The brine and air-dry method seemed to be working out, so I followed that procedure again, but added a few extra steps this time around.

I knew I needed more heat to get better browning, so I added an extra half chimney of charcoal on top of what I’d used before, which brought the grill temp into the 425-450°F range. Then, noticing that holes in the skin provided a portal for the fat to escape and baste the skin, I poked holes all over the bird using a skewer, especially in fattier thigh areas. Finally, to jumpstart the browning, I brushed the chicken with butter when it first went on the rotisserie.

These all added up to make a pretty damn juicy, tender, and flavorful chicken. It was certainly a great home attempt, but yet another version eclipsed this one.

Place Chicken On Rotisserie Spit

The chicken needs to be placed on the spit so that it is centered and evenly balanced. It must also be held in place so it does not move around as it is cooking. If the chicken was loose on the spit rod and unbalanced, the heaviest side would always drop to the bottom and the chicken would not turn evenly as it is cooking on the rotisserie. The first place I go for grilling a whole chicken is to the rotisserie. An infrared grill offers even heat across the cooking surface allowing the chicken to cook more evenly and thoroughly. By spinning the chicken over the heat, the juices are distributed like an automatic self-basting machine is at work the whole time the chicken is cooking.

Take a medium size chicken and rinse well. Pat the chicken dry with a paper towel. In a bowl mix olive oil, minced garlic, chopped oregano, lemon zest and paprika with juice of one lemon. I decided to adapt my Ninja Foodi Whole Chicken recipe to make this Rotisserie Chicken, using the same ingredients but with a different cooking method.

The most difficult part of cooking a rotisserie is tying the chicken, this is the first thing you should do after removing the giblet.

Use this video to learn how to truss a chicken, do this first then you will move on to the recipe.

Once the chicken has been trussed, we patted the chicken dry and added some chunks of onion and lemon inside the chicken cavity.

Once this is done, go ahead and use the rotisserie kit to put the chicken onto the rotisserie, use the manual with the rotisserie attachment to do this.

Once the chicken is secured to the rod, go ahead and coat the chicken with olive oil or grapeseed oil and season it per the recipe instructions.

After the chicken is seasoned, its time to add the rotisserie attachment to the grill. The grill will need to be heated to 350*F and then the chicken will cook for 2 to 2 1/2 hours.

The internal temperature should be at least 165*F before serving.

Cleaning The Rotisserie Chicken

Generally, a whole chicken will contain a giblet package that needs to be removed from its cavity, unless it was previously removed during thawing.

Check the cavity of the chicken at the tail end to see if the kidneys have been removed. The kidneys are the dark reddish colored objects located on the back side of the cavity near the tail. If they have not been removed, use your thumbs or fingers to force them out.

The chicken should then be rinsed thoroughly inside and out with cold water.

Check neck and tail area for excess fat. Trim the excess away and discard.

Pat the chicken dry using a paper towel. It is now ready to be seasoned or prepared in the desired manner for rotisserie cooking.

When finished, be sure all utensils and work areas are cleaned and sanitized properly.

Place the whole set up on to the grill, making sure that the bird is centered on the rear burner. Turn on the rotisserie motor. Place a drip pan under the bird and add the wine. You want to brown the chicken for about 15 minutes, or until the bird is crispy looking on the outside.

Using the Bull pit mitts, place the rotisserie spit with positioned chicken thighs into the rotisserie brackets. Turn the rotisserie motor on. Turn the rotisserie motor on. Turn the two outside burners to low and the infrared back burner on low heat, around 380 degrees F. Check that the chicken thighs rotate properly and close the lid.
