Ive had this recipe in my database for as long as I can remember. Its title reads The Best Grilled Shrimp Recipe. Its somewhat my go-to recipe for grilled shrimp kabobs, which I make several times during the grilling season. In this a recipe the shrimp is marinated in bright flavors, grilled and then served with a sassy butter dipping sauce. This grilled shrimp skewer recipe is one that youll want to keep on hand for your next BBQ.

I take a hard stand when it comes to calling a recipe on my blog the best. After all, its only my opinion and everyones tastes are different. I feel like if Im often calling something the best, its as if Im simply using a marketing ploy to gain traffic.

Not to mention, I spent my career in sales, and the number one golden rule was always under promise, over deliver.

Ive only done it a couple other times on this blog for The Best Pasta Salad Ever. And thats because, just for fun, I used those words as a search term to find a pasta salad recipe. Thats what the recipe was named, and after reviewing the ingredients, and deciding it sounded delicious, I made it, and really? It may just be the best pasta salad ever.

You can if youd like! You can thread your shrimp onto skewers before you grill it, which in theory makes it easier to turn. But Alex and I also find that it tends to spin on skewers, making it harder to manage on the grill. It also takes some time to thread it onto skewers, and wooden skewers need to be soaked first so they dont burn.

Solution #: Too Close For Comfort

With my shrimp pre-treatment taken care of, it was time to consider my grilling method. Thus far, I’d been threading the shrimp on a pair of skewers and spacing them apart, thinking that this would maximize their exposure to the heat of the grill. It also makes the shrimp look all nice and pretty when you toss that skewer on a serving platter. But is it really the best way?

My old employer Cook’s Illustrated says otherwise. They recommend squeezing the shrimp tightly together on a skewer. The reasoning is that with less surface area, heat takes longer to penetrate into the center of the shrimp, thus buying you extra time on the grill to give the exteriors a nice char. Makes sense to me, so I tried it.

They were absolutely right here, as they often are. By skewering the shrimp so that they were snugly spooning each other, I could easily leave them on the grill an extra minute or two before they started turning rubbery, buying me precious browning time. There was only one thing left to address: moisture.

You will always want to think about keeping your food either colder than 40 degrees or warmer than 140 degrees. Food should only be left at room temperatures for a maximum of 2 hours.

    Grilled shrimp storage should follow these guidelines:

    • Tightly pack: Store shrimp in a shallow airtight container or heavy-duty aluminum foil or plastic wrap.
    • Refrigerator: 3-4 days cooked, 1-2 days raw
    • Freezer: 3 months cooked, 3-6 months raw
    • To re-heat cooked shrimp from frozen: Thaw in the refrigerator and then keep 3-4 days max before cooking. Do not re-freeze. If you thaw in the microwave or in cold water, it needs to be eaten right away, then discarded.

    • Shrimp I recommend using extra large or even jumbo shrimp.
    • Honey real maple syrup should work fine here too.
    • Soy sauce you can use regular or low-sodium soy sauce here based on how salty you like things. Keep in mind the longer you marinate the more sodium will be absorbed so if you plan to leave it for a couple of hours use low-sodium.
    • Olive oil this will help keep the exterior of the shrimp from drying and adds a little richness.
    • Garlic this ingredient adds a lot of flavor especially when you use fresh. I dont recommend substitutes.
    • Crushed red pepper flakes if you want the spicy option add red pepper flakes. Start with 1/4 tsp, taste the marinade , then if you want it spicier add more to desired heat level.
    • Green onions or parsley this is only if you want that nice color contrast for looks, its really not necessary just if youre going for presentation.

    How To Thaw Frozen Shrimp

    To thaw shrimp, put the frozen bag of shrimp into a bowl and leave it in the fridge overnight. If you dont have time for that, empty the frozen shrimp into a bowl in your sink and let a trickle of cold water run into the bowl. Stir every 5 or so minutes to break up any ice. The shrimp should be thawed in about 10 to 15 minutes. Be sure to pat it dry thoroughly before cooking.
