How To Prep Shrimp For The Grill

Once youve got thawed shrimp you need to remove the shell tail and all and skewer it. There are couple of methods for peeling and deveining, but I find a pair of sharp kitchen shears the best tool for the job. If you run the blade through the top of the shell you can open up the shell and remove most of the vein at once.

Use Sugar When Grilling Shrimp

Grilled Shrimp

If you want that grilled, charred flavor on your shrimp, its going to need a little help. With a final temperature of only 120°F , you dont have a lot of time on the grill to char things up before you hit your pull temp . A cheat to get around the slowness of the Maillard reaction is to introduce a little bit of sugar to the equation. No, were not sweetening the shrimp, just giving them a little help with browning/ caramelization. Tossing your shrimp with a little bit of sugar will help them to brown without making a noticeable flavor difference.

The Best Shrimp For Grilling

Large shrimp are best for grilling, as their size aids in preparing them for the grill and from falling through the grates or overcooking. Large can be anywhere from U/10 but I tend to find 20/25 shrimp per pound to be the most readily available at most grocery stores.

Buy shell-on, tail-on shrimp and peel them yourself theyre usually cheaper and taste better. I always keep frozen shrimp on hand for quick meals, but if you can get fresh, local shrimp, seize the day and grill them.

How Long Do You Grill Shrimp On Skewers

Shrimp cook very quickly, so its imperative to watch your shrimp to make sure they dont overcook. Shrimp typically take about 2-3 minutes per side on the grill. Youll be able to tell when the shrimp are done because theyll turn pink and opaque.

You can use an outdoor grill, grill pan, or broiler to make these shrimp skewers. I typically use my outdoor grill, but when the weather isnt nice or I dont feel like firing up the grill, I cook the shrimp on the stove top in my favorite grill pan.

I use the largest shrimp I can find for this recipe. Shrimp are labeled based on their size count, or the number of shrimp you get per pound. These shrimp are the jumbo size shrimp, which are 16-20 per pound. You can go smaller if need be and the recipe will still be delicious.

Whenever I post shrimp recipes, I always get asked if the shrimp tails should be left on or removed. I typically keep the tails on when Im looking for a nicer presentation. Its really a matter of personal preference whether you leave the tails on or remove them before grilling.

I typically serve my grilled shrimp skewers over rice with a colorful veggie or salad on the side for a complete meal that my whole family devours!

Recipe Notes And Tips

  • Be careful not to overcook the shrimp: Depending on the shrimps size, the cooking time of the shrimp kabobs will vary. For these medium shrimp, 2-3 minutes per side is more than enough. Theyre ready once they are pink and opaque .
  • You can alternatively add 1/2 of the lemon and garlic sauce ingredients and the shrimp skewers to a large airtight bag and shake to thoroughly coat. Allow them to sit in the marinade while the grill preheats. Then brush the leftover marinade when flipping the skewers over. You can also marinate the shrimp for 30-60 minutes, but I find it unnecessary when brushing them with the flavor twice while grilling.
  • Deveining shrimp: If you havent bought the shrimp de-veined, you may want to do this before cooking them. This vein is the shrimps intestinal tract and, when dark in color, is full of grit . While its generally thought of as safe to eat when fully cooked Id prefer not to . To remove the vein, use a sharp knife to make a shallow cut down the center of the prawn where the vein is and use the tip of the knife to gently pull it up and remove it from the shrimp.

How To Thaw Frozen Shrimp

How to thaw frozen shrimp? There are a few different options depending on when you start! Heres what to do:

  • Night before: If you think ahead, simply place the frozen shrimp in the refrigerator overnight.
  • Day of: Place the frozen shrimp into a large bowl with very cold water. Stir the bowl every 5 minutes to break up clumps of shrimp that freeze together. The shrimp should be defrosted in about 15 to 20 minutes, depending on the size of the shrimp.

  • Prepare the skewers: First, pre-soak your wooden skewers in cold water for 30 minutes. Otherwise, you can use reusable metal skewers . I prefer flat metal skewers, which keep the shrimp from rotating, too.

If you dont plan on using skewers, you can cook them in a well-oiled grilling basket or use a silicone grill mat.

  • Prepare the grill: Preheat your grill to medium heat and lightly oil the surface.
  • Thread the shrimp: Thread around 5-7 shrimp per skewer. I like to do this right through the center twice this keeps them securely in place.
  • How to grill shrimp skewers: Place the skewers on your BBQ and quickly brush them with half the lemon garlic glaze . Cover and grill for 2-3 minutes. Then flip the skewers, brush with the remaining glaze, cover, and grill for 2 more minutes until they are no longer transparent. Then theyre ready to enjoy!

If you want the charred skewer marks, then you can press on them with a spatula. Do this at the end of the cooking process but be careful not to overcook the shrimp. As soon as the grey color is gone, the shrimp are ready!

This shrimp marinade starts with olive oil and lemon juice. I add an additional layer of flavor with plenty of dried herbs , along with fresh minced garlic. I like simplicity here, but if you want to jazz up your marinade even more, you can add lemon zest, a splash of white white, soy sauce, or a squeeze of honey.

Okay, now to that one ingredient that makes these the best damn grilled shrimp on the planet. Its sesame oil.

Sesame oil is oil extracted from sesame seeds. Its usually thicker than traditional vegetable oil and has a rich, amber color, but the best part about sesame oil is that its a concentrated burst of umami.

When you toss the shrimp in sesame oil, the sweetness of the shrimp is somehow amplified. I add a little bit of garlic and ginger to this marinade, too, for extra aromatics.

This grilled shrimp recipe is for two pounds of shrimp. Youre going to want to double it or triple it, if youre feeding a crowd because these bad boys will go fast.

Cleaning And Seasoning The Shrimp

  • 1Buy large frozen or fresh shrimp. Jumbo and larger variations of shrimp are the best for grilling because they wont fall through the grates of the grill and are easier to handle than smaller shrimp. Smaller shrimp are also more likely to overcook on the grill, which could lead to a rubbery or tough texture.XResearch source
  • Buy U/10 or U/20 shrimp. This means that there is either 10 or 20 shrimp per pound.
  • Cook fresh shrimp the same day that you purchase them or freeze them If you plan on making them later.
  • When you bring fresh shrimp home, keep them on a bed of ice so that they dont go bad.
  • 2Thaw the shrimp if they are frozen. You can leave the frozen shrimp in the refrigerator overnight, or rinse the shrimp under cold water for an hour. Once the shrimp are thawed, rinse them one last time under cold water and drain them in a colander. Then, use paper towels to pat them dry.XResearch source
  • When the shrimp are thawed, they should appear slightly translucent.XResearch source
  • 3Peel the shrimp if you have to devein them. Youll know you have to devein the shrimp if there is a black vein running down the back of the shrimp. Start at the top of the shrimp and cut through shrimps shell with a pair of scissors. You can cut all the way down the tail, or stop before the tail to keep it on. Peel away the excess shell and throw it away.XResearch source
  • If you keep the tail on, it can serve as your handle for dipping and eating the grilled seafood.

Buying The Best Shrimp For Grilling

    Grilled Shrimp With Honey

Lets first go through the basics. The most important thing is you need to make sure you are buying from a reputable source. Unknown to most, shrimp can actually be used to measure the level of water pollution since pollutants can accumulate easily in the animal. So for health reasons, the source of the shrimp is the first vital consideration.

When buying, it is definitely preferable to look for fresh, unfrozen, raw, and unpeeled shrimp. Then again, theres also the option of purchasing peeled and deveined shrimp. This latter option may be best if you are pressed for time. There may not be much significant health benefits from deveining shrimp but it does help with aesthetics – especially in larger varieties of shrimp where the vein tends to be more prominent.

This leads us to our next point: the size of the shrimp. Arguably, larger shrimp varieties do better on the grill. They are less likely to get overcooked and are more aesthetically pleasing. Whichever size you choose though it is best practice to skewer shrimp when cooking them on the grill no matter how big they are. Its not just to keep the shrimp from falling through the grill, its to make it easier for you to turn them over on the grill when needed. This is important because shrimp can easily get overcooked. Besides, who wants to struggle using the tongs and possibly damaging the soft shrimp meat?

What Kind Of Shrimp Do I Need For Grilled Shrimp

When youre shopping for fresh shrimp at the grocery store, look for peeled and deveined shrimp. The deveining and peeling process is tedious, so this will save you time and frustration.

Can you use frozen shrimp? YES! But make sure its completely thawed before you make this recipe.

Can you use cooked shrimp? You can use precooked shrimp, but we dont recommend it. If you do, just give them a quick sear on the grill to heat them up.

Can you cook marinated shrimp on the stovetop instead? Yes! Feel free to pan-fry your shrimp over medium/high heat for 2-3 minutes per side.

    Tips For Grilling Shrimp

  • Dont marinate the shrimp for longer than 2 hours. The acid from the lemon juice can actually cook the shrimp without any heat needed, which is what happens with a long marinade time.
  • Broil the shrimp in the oven if you dont have a grill. Once the broiler is preheated, place the shrimp skewers on a sheet pan coated with cooking spray or lined with parchment paper. Broil for 2-3 minutes, then flip and broil for another 2-3 minutes watching it closely so it doesnt over-cook.
  • Peel and devein the shrimp before you marinade them. Otherwise all the marinade will be on the outside of the shrimp only. I prefer to leave the tails on, but you can remove them if you like.
  • Dont overcook the shrimp. Shrimp cook super fast, and only need 2 to 3 minutes each side. If you overcook them, they lose their juiciness and become rubbery. Th shrimp skewers are cooked when they turn an opaque pink, they are overcooked if they start to curl up.
