few tips to deliver juicy bites every time.

Choose the right pork chop for grilling. While lean chops are good, too leanlike sirloin chopsare not great for grilling. Instead, choose center-cut rib chops and center-cut loin chops with a bit more fat for flavor and tenderness.

Fat or thin, both chops win. Thin pork chops are great for grilling because they cook quick with less time to dry out. Thicker pork chops can be just as tender and just as juicy as thin. Again, it comes down to the cut you choose. For a quick-cooking boneless pork chop, choose pork chops with a thin fat cap that are about 1 inch thick.

Oil your chops, not the grill. Boneless pork chops dont have much fat and can stick to the grill if not oiled. We use canola, grape seed or olive oil.

Simply season grilled pork chops. Just like any protein, seasoning is the key. Choose your favorite store-bought pork seasoning or make your own, like my dry rub for ribs thats loaded with flavor.

Can I Use Boneless Pork Chops

Yes, you can use boneless pork chops with this recipe. We have grilled both boneless and bone-in pork chops and it depends on the thickness which one is better.

Bone-in is are favorite to grill but they need to be at least one inch thick. You can also grill pork loin chops.

Boneless pork chops are good but they seem to get dried out faster than bone-in pork chops.

What Temperature Pork Should Be Cooked To Eat Safely

For years, cooks have been told to cook pork until well done, resulting in a dried out piece of meat nobody wants to eat. No more!

According to recent changes in the USDA guidelines, it is safe to eat pork cooked medium rare. Cook the pork chops to an internal temperature of 140°F and still barely pink inside, then rest for about 5 minutes for the residual heat will continue to cook and raise the internal temperature.

For thin cut, bone-in pork chops about 1/4 inch thick, cook over direct medium-high to high heat for a total of 3-5 minutes, with the lid closed, turning once.

For 1-inch thick boneless pork chops, cook for 8-12 minutes over direct heat turning every 3-4 minutes or until well grill marked with the lid closed. Add another 5 minutes resting time for the juices to set in the meat.

If cooked properly, the pork chops will release a bit of juice as they rest, a sign theyre still nice and juicy on the inside.

    • Bone-In Pork Chops: Try to find pork chops that are at least 1 inch thick because thicker chops are less likely to dry out when cooking. I prefer using bone-in pork chops because the bone helps to keep the meat moist. If youd like to use boneless pork chops, just know that they may cook a bit faster.

Should you season pork chops before grilling?

Pork chops can be seasoned right before cooking, or you can use a dry brine to enhance the flavor. To dry brine the pork chops, salt them thoroughly, then place them on a wire rack and leave them in the fridge for 4-12 hours. When seasoning after dry brining, do not add more salt.

How do you keep pork from drying out on the grill?

So long as you do not overcook the pork chops, they will not dry out when grilling by following this recipe. At around the 15 minute mark, check your pork chops with a meat thermometer. If they are at the 145 mark for internal temperature, they are ready to take off the grill.

How long can I keep seasoned pork chops in the fridge?

Fresh, uncooked pork chops last in the refrigerator for 3-5 days. If you want to season them beforehand, I recommend seasoning them for 4-12 hours before cooking them, using only salt, and no more than that. This is called a dry brine. Add the remaining seasoning when ready to cook.

How Long To Cook Pork Chops On The Grill

One of the best parts about grilling pork chops? It is FAST!

The amount of time you need to cook pork chops on the grill will vary based on the thickness and whether you choose bone-in or boneless.

    • My recommended 1 ½ inch, bone-in pork chops cook in 9 to 12 minutes over medium high heat. Flip them once halfway through.
    • Check the pork early. You can always put your pork back on the grill to cook for longer, but once its overcooked, there is no return.

Ingredients For This Grilled Pork Chops Recipe

    Lager
    • Bone-in pork chops Go for bone-in thicker cuts, as they typically have more flavor and turn out extra juicy.
    • Olive oil an extra virgin or light olive oil will work well here.
    • Garlic Youll want to use fresh garlic over garlic powder. If you love garlic, feel free to throw in a few extra cloves to the marinade.
    • Lemon juice Youll need 2 tablespoons of fresh lemon juice from about 1/2 lemon.
    • Black pepper Opt for freshly cracked black pepper for more flavor
    • Kosher Salt A coarse, flakey kosher salt works best for the marinade.

    Grilled Pork Chops Recipes Tips

    • One way to really enhance the flavor of your pork chops is to dry brine them. You can achieve this by salting them thoroughly, placing them on a wire rack uncovered, and leaving them in the fridge for 4-12 hours. Skip the salt right before grilling, if you choose to do it this way.
    • This recipe works for pork chops of all sizes. Just make sure not to overcook them or they will dry out. A 145-degree internal temperature is the sweet spot for juicy, medium-rare pork chops. This means the internal temperature is more important than worrying about how long theyve been cooking.
    • High heat for a gas grill means you should have those knobs turned up as high as they will go. For a charcoal grill, try to reach about 500 degrees, minimum.
