If you dont have a smoker, dont worry. On a gas barbeque, wood chips in an aluminium pouch or directly on the coals on a regular grill can be used to add smoke. The type of wood you use makes a difference, as hard woods are more abrasive than fruit woods. Pecan, apple, and cherry are the most common woods utilised by expert pit masters. Tip #2: Dont over-smoke.

We try to strike a decent balance between the two. The palate will be smacked with sweetness first, followed by some fire on the back end. A sweet sauce and a mild/spicy rub are used to achieve this.

Drain pineapple juice into a medium bowl, set aside sliced pineapple for later use. Add BBQ sauce, soy sauce, garlic and oil to pineapple juice and whisk together well.

Start by removing the membrane on the back of the ribs. Lift an edge of the tough film and then use a paper towel to help you grab the membrane. If you have a good grip of it, you can pull the whole thing off in one pull. Smear Slow Smoke Gold mustard sauce all over the ribs and then coat both the back and the front generously with House Rub. Let the ribs sit at room temperature for 5 to 10 minutes so the rub can start to draw moisture from the meat and stick to the ribs. If you move the ribs too soon, all of the rub will fall off.

How To Grill Baby Back Ribs

  • On a large rimmed baking sheet, rub each rack of ribs all over with the rib dry rub and refrigerate overnight. Make sure to cover the entire racks well and pat down the rub. Its called a rub for a reason. rub rub rub and pat pat pat on both sides, you want a really nice coating!
  • Bring the ribs to room temperature when ready to cook. Clean the grill grates. You want nice clean grill grates for these baby back ribs. Light gas grill to medium, approximately 300°F.
  • When grill is warm, place the ribs on the grill grates and close the lid. I like to check on these ribs every 20 minutes or so. I move them around a bit if I feel they are cooking unevenly. Grill for approximately 1 hour.
  • Mix the BBQ sauce and garlic powder. At the 1 hours mark, brush the ribs with the BBQ Sauce using a basting brush. Give them a good coating.
  • Turn the heat to low and shut the grill for approximately 15 minutes. Only baste with BBQ sauce in the last 15 to 20 minutes of grilling or the sugars will burn.
  • Remove from grill and transfer to a large cutting board. Let the ribs rest for 10 minutes. Using a sharp knife, cut each rib in between each bone.

    You may be wondering if grilling ribs is the same as barbecuing ribs. Technically, theyre two different types of ribs using very different techniques.

    Barbecue comes from the Spanish word barbacoa, which originated with the Taino people one of the native inhabitants of the Caribbean islands before the arrival of Europeans. The Tainos would cook meat over smoking embers for a long period of time so that the meat would be infused with the smoke flavor and remain tender.     COOKING THE RIBS

    Start by removing the membrane on the back of the ribs. Pat them all dry with paper towels and set them in a large bowl. Sprinkle over the salt and pepper. Next, ensure your trivet or steam rack is in your instant pot. Pour in the stock and vinegar.

    Lay both racks into the instant pot in a standing, circular fashion. Basically, the racks will sit on their sides and form to the inside of the pot. Close and seal the instant pot. Pressure cook on high for 23 minutes. Once done, allow the steam to release naturally for five minutes. Then, carefully open the valve to remaining pressure out.

    PREPARING THE SAUCE

    While the ribs are cooking in the instant pot, prepare the sauce. Its super easy to do! Measure the tomato paste, tequila, rice vinegar, and the BBQ spice rub into a bowl. Whisk to combine and set aside.

    FINISHING THE RIBS ON THE GRILL

    At this point, the ribs are fully cooked and you can eat them. However, to fully get the rib experience, I would highly recommend you add sauce and place the ribs on the grill. It will just take a few minutes!

    If using an indoor stovetop or electric grill, the same cooking process applies. Once the ribs are slightly charred, remove them from the grill immediately. Please note that I used an outdoor grill. You can also use a panini press too. Be sure to fully preheat the grill first, otherwise, the ribs will be overcooked.
