This is a really tough choice. Companies like Yoder, Lang, and Horizon all produce outstanding offset smokers in the $1000 $3000 price range so its really hard to go wrong.

That said, if you put a gun to my head I would have to pick the Yoder Wichita.

With 1,600 square inches of cooking area, the Wichita is a great choice for a top of the line backyard smoker, while still being able to perform in competitions or for catering larger events.

That is split up between two 19.75×19 cooking grates in the main chamber, second 14.5×36.5 slide out shelf and finally a 19×18 Cooking Grate in the firebox.

Unlike the vast majority of smokers, the Wichita is made in the USA from 1/4 pipe and plate steel.

This provides excellent insulation for better temperature control and even heat distribution.

Yoder has built a strong reputation in the barbecue community for its craftsmanship. They also sell the popular YS640S pellet grill which we have reviewed.

The smoker weighs in at a hefty 591lbs, although the large wagon wheels make it possible to move.

The loaded model comes with two built-in thermometers so you can make sure your temperature isnt hotter on one side, and the lid has a counterweight to make it easy to open.

Can You Leave Pellets In The Hopper

We dont recommend leaving pellets in the hopper, especially if you live in a high-humidity environment where moisture in the atmosphere will cause the pellets to disintegrate. Instead, empty the hopper after each cook and store your pellets in an airtight container in a dry location. You might be able to get away with leaving pellets in the hopper if you live in a dry climate and cook often, but we dont think its worth the risk.

I’ve tested all the wood smokers above and they function well. The smokers do not have a lot of advanced features and, therefore, may not be suitable for the pro pit master. However, if you usually smoke as a hobby or are a novice pit master, they are perfect.

One thing that I’ve realized is that all these smokers have flimsy wheels. Therefore, if you will be moving your smoker quite a bit, it is only a matter of time before the wheels get spoiled.

Please Please Please Dont Buy An Inexpensive Offset/horizontal Smoker

I know you want to buy an offset like the one above. It looks so macho. So cool. It says Im serious about barbecue. I do not recommend any small inexpensive offsets. I especially mean the Brinkmann Pitmaster, Brinkmann Smoke N Pit Professional , Char-Broil Silver Smoker, Char-Broil American Gourmet, and especially the Char-Griller Smokin Pro. They are a serious pain in the pork butt. The more expensive heavy duty offsets, lets say $500 and up, are fine cookers, but still require more skill than other designs.

Why? Let me count the ways: First of all, smoke and heat want to go up, not sideways. They leak badly so it is impossible to control airflow and airflow controls temperature. And they are much hotter on the side next to the firebox than on the side next to the chimney, so if you put on six slabs of ribs, some will be done way sooner than the others. Yes, you can move them around, but thats a pain, and they still come out uneven.

Yes, I know you see the big huge trailer mounted offsets on TV, and there are some smaller backyard versions the look a lot like the $200 models at the Home Depot, but they are designed very differently. Offsets Like Lang and Horizon are made with thick steel that retains and distributes heat well.

As I beg you above, please do not by an offset smoker unless you spend about $1,000. If you want something that makes you look macho, and something that really works, get a drum smoker. Here are two that have earned our gold medal:
