Pretty Damn Good Rotisserie Chicken

Simple Steps to the Perfect Rotisserie Chicken | Weber Grills

The brine and air-dry method seemed to be working out, so I followed that procedure again, but added a few extra steps this time around.

I knew I needed more heat to get better browning, so I added an extra half chimney of charcoal on top of what I’d used before, which brought the grill temp into the 425-450°F range. Then, noticing that holes in the skin provided a portal for the fat to escape and baste the skin, I poked holes all over the bird using a skewer, especially in fattier thigh areas. Finally, to jumpstart the browning, I brushed the chicken with butter when it first went on the rotisserie.

These all added up to make a pretty damn juicy, tender, and flavorful chicken. It was certainly a great home attempt, but yet another version eclipsed this one.

Place Chicken On Rotisserie Spit

The chicken needs to be placed on the spit so that it is centered and evenly balanced. It must also be held in place so it does not move around as it is cooking. If the chicken was loose on the spit rod and unbalanced, the heaviest side would always drop to the bottom and the chicken would not turn evenly as it is cooking on the rotisserie. See the instructions below on how to place the chicken on the rotisserie spit.

Infrared Grill Recipes: Rotisserie Chicken

The first place I go for grilling a whole chicken is to the rotisserie. An infrared grill offers even heat across the cooking surface allowing the chicken to cook more evenly and thoroughly. By spinning the chicken over the heat, the juices are distributed like an automatic self-basting machine is at work the whole time the chicken is cooking.

Take a medium size chicken and rinse well. Pat the chicken dry with a paper towel. In a bowl mix olive oil, minced garlic, chopped oregano, lemon zest and paprika with juice of one lemon. Pour mix over the bird and rub throughout. Load onto the rotisserie rod and cook over medium heat until bird reaches an internal temperature of 165 degrees.

Rotisserie Chicken On The Grill

Cooking rotisserie chicken on the grill is a great way to get the bird evenly cooked. I also recommend placing a baking sheet or large, flat pan under the rotisserie to catch any drippings and prevent flare ups. You can also cook your veggies at the same time as you cook your chicken. During the last 20 minutes of cooking, add your favorite vegetables to the baking sheet or pan and allow them to cook with the chicken.

Some great vegetable ideas to cook with your chicken include carrots, Brussels sprouts, baby potatoes, zucchini, and summer squash. Remember to check your vegetables periodically so they dont overcook and become too soft.

Fair warning: If you add vegetables to your grill it will take longer for everything to cook, so be prepared to increase your cook time as needed.

How To Rotisserie Like A Pro

A whole chicken is a canvas for a myriad of different flavors and grilling techniques. Its why one is always on my weekly grill list. Perfect for dinner and even better for leftovers, like grilled chicken salad.

Since grilled chickens are a regular occurrence here, I like looking for new ways to add or change the flavor. Enter the brine. Through osmosis, the chicken absorbs the salt water brine over time. The result is a plump, moist bird ready for the grill.

While a brine is an added boost, why stop there? My favorite chickens are spun on the rotisserie. The gentle application of heat and the self-basting rotation of the spit delivers an unforgettable chicken. When I carve into a rotisserie chicken, I find the most tender and delicious meat possible. It is the best.

Brining can take anywhere from 6 to 12 hours, so it takes some forethought before preparing and yes, the rotisserie adds a few more steps, too. However, the one-two punch of brining and the rotisserie are well worth the time and to prove my point, heres an incredible recipe by Jamie Purviance featuring both.

Tips For Making Pellet Grill Rotisserie Chicken:

Rotisserie Chicken on the Napoleon Gas Grill | Rotisserie Chicken Recipe with Malcom Reed

I decided to adapt my Ninja Foodi Whole Chicken recipe to make this Rotisserie Chicken, using the same ingredients but with a different cooking method.

The most difficult part of cooking a rotisserie is tying the chicken, this is the first thing you should do after removing the giblet.

Use this video to learn how to truss a chicken, do this first then you will move on to the recipe.

Once the chicken has been trussed, we patted the chicken dry and added some chunks of onion and lemon inside the chicken cavity.

Once this is done, go ahead and use the rotisserie kit to put the chicken onto the rotisserie, use the manual with the rotisserie attachment to do this.

Once the chicken is secured to the rod, go ahead and coat the chicken with olive oil or grapeseed oil and season it per the recipe instructions.

After the chicken is seasoned, its time to add the rotisserie attachment to the grill. The grill will need to be heated to 350*F and then the chicken will cook for 2 to 2 1/2 hours.

The internal temperature should be at least 165*F before serving.

Now, are you ready for a treat? This Pellet Grill Rotisserie Chicken is easy to prep and cook, makes for a wonderful meal.

How To Make A Great Rotisserie Chicken

Set it and Forget it

A simple brine and fresh vegetable and herb stuffing creates a rotisserie chicken recipe that bests any grocery store version every day of the week.

There are two smells I am immediately drawn to the minute I enter the grocery store.

First theres the smell of that dang french bread they just pulled from the oven. All golden on the outside and soft and pillowy on the inside, still warm enough so that when I get home I immediately tear a chunk off with my bare hands, slather with butter and eat.right.there.

Those grocery store bakers get me every time.

The other smell is the aroma of rotisserie chicken. As soon as the smell hits the olfactory senses, weary cooks are lured to abandon their dinner cooking plans and buy one to go.

Guilty as charged. I can barely get to the car before opening up the plastic container and picking off the crispy skin.

Making a rotisserie chicken at home can seem a little intimidating. But in reality, theyre just about the easiest thing youll ever cook. And once you put these steps into place, youll be making one every week for a main meal, to snack on and for sandwiches. Before long youll be giving the store bought version the heave ho.

Selecting The Best Smoking Wood To Pair With Chicken

Lemon And Herb Rotisserie Chicken Recipe – By

Youll find most fruit and nut varieties of smoking wood will complement poultry across the board.

The heavy smoking woods like Hickory and Mesquite Id steer clear of as they do tend to overpower the taste of chicken. So much so, that you are left with a strong aftertaste.

Smoke should be another element to your flavor profile, not the only thing you can taste.

Cleaning The Rotisserie Chicken

Generally, a whole chicken will contain a giblet package that needs to be removed from its cavity, unless it was previously removed during thawing.

Check the cavity of the chicken at the tail end to see if the kidneys have been removed. The kidneys are the dark reddish colored objects located on the back side of the cavity near the tail. If they have not been removed, use your thumbs or fingers to force them out.

The chicken should then be rinsed thoroughly inside and out with cold water.

Check neck and tail area for excess fat. Trim the excess away and discard.

Pat the chicken dry using a paper towel. It is now ready to be seasoned or prepared in the desired manner for rotisserie cooking.

When finished, be sure all utensils and work areas are cleaned and sanitized properly.

How Much Does A Rotisserie Chicken Cost

In actual fact, chicken is one of the least expensive proteins you can find in your grocery store. Almost all the grocery stores out there now sell cooked take away rotisserie chicken, I read somewhere that Costco sells close to 60 million rotisserie chickens a year! Thats a whole lot of chickens!!

I know they are easy to pick up and are convenient for dinner, and most stores sell them as a loss leader so they are usually pretty inexpensive. But for the time it takes to cook your own, knowing what you have put in, the health benefits, I think, outweigh the convenience!

Plus, you have to wonder how long those roast chickens at the store have been sitting under the heat lamp. I know when I look at them sometimes they look like they have been there for a while. The skin on them is usually soft and wrinkled, not crispy.

Using the Bull pit mitts, place the rotisserie spit with positioned chicken thighs into the rotisserie brackets. Turn the rotisserie motor on. Turn the rotisserie motor on. Turn the two outside burners to low and the infrared back burner on low heat, around 380 degrees F. Check that the chicken thighs rotate properly and close the lid.

I have cooked my share of wings and then some.On my Char-Broil Big Easy. And on a smoker.Sometimes, on a charcoal grill using the Vortex BBQ.Deep fried. Slow cooked. Any way, any time, I do love wings. Heck, I even put together a free eCookbook full of wings, using homemade and store-bought sauces. But until now I had never cooked wings using a rotisserie basket on my grill.

Cook the chicken at 325°F until the internal temperature at the thickest part of the breast is around 165°F. To finish crisping the skin, turn the side burners off and the infrared rotisserie back on, until skin is a deep, golden brown. Let rest for 20 minutes off the grill, then remove from spit and carve.
