When it comes to prime rib, can you cook it on a traditional gas grill and still get tender medium-rare slices filled with flavor? Yes. And with a few easy tricks, this smoked prime rib on a gas grill just may be the easiest way to cook the traditional holiday roast.

The standing rib roast is a holiday classic. Its the big brother to the favored rib-eye steak, with tons of marbling and tons of flavor. Unlike the beef tenderloin, which has a more mild beef flavor, this cut packs tons of bang for the buck.

Due to its size, it requires a slow cook for the internal temperature to get to the recommended 125F for rare, which can make cooking this roast tricky. Its not just a rare to medium-rare center that makes this one, its the flavors you use to layer on the outside that permeate the meat.

Prime rib is perfect for grilling over indirect heat so that it reaches a slow and steady temperature. And by using a gas grill, you can easily control the ambient temperature and infuse flavors by using wood chips for smoke.

What Temperature Should I Cook My Prime Rib On

Among some of the worst methods Ive seen for cooking a prime rib, is to start cooking at like 500°. Thats usually followed by some unreasonable formula of cook time per pound of meat. I can assure you, cooking a prime rib this way will turn out a prime rib that looks like this:

Seriously, check out social media and other recipes for prime rib and youll see pictures just like the above. This high heat results in the outside of the roast being well-done, and it fades gradually to a medium-ish center. The best piece of the prime rib as you can see, is cooked to baseball glove level.

Most of these recipes also call for a drip pan to collect the beefs juices. Of course, when youre incinerating a roast at these high temps the meat is going to contract and squeeze out all those juices. Its nice to catch them for an au jus of course, but I want my juices in the meat, not collecting below the meat.

Anyway, I digress. Who wants to eat something like the above prime rib? Certainly not me. If youre about a roast that looks like the one pictured above, Id encourage you strongly to just save the money on the prime rib and instead just make yourself some chicken. Im kidding, of course, and if youre a well-done person, Im sure its not the first time youve heard this type of joke. So, in summary, keep those temps low and allow the prime rib roast to gradually and evenly come up to your desired temperature for doneness. For me, medium rare is perfect.

How To Grill A Standing Rib Roast:

  • Make the garlic butter by melting butter in a small skillet or saucepan and add minced garlic. Cook on low heat, stirring often until garlic is lightly toasted.
  • Remove from heat, stir in rosemary, thyme, salt and pepper. Set aside about 2 minutes. Stir in brown sugar until dissolved.
  • Set roast out on a rimmed baking sheet. Pat dry with paper towels.
  • Spoon garlic butter mixture over the rib roast.
  • Cook over indirect fire with the grill closed for about 20- 25 minutes per pound, cooking to desired doneness.

Remove The Silver Skin

How to Grill Prime Rib Roast

If youve cooked ribs before, you know how important it is to remove the silver skin from the back of the bones. Its a tough membrane that can ruin a good bite. The rib roast has this membrane, too.

Whether or not you want to remove the silverskin is completely optional. When you eat pork ribs, you pick them up and bite right into the meat. That silverskin can create a tough bite.

With prime rib, however, you eat it with a knife and fork and usually dont bite right down near the bone. I just like to remove it so the rub has more contact with the meat in between the bones.

To do this, flip the roast upside down and grab the membrane with a paper towel. Then, peel it off and toss it in the trash.

What Is The Best Way To Cook A Prime Rib Roast

There are many ways to cook a prime rib roast but my favorite is on the grill. I also love the fact that grilling is my husband’s favorite way of cooking. Anytime I can get him to cook is a bonus as I will have more time to spend on appetizers, side dishes and desserts. It also means plenty of extra room in my oven for other dishes.

Tips For Perfect Prime Rib

  • Cook low and slow. If the temperature gets too hot, the outside will burn before the inside is done.
  • If youre cooking a larger or smaller roast, adjust the amounts of seasoning and cooking time as necessary.
  • I use 1 ½ teaspoon kosher salt for a 4-rib roast, but adjust the salt to suit your taste.
  • The cooking time is a general guide, but always go by internal temperature! Use a meat thermometer to check the temperature of the thickest part of the roast to determine when the roast is done. You want to aim for about 135°F to remove the roast from the grill for medium rare.
  • The internal temperature will continue to rise as the roast rests.
  • Dont skip the resting step! Resting ensures that the juices are redistributed throughout the roast so that they dont all leak out onto the cutting board during carving.
  • Use a large cutting board with a groove around the edge to catch any juices when carving.

If there are just a couple of folks who like their beef extra dead, cut their slice and throw it back on the grill, and cook it to their doneness preference.

How To Cook Prime Rib On The Grill

  • Allow your prime rib roast to come to room temperature this should take a little under 2 hours. When ready, preheat your grill to 275-300 degrees Fahrenheit.
  • Rub every inch of your prime rib roast with spicy brown mustard.
  • In a small mixing bowl, combine ground coffee, paprika, granulated garlic, minced onion, brown sugar, black pepper, and salt. Whisk well.
  • Add the coffee rub to the rib roast and cover it completely. Let it sit for 20 minutes to soak up the rub.
  • Once grill is preheated, place prime rib on the grill and cook for 2 hours and 45 minutes, or until the internal temperature reaches 130 degrees Fahrenheit on a meat thermometer.

    How To Cook Prime Rib In The Oven

    Cooking prime rib roast in the oven is easy. Just follow these guidelines and don’t be surprised when everyone asks for seconds!

    • Be sure your prime rib roast is completely thawed. If frozen, thaw it in the refrigerator for at least three days before preparing.
    • Bring the meat to room temperature. Remove your roast from the refrigerator at least an hour before roasting.
    • Preheat your oven to 375°F.
    • Season the roast well. Our Kansas City Steak Original Steak Seasoning is an excellent choice.
    • Place the roast fat-side up on a rack in a roasting pan. Do not add water or cover the roast. Roast to desired doneness, following the chart below for the perfect boneless prime rib cooking time.
    • For a 5-pound prime rib roast that is medium-rare, roast for 1.5-2 hours until a meat thermometer inserted in the thickest part of the roast registers 125°F. Remember, your roast will continue to warm after removing it from the oven.

  • Trim away excess fat and silver skin. If you purchased a well-marbled rib roast, then you will have plenty of flavor inside of the roast. Avoid losing the underlying shape of the roast. So cut away in small increments.
  • Coat the roast in olive oil to help the prime rib seasoning adhere to the meat.
  • Liberally season all sides of the meat with the Prime Rib Seasoning
