  • A Complete Guide To Cooking Halibut

Halibut is an extremely versatile fish, meaning it is easy to cook in a variety of preparations. A prized catch for both sport and commercial fishermen, halibut is a lean fish with mild, sweet white meat. The meats flakes are large and firm, but proper preparation will result in a tender texture. If youre lucky enough to get your hands on a fresh halibut fillet, youll want to do everything you can to bring out the fishs natural flavor. If youre unsure where to start, this halibut cooking guide is a great reference point.

    Different Methods For Cooking Halibut

    Grilling

As noted above, halibuts low oil content means the fish will easily stick to the grill. As a result, be sure to start with a spotless grill plate, and ensure you oil the grate before beginning to cook. Here is a brief, step-by-step guide to preparing the fish on a grill.

  • Apply a generous amount of olive oil, butter, or marinade to the halibut steak or fillet.
  • Place the steak or fillet directly on the grill. If you are uncomfortable putting the fish directly onto the grill, consider investing in a wire fish basket, especially if you cook fish often.
  • With halibut, use the 10 minutes per inch rule. This means a 1-inch-thick piece of halibut should take about 10 minutes to grill on medium high heat.
  • Turn the fish only once while grilling.
  • Remove from heat and serve.

    Baking

Baking halibut is among the easiest methods of cooking this fish. As with grilling, be sure to apply a generous amount of oil to the fish to retain moisture. Heres how to do the rest.

  • Oil or butter an oven-safe casserole fish.
  • Season your fish and apply more olive oil to the top side.
  • Bake the fish for around 15 minutes in a preheated, 400-degree oven.
  • About halfway through, baste the fish with butter or olive oil.
  • Remove from oven and enjoy.
  • Pan Searing

This is an excellent way to prepare halibut, as it adds a wonderful crust to the outside of the fish. You can cook the halibut completely in a pan, or you can partially cook it and finish it off in the oven for a crispier result.

Avoid Sticking By Using The Right Oil

As we said earlier, halibut is susceptible to sticking to grill grates because of its low-fat content. A generous coat of just the right oil on your grill grates can make all the difference.

The trick is to select an oil that can withstand the high temperatures on the grill. Cooking for Engineers has put together a chart that identifies various oils and their smoke points. The smoke point is the temperature at which the fat in oil begins to break down. It will usually emit a harsh smell and may affect the overall flavor of the food.

Brush your grill grates clean and generously coat with an oil that has a high smoke point. Cooking for Engineers recommends using an Extra Light Olive Oil that is readily available on any grocers shelf and has a relatively high smoke point of 468°F.

Armed with these three thermal secrets, your chances of grilling the perfect piece of halibut is all but guaranteed.

Cook your halibut for 5-7 minutes on one side then flip. For the second side, keep a meat thermometer handy and continue to grill your halibut until the internal temperature of the fish reaches 145 degrees F. • Bake. Heat oven to 450°F.
  • Sauté or pan fry. This technique results in food thats crisply tender.
  • Pan broil. Thicker cuts, at least 1-inch thick, are best so fish doesnt become too dry during broiling.
  • Microwave. Almost any boneless fish fillet/steak is suitable for microwaving.
  • Grill.
  • Monitor The Internal Temperature Of Your Halibut While It Cooks

Halibut is so easy to overcook that we recommend monitoring the fillet with a Thermapen® Mk4 while it cooks. A few seconds too long and an otherwise perfect main course can be rendered unpalatable.

An instant-read thermometer, like the Thermapen;Mk4, is ideal for checking your halibuts internal temperature as it sits on the grill. The Thermapens thin-tip probe is perfect for navigating the delicate flaky tissue characteristic of halibut.

As a general rule, fish takes a total of 10 minutes to cook per inch of thickness. This is just a guideline but can help you know what to expect. give half that time to each side of the filet, and monitor the temperature especially on the second side.

Preparing To Cook Halibut On The Grill

One of the big secrets to grilling halibut is a hot fire, and well-oiled grill grates .

  • Preheat the grill for direct grilling with the temperature of the grill over direct heat at 500 550 degrees Fahrenheit.
  • Be sure the grill grates are CLEAN and OILED. After any cook its good practice to clean off the grill grates and remove creosote or old fat and residue, but for fish, its doubly important. Without a clean and well-oiled grill, you can easily cause the fish to stick to the grill and then it falls apart.
  • Cut the filets into your desired size. If you try to grill the entire filet at once and then slice into individual steaks, it may fall apart. So trim the filet into individual cuts BEFORE you season and grill.
  • Season the halibut. This means a generous amount of extra virgin olive oil all over the fish and then season with the SPG rub .
  • Make the salsa. The fish will cook quickly, so having the salsa done in advance is so much easier to get the salsa plated with the hot fish.
  • Thats it. The grill is hot and oiled, the fish is seasoned, salsa is made, and its time to grill.

Equipment Recommendation: If you dont have a metal fish spatula or large wide spatula, this is a great time to consider investing in one. It makes flipping large cuts of fish easy and keeps them intact.

The Ingredients Needed For This Recipe

Here are the ingredients youll need to make this tasty dish :

Avocado oil: It has a neutral flavor and a high smoke point, making it appropriate for high-heat grilling.

Soy sauce: Or you could use a gluten-free alternative. You might need to add a bit more salt if you do.

Halibut steaks: As mentioned above, cod should also work in this recipe, as long as the fillets are fairly thick.

Salt and pepper: I use kosher salt in most of my recipes. If using fine salt, you might want to use less salt.

Rice vinegar: If you don’t have any on hand, white wine vinegar should also work.

Fresh ginger: You can chop it yourself, or use the stuff that comes in a jar. I’m a lazy cook, so you know what I do…

Fresh jalapeño pepper: When slicing the jalapeno, either use gloves or wash your hands thoroughly after handling it. It’s quite potent!

Fresh cilantro: You can use parsley if you dislike cilantro.

    Making The Mango Salsa

With a sharp boning knife, cut into the mango until the knife reaches the pit. Slowly cut around the pit in a straight line so you have one continuous cut around the pit . Then twist to remove the two halves. Use a spoon to remove the mango and then dice into small bites.

If the mango is not ripe it wont twist. So its best to make the same cut, but then remove the skin. From there dice it up. Yes, it will be a pain if its not ripe.

From there dice up the remaining ingredients and then combine them in a bowl. Add salt as desired, mix it up, and its ready to go. You can make this the day before for easier prep.

    Tips For Grilling Fish

    Wegmans Grilled Foil Packet Halibut

I try to grill some type of seafood once a week. Grilling seafood is easier than you think. Once you get a taste of it, youll be hooked! I always pass by the seafood counter at my local market to see what the catch of the day is.

Salmon is usually my go-to. It is readily available year round in most markets and can be purchased whole, cross cut steaks with the bone-in;or boneless fillets. Salmon can be seasoned with a wide array of spices or rubs. Thats what I love most about it. One day Ill marinate steaks in a teriyaki recipe, and the next time, I will do a simple salt and pepper with lemon butter sauce.

Fresh halibut is another of my favorites. When in season, Im grilling it often. I like to season my halibut with olive oil, salt, pepper, garlic, and oregano. Once taken off the grill Ill squeeze fresh lemon over it.

You can even grill whole fish!! My local fishmonger from time to time gets whole fresh Mediterranean Sea bass. Each fish weighs about 1 to 1¼ pounds.

There are so many choices in grilling seafood. Some of my other favorites include: Sea Scallops, Shrimp Skewers, and my new favorite seared Tuna!

;; Here are some of my tips for grilling seafood:

    1. Flipping fish is easier when you have a spatula specifically designed for the task!;

    2. Be sure to preheat your grill on high for 10-15 minutes and brush the cooking grates clean.

3.;Keep the skin on; it will help prevent your fish from falling apart.

Using tongs, rub the clean grill rack with a paper towel dipped in canola oil. Repeat 5 or 6 times, once every 15 seconds. As the layers of oil heat, they form plastic-like polymers that help minimize contact between the fish and metal. Rubbing a thin layer of oil on the fish will also help minimize contact.
