Grilled blackened tuna steaks is one of my favorite warm weather meals. The prep is super easy, the cook time is super quick and can be paired with many different side dishes to complete the meal.

Grilling season is almost here and that means I will be cooking as much as I can outside in the nice weather on the grill. When the warm weather hits just about every meal we make for dinner is a salad, crockpot meal or cooked on the grill. I like to spend as much time outside as I can and that cuts down on the time I want to spend in the kitchen.

Grilling recipes are perfect, they are easy to make and are normally pretty quick to prep and to cook. This grilled tuna steaks recipe has about 5 minutes of prep and takes less then 5 minutes to cook on the grill.

Here is a photo of our final plate with our blackened salmon from the Schwank Infrared Grill and our simple salad. I can honestly say this was the best salmon I have ever cooked at home. The black crust on the outside had remarkable texture without tasting burnt. The flavors from the butter and garlic mixture that rendered out in the drip tray were better than we expected.

How Can I Tell When Salmon Is Done

Even if the fish looks cooked through, it is always best to check with an instant-read thermometer . According to the USDAs website, fish should be safely cooked through at 145° F. However, its okay to remove the meat at 130° F since the internal temperature continues to rise after its removed from the heat. The results are just about perfect after a 5-minute rest.

Salmon will change from translucent red to opaque pink as it cooks. When its done the center should still be a bit translucent but still, flake along the muscle fibers.

Place Your Salmon Into A Baking Dish And Cook For 30 Minutes

Grilled Blackened Salmon (+ Pineapple Salsa)

First, a baking dish is needed for your salmon. It should be big enough to fit the fish and have at least an inch of space around it. If you are unsure what size to use, use a 13×9-inch pan.

Next, place the salmon in the prepared dish and cook it for 30 minutes at 400°F. This temperature is adequate and will ensure that the fish cooks evenly without being burned or undercooked.

After 30 minutes of cooking time, remove the fish from the oven and sprinkle it with your chosen spices. The spices are up to you however, some popular choices include paprika, cayenne pepper, black pepper as well as salt and pepper. You can also mix these spices together yourself if you dont want all of them on one piece of fish.

Finally, cook your salmon in a skillet over medium heat until it becomes crispy on both sides. This should take about 10 minutes, depending on how thick your fish is.

How To Grill Blackened Salmon

The goal is to have a high heat and then to sear both sides. Starting with the flesh side, and finishing on the skin side until the salmon reaches your desired doneness.

  • Prepare grill for direct cooking using lump charcoal. Target 450 500 degrees Fahrenheit over direct heat. Typically this means your dome thermometer is at 400 425 degrees F.
  • Place the blackened salmon, flesh side down, over the direct heat. Grill for 8 minutes. After 8 minutes, using a fish spatula, gently nudge the salmon to see if it will release from the grill grate. If its still sticky, check again after a minute. The salmon should release easily when the proper sear has occurred. Flip and grill over direct heat for additional 6 minutes or until the internal temperature of the salmon is 135 degrees for medium salmon. For medium rare remove when the internal temperature is 125.
  • Remove from grill and let rest for 10 minutes to allow for carry over cooking. Optional: Finish with a squeeze of grilled lemon, and serve with your favorite sides.
  • Direct Heat is the best way to grill salmon.

    Never Cooked Blackened Salmon Before Here Are Some Tips

    I know cooking fish for the first time can be intimidating, but it doesnt have to be! Check out a few of these tips and tricks to make every salmon cooking session go smoothly.

    • Choose pieces that are all the same size: This way theyll be done at the same time. A center cut is usually the best option to ensure uniform thickness.
    • Bring salmon to room temperature before cooking: Take it out of the fridge about an hour before cooking. It will cook more evenly if its not cold.
    • Make a foil pan for the grill: Cooking in the foil means there are no extra dishes to wash. Use 2 sheets of heavy-duty foil, and double-fold all four sides then fold the side up to make a rim.
    • Leave the skin on: If you leave the skin of the salmon intact it helps hold the flesh together during grilling. But for this recipe, you want to use salmon with the skin removed so you can season both sides of the fillets.

    Ingredients For Grilled Blackened Salmon

    Type of Salmon: For this salmon recipe, we use Sockeye. While typically a smaller and thinner cut than its King/Chinook cousin, its perfect for a family of four or as part of a multi-protein meal. You can use this recipe for any salmon or steelhead variety. We source line or wild caught salmon. One thing to note is that line or wild caught generally has less fat than farmed Atlantic salmon, so it grills much faster.

    When purchasing salmon, ask your butcher to remove any pinbones to make it easier for you to eat once cooked.

    Chefs TipFresh salmon filet should not smell fishy and should have a dark pink or reddish color.

    Seasoning: We also use our blackening seasoning, which is a mix of spices, salt, pepper, and sugar to give an earthy aroma and flavor balancing out the buttery rich flavor of salmon. You can use any seasoning you like, however avoid one with too much sugar in the seasoning as it will burn faster over direct heat.

    One of my favorite things about living in California is the weather.     • Keep the Salmon Cold. The oil will adhere better with cold fish, so keep the salmon in the refrigerator until youre ready to start the recipe. You can put the spices on and then return it to the refrigerator if youre not ready to put it on the grill.
    • Have a HOT Grill or Pan. You want the grill or pan to be extra hot so the fish blackens properly and doesnt stick.
    • Oil Your Grill. Use a rag or paper towel dipped in oil to oil your grill right before putting the fish on.
    • Dont Move the Fish. Once you put the salmon on the dont move it around. Let it cook for 3-4 minutes so it forms a nice spice crust and is easy to flip.
    • Watch for Flare Ups. If the grill flames up from dripping salmon fat, sprinkle with water to prevent the salmon from burning.
    • Dont Overcook. Remove from the grill when its still a little rare in the middle.
