Although my Kamado Joe and other kamado grills, such as the Big Green Egg, may achieve temperatures well in excess of 1000 degrees Fahrenheit, this does not imply that you should cook at such high temperatures.

How Long To Grill A Steak

The rule of threes is pretty simple. This method is based on direct and then indirect grilling so Ill start here.

Direct heat grilling is when the steak is placed directly on the grates directly over top of the heat source. The dome is normally closed.

Indirect heat is grilling on the side of the grill opposite of the heat source. The dome is always closed for indirect heat grilling.

Sometimes direct heat and then indirect heat grilling is referred to as two zone grilling. See the picture below:

How To Properly Season A Ribeye Steak

Season your steak with kosher salt at least an hour, preferably 2-3 hours before grilling it, if you have the time. This allows time for the salt to penetrate into the meat, seasoning it throughout as opposed to just the outside.

Youll hear some experts say that seasoning so early draws moisture out of the steak and makes it dry, blah blah blah. While the salt will draw out some moisture, theres plenty of intramuscular fat in a ribeye to keep it moist. Its well worth the minimal moisture loss in exchange for getting salt into the meat.

Peppering the steak before grilling is as controversial as pineapple on pizza or ketchup on a hot dog. People have very firm opinions on this topic. Heres what Ill tell you. Pepper burns, and gets slightly bitter when exposed to very high direct heat.

Some people really enjoy that slight bitterness, I do on occasion. Others prefer a more pure pepper taste and insist on using pepper only after a steak has come off the grill.

Try it both ways and see what your preference is. Dont be bullied into group think when it comes to pepper.

Season Early And Intentionally

If you season properly, you wont taste the salt. Salt is a flavor enhancer it brings out the flavor of whatever it touches. When you salt the beef correctly, you taste more beef, not more salt.

Bring the steak home and salt it 24 to 48 hours before you cook it. There is considerable disagreement on this, but I prefer to salt early. This steak is inbound for dinner tomorrow, so season the night before, at the latest.

Not all salts are the same: Each type of salt has different amounts of sodium per volume because of the grain size. If you are using a different type of salt than the recipe specifies, then your results will be off. Something might be over- or under-seasoned. See conversions below.

2 teaspoons Diamond Crystal kosher salt = 1 ½ teaspoons Morton kosher salt = 1 teaspoon table salt

Whichever type of salt you use, get familiar with it and stick with it. My preference is Diamond brand kosher, so thats what I use in my recipes.

Amount of salt per pound of meat: 1 teaspoon of Diamond kosher salt per pound of meat.

Sprinkle it on with your fingers from about 6 inches above the steak for even distribution. It might seem like a lot of salt, but its all going to be absorbed into that big steak and not stay on the surface.

Dont marinate a high-quality steak like this. You just want to taste the steak, salt and the grill.

One major rule of grilling a ribeye steak is high heat. Im talking seriously, searingly hot heat.get the picture?

And that means starting with good charcoal or a very hot gas grill. If youre using charcoal and want to get that really hot searing heat that creates the perfect ribeye steak, you need to fire up a full chimney of good quality lump charcoal or briquet.

*If want to go old school and use charcoal but dont have a chimney, light a pile of about 100 briquets and let them smolder and get good and hot. When the coals are ready, arrange them in a two-zone fire. Replace the top grate, and allow it to heat up all vents should be fully open.

You should always start with a clean grill and coat the grill grates by pouring cooking oil on a folded paper towel, oiling the grate using long-handled tongs to hold the paper oiled paper towels.

  • Be Patient: Youll be flipping the steak often, every 20-30 seconds. After the first handful of flips it might not look like youre getting any char at all. You will, it just takes time. Flipping often like this will prevent overcooking the outside and undercooking inside.
  • Make use of the hot grill: Dont forget the sides when planning this steak. Plan for some that cook quickly while your steak is resting, and that benefit from high direct heat like this grilled broccolini or grilled baby bok choy.
