How Long Does It Take To Smoke Beef Short Ribs

As a general rule of thumb, you should allow 6-8 hours to smoke a large rack of beef short ribs.

I wish I could give you a more accurate time estimate, but the cooking time will vary based on the thickness of the meat, the number of ribs in the rack, and the temperature you decide to smoke at.

If you are pressed for time feel free to smoke a little hotter, around 275-300°F.

Dont forget to include the time it takes to prep and heat your smoker, and an hour to rest the ribs.

So from start to eating, allow a solid 8-9 hours. This is why I like to always have more time than I think I will need because if the food is finished early I can always leave it in faux cambro for longer.

What Is The Time It Takes To Cook Ribs On A Charcoal Grill

2 Make a charcoal fire with an indirect cooking technique like the snake. Fill a small aluminum pan halfway with water and place it on the void side of the grill. How Long To Smoke Beef Ribs

It will take about 8-10 hours to fully smoke beef ribs. This time can vary from rack to rack, so be sure to give yourself plenty of wiggle room if your particular rack of ribs takes less or more time than this guide.

Rather than smoking based off cooking time, go off the internal temperature of the meat. The temperature of the meat will guarantee your food is cooked to the perfect doneness.

Prepare Your Wood Chips

Texas Beef Rib Rub

Soak your chosen flavored wood chips for 15 minutes, then drain. Bundling the wood is what will cause smoldering to produce that coveted smoke. You can accomplish that with two methods. A smokebox is simplest. You can also create a smoke bomb without too much effort.

Pro-tip #1: To make a smoke bomb, wrap your drained wood chips in a loose pouch of aluminum foil and poke two or three holes into the packet.

Pro-tip #2: You can soak wood chips in advance, put them in a freezer bag, and freeze them until you need them for your next barbecue. You do not even need to thaw them.

It takes long for beef ribs to be tender. One of the signs of tenderness is that the bone begins to fall off. You will know that the rib is done when the internal temperature reaches 200°F. You can cook them a bit longer for them to be completely done.

If you dont have a thermometer to measure the internal temperature, you can gently lift the rib bone. If the rib falls off, the beef is done. How To Grill Beef Ribs In The Oven

Grilling beef ribs in the oven follows the same process as grilling on open flames or a gas grill.

With the oven, you will need to preheat it to around 225°F before placing your beef ribs inside.

Put the meat on the middle rack and allow it to cook for 1½-2 hours, turning a couple of times in between.

You can cover it with foil to ensure it doesn’t dry out and remove the foil in the last 20-30 minutes to brown.

Another way to give that glazed, seared, and charred effect is by turning the oven to the broiler setting, which comes closest to grilling.

When it comes to barbecue, delicious ribs are the dish that comes to mind for many people. Pork ribs are typically the traditional option, but beef ribs can be just as tasty — and just as easy to cook on your grill. To ensure that the ribs are tasty and flavorful, it all starts with a good spice rub — but preparing your grill the right way is also important. By using direct heat to crisp up the exterior and indirect heat to create a tender interior, you’ll have the most mouth-watering beef ribs for your next barbecue even if you’re not a pit master.

Whats The 3 2 1 Method For Smoking Ribs

A: The 3 2 1 method for smoking ribs is a way to cook ribs by cooking them in a smoker. The first step is to place the ribs on the smoker, then smoke them for two hours. After that, you should put them back on the smoker and cook them for another hour. Finally, you can wrap the ribs in foil and finish cooking them for an additional hour.

Where Can I Find Beef Ribs

When I go to the butcher, I have to ask for beef ribs because they arent on display. They usually go back to the freezer and bring them out to me. Each rack will feed about two to three hungry people.

Sometimes the butcher wont have any frozen ribs, but they come from the rib roast. My butcher will take an entire roast and cut off the entire slab of ribs. These taste just as good as the frozen ones, but sometimes the butcher charges a bit more for them. The butcher will tell you that baby back pork ribs have more meat on them, but theyre smaller. Beef ribs are much larger, so they have more bone. When I compare the amount of meat on beef ribs to baby back ones and the relative cost, I think the beef ones are the better deal. Our butcher charges under $3/lb for the beef, while the pork ones are over $4/lb.

Grill The Ribs are a type of rib meat that is smoked over an open flame. Cook for around 2 hours, moving the pan every 30 minutes or so to ensure that various edges are exposed to the hot side of the fire. The ribs should be wrapped firmly in aluminum foil and placed back on the grill for another 12 to 2 hours to lock in the juices while you continue to cook for another 30 minutes or so.

This is where all your patience pays off. The probe goes in like butter and measures 200-205°F.

Carefully pick the ribs up and wrap them in aluminum foil or butcher paper to rest.

Be careful not to damage the bark. A good tip I got from Aaron Franklins video is to pick the ribs up with a damp towel so you dont accidentally damage the bark.

When resting smoked beef ribs make sure to give them at least 30 minutes, or preferably an hour.

    • If you need to serve them to your guests sooner, let them sit uncovered for 30 minutes before slicing into them.
    • If you have longer to wait, wrap them in butcher paper and then a towel and place them into a cooler.

If youre serving these ribs at a party you can using the faux cambro technique will keep the meat warm for a few hours and you will benefit from a longer rest time. This allows the juices to redistribute back into the meat.

Once your ribs have rested for at least an hour slice them into individual ribs with a good slicing knife. Dont forget to grab a rib by the bone for the ultimate caveman experience.

And thats it! If youve followed this guide your ribs should be tender, with a rich smoke ring around the outside.

Making The Bourbon Mushroom Cream Sauce

For the sauce, we will rearrange the grill for direct cooking at a medium-high heat. Add a cast iron skillet to the grill then begin sweating your mushrooms in hot Beef Tallow.

What is sweating mushrooms? Mushrooms have a lot of moisture, so if we do not cook them by themselves they will become soggy and add too much water to the sauce. We will cook out the water so all we are left with is a powerful flavor punch of mushrooms.

Once they are sweated out, we can caramelize some garlic paste and then deglaze with bourbon. You want to be careful with the deglazing part as the skillet might catch on fire! This is totally normal, and the fire will go out once all the alcohol in the bourbon has burned off.

Finish the sauce by then adding the beef broth, heavy cream, salt and pepper. Let that sauce simmer over a little lower heat until fully thickened. Once you have a nice thick & creamy sauce, you can pull the sauce off and keep it warm.

Rotisserie Prime Rib With Beef Tallow Injection Instructions

Lets begin by heating up the wagyu beef tallow so it can be injected into the Prime Rib easier. Once warm, add it to your injector and inject throughout the whole prime rib. In my opinion, you cannot add too much of the beef tallow just add about 1 cup.

Next, use any leftover beef tallow to lather the outside of the prime rib as your binder. This will create an amazing outside crust as the fat will render from the coals and caramelize really nicely.

Mix together your salt, pepper, garlic powder and chipotle powder for your seasoning. I like to use finely ground seasonings as I believe they make the best bark on meat, but you can also use whatever rub you like. Use your favorite beef rub on the recipe as it will only make it taste better to you!

Finally, we can skewer the prime rib with the rotisserie skewer. Try to make it through the thickest part of the meat and secure it as best as possible. From here, we will set the Rotisserie Prime Rib to the side and get the grill started.

Do You Need To Wrap Beef Short Ribs When Smoking

I find that wrapping during the cook prevents the bark from forming properly, and theres really no need unless you are running out of time.

Aaron Franklin doesnt wrap his smoked beef ribs, and thats good enough for me!

If the bark is getting too dark or I need them done sooner, I will wrap them in butcher paper.

The reason I opt to wrap in butcher paper is that allows the meat to breathe and does not steam or braise the ribs like aluminum foil does. Youve worked hard to create a nice bark, the last thing you want to do is ruin it.

Choose baby back ribs for cooking ribs on a gas barbecue because they will cook more evenly. St. Louis ribs can be prepared on a gas grill as well, although they may taste better if they are baked in the oven. Choose a rack of baby back ribs that has a consistent layer of meat across the ribs when selecting a rack of ribs.

Tricks To Using A Gas Grill

While you can turn out beef ribs from a gas grill that are just as delicious as the next persons, you will have to make a few adjustments. However, you cannot beat the convenience of a gas grill.

If you are new to the art of barbecuing, gas grills are more forgiving as they do not get as hot as charcoal grills. They also do not require the setup and the intense babysitting of their charcoal cousins. Finally, gas grills are much easier to clean.

The challenges you will face with a gas grill are flavor and smoke. Smokers and charcoal grills run circles around the gas grill on smoke production. You can somewhat get around this by using a smoker box or a smoke bomb.

While you can easily create juicy and tasty beef ribs with a gas grill, you may often struggle to obtain that signature barbecue flavor. Here is where the strategic use of sauce and wood comes into play.

You cannot exactly replicate the subtle blend of wood and charcoal flavors you get from a charcoal grill or the bold smoky accents from a smoker. Your ribs, however, will have a signature flavor of their own.

*Pro-tip A gas grill will not produce a large amount of smoke. Nevertheless, this is a good thing because excess smoke in a gas grill will ensure your food has a bitter flavor.

What kind of wood should you use on a gas grill? Use a dry hardwood. For beef ribs, you will do very well with mesquite, oak, or hickory. You can also try cherry.
