Rib Eye Steak Ingredients
- Rib eye steak We used a beautiful USDA Prime boneless rib eye steak.; A ribeye should ideally be about 1.5 inches thick.
- Olive oil I love a strong and fragrant olive oil when cooking steaks it imparts a wonderful light flavor when grilled.
- Salt A good course salt, heavier than table salt, is what you want for seasoning rib eye. I like to use my grinder.
- Pepper Freshly ground black pepper is ideal.; Dont be stingy, this tastes wonderful on your steak.

Getting The Grill Ready
Before you add the steak to the grill, make sure you get it as hot as possible. There should always be a good-sized gap between the grates and the heat source. The size of this gap can be dependent on the make and model of the grill. Make sure all of the vents are left open and allow the top grate to heat up. Pour some vegetable oil on a folded up paper towel. Using your tongs to hold the paper towel, wipe down the grate.

Preparing The Steak For The Grill
Before you grill, gather the following supplies:
- Grill tongs
- Vegetable oil
- Meat thermometer
The steak should be removed from the fridge at least fifteen minutes prior to grilling. If you plan on using seasoning, coat both sides of the steak with vegetable oil, which will cause the seasoning to stick, while also preventing it from sticking to the grill. After the meat is lightly coated, liberally sprinkle both sides with seasoning.
In order to prevent any flareups, trim off any excess fat. Next, youll want to add some coarse salt to lock in the juices. Salt is considered a big source of flavor, especially when it comes to grilling a ribeye. Using a coarse salt is important since it can also provide a nice crunchy crust and helps to lock in the flavor.
Which Cut Of Steak Is Best For Grilling
When I first started working on this recipe, my top contenders for the steak were the ribeye , the rib steak , the porterhouse, and the T-bone.
Any of those cuts will taste great grilled due to the significant marbling of fat, which leaves the meat tender, and flavorful. Let’s take a closer look at each:
- Ribeyes vs. Rib steaks: A ribeye has the bone taken out; a rib steak, also known as a bone-in ribeye, is a ribeye with the bone in. Due to its extensive marbling, this cut cooks beautifully on the grill, bone in or out. Trim the thick fat from the outside edgeleaving it on will cause flame flare-ups that can give your steak an unpleasant burnt flavor. Don’t worry, trimming it off won’t result in lost flavor!
- T-Bones vs. Porterhouses: People often confuse these two cuts, which is understandable because both cuts come from the loin and both have a T-shaped bone with meat on both sides. But porterhouses are larger and actually have more of the tenderloin than the T-bone. The U.S. Department of Agriculture’s Institutional Meat Purchase Specifications say the tenderloin of a porterhouse must be at least 1 1/4 inches thick at its widest, while that of a T-bone must be at least 1/2-inch.
Ultimately, I chose to use ribeye steak for its flavor, size, and the lack of bone — I wanted to slice and serve this steak family-style, and the fact that it doesn’t have a bone makes that easier.

Tips And Tricks For Grilling Steak
- Take the time to remove the steak from the refrigerator about 30 minutes before you are going to grill. This will bring it to room temperature. The benefit of this is that it will cook more evenly.
- We used our beef seasoning which we think is amazing, but your favorite steak seasoning is the perfect option also. Even a sprinkle of coarse salt and ground black pepper will make it mouth watering.
- The steak we used is 12-16 oz so it will be more than one serving.
How To Grill The Perfect Steak
- Let the steaks come to room temperature first. This takes about 30 minutes and ensures they will cook evenly.
- Really pat down your ribeye steak rub! Patting down the seasoning gives the meat a perfect crust on the grill.
- Allow the steaks to rest before cutting into them – at least 10 minutes.
- Always slice steak against the grain.
- Use a meat thermometer for best results when checking for your desired degree of doneness.

After cooking the ribeye steak, my husband slathers on a tablespoon or two of butter to add another layer of juicy flavor and fat for the ultimate bite. The melted butter seeps into the meat and sends the point home that this is one lip-smacking steak.

Should I Season Ribeye Steaks
Despite the fabulous marbling in ribeye steak, I still like to lightly oil the steaks before seasoning them on both sides in my favorite steak rub. This helps the seasonings stick to the meat. Then, I shake off any excess rub before putting the steaks on the grill. I like a certain Prairie Dust seasoning at the local steakhouse but if you prefer only salt and pepper, that will be great, too.
How Long Do You Grill A Two
This can depend on the type of grill you have and if there is a nice marble throughout the steak. If youre using a charcoal grill and the steak has some nice marbling, we would recommend giving the steak three to four minutes searing time on each side and around ten minutes of cooking time once the steak is no longer cooking directly over the coals. However, the cook time for a steak of this size can also depend on how you like your steaks. Obviously, if you like your steaks rare or medium-rare then youll want to cook the steak for a shorter period of time, usually two to three minutes per side and only five minutes cook time once the steak is no longer directly over the coals. Using a digital thermometer can easily help you to determine when its time to take your steak off the grill or if it needs to cook for a few minutes longer.

Make sure to salt and pepper your meat at least ten minutes (and up to 30 minutes before grilling.; This will allow the salt to tenderize the ribeye steaks.
Always allow the steaks to rest several minutes before cutting them.
Slice your steaks thinly against the grain for optimum tenderness and mouth feel.

Move To Indirect Heat Area Of Grill
Once you have properly seared the steak, if it is not finished, move it to the side of the grill where it not directly over the coals. Close the lid and continue cooking the steak until you achieve the temperature you desire. Keep in mind that you do not need to flip the steak during this stage of indirect grilling.
Tips For Grilling The Perfect Steak
- Season, then chill: I apply the same technique I use for getting crispy chicken and turkey skin to grilling this steak: season, then let it chill in the fridge uncovered for up to 48 hours. This essentially dry brines the steak while also letting it air-dry. This approach allows the surface moisture to evaporate while the seasoning has time to penetrate the meat resulting in deeply flavored steak that sears beautifully and develops a nice crust on the grill.
- Start with clean grates: Just like you use a clean skillet with a little oil to cook dinner on the stovetop, you want to start with clean and oiled grill grates.

How To Cook Ribeye Steak On The Stove
Full disclosure: You WILL set off your smoke alarm and possibly your neighbors smoke alarm if you make this recipe inside your house. ITS WORTH IT. Im telling you.
First up: get yourself a decent cast iron pan. Can you make this steak in a regular pan on the stovetop? Yes, if it is a really heavy pan. Do not use your dinky no-name $10 pan that you got for your first apartment 15 years ago. It just cant handle this kind of heat! You need something heavy. And no teflon if you can avoid it. Cast iron is preferred because it gives you the best sear of your life.
It is exactly the same as cooking this in a pan on the grill: sear both sides of the meat on super high heat, then turn the heat to low and douse the whole thing repeatedly with garlic butter. Its quick and easy! Just have a towel ready to wave next to your smoke alarm! This is why I like to do it outside on the grill! All the flavor of pan fried ribeye, none of the smoke and mess.
