My husband has made these simple grilled pork chops so many times hes figured out the secrets. Whether bone-in or boneless, these pork chops turn out tender, juicy, a little bit smokey, and far from any mode of foot fashion.

Even better, these grilled pork chops dont need a marinade or a brine, so they go from package to grill to dinner in 30 minutes.

How To Make Grilled Maple Pork Chops:

  • Preheat your grill for 350 degrees F. Have a reliable instant read thermometer nearby, you are going to need it!
  • Warm maple syrup in the microwave for 20-30 seconds. Combine glaze ingredients, cover, and set aside.
  • Blot the pork chops dry with paper towels and brush with oil.
  • Combine seasoning and apply evenly to both sides of pork chops.
  • Place chops onto the grill and cook for 20-22 minutes. Watch for flare-ups, adjust heat, or move chops to a cooler part of the grill and finish cooking indirectly.
  • After the first 10 minutes, start applying glaze every 3-4 minutes until chops are done.
  • Once chops have reached an internal temperature of 150 degrees F., remove from grill and loosely tent with aluminum foil. Let chops rest for 5-7 minutes.
  • Serve these grilled maple pork chops garnished with your herb of choice. Lightly drizzle with warmed maple syrup and serve.

What Temperature Pork Should Be Cooked To Eat Safely

For years, cooks have been told to cook pork until well done, resulting in a dried out piece of meat nobody wants to eat. No more!

According to recent changes in the USDA guidelines, it is safe to eat pork cooked medium rare. Cook the pork chops to an internal temperature of 140°F and still barely pink inside, then rest for about 5 minutes for the residual heat will continue to cook and raise the internal temperature.

For thin cut, bone-in pork chops about 1/4 inch thick, cook over direct medium-high to high heat for a total of 3-5 minutes, with the lid closed, turning once.

For 1-inch thick boneless pork chops, cook for 8-12 minutes over direct heat turning every 3-4 minutes or until well grill marked with the lid closed. Add another 5 minutes resting time for the juices to set in the meat.

If cooked properly, the pork chops will release a bit of juice as they rest, a sign theyre still nice and juicy on the inside.

For fabulous results, youll use both indirect and direct heat for grilling bone-in pork chops on your gas grill. With my Twin Eagles 36 inch grill, the zone dividers make it very easy to regulate different temperatures on the grill for instances like these.

  • Youll preheat one side of the grill to medium-high, with the lid closed, so the temperature of the grill is holding steady at 375-400 degrees F.
  • Youll do the 1st sear of the pork chops, for 2 minutes on each side, over medium high heat. Then youll move them to one side of the grill, where the burner is off. Youll close the lid, and cook for 15-20 minutes with indirect heat, until the temperature of the pork chops is around 120 degrees F.
  • Finish the pork chops with a final sear on both sides over the medium high heat flame, until the temperature of the pork chops is 145 degrees F.     Whats The Deal With Brining Pork Chops

    Its a good rule of thumb to always brine pork chops before grilling. Because pork chops are fairly lean, submerging them in a brine does two things. First, it keeps the meat moist by introducing extra moisture, which provides a little insurance in case the meat gets a little overcooked. Second, it evenly seasons the meat beyond just the surface.

    The base of this easy brine is just cold water whisked with salt. I like to add some sugar to help with browning on the grill, and you can also throw in aromatics like citrus peel, peppercorns, or bay leaves . Diamond Crystal kosher salt is what I use in my brine, but if you want to use another kind of salt, I recommend using an equal weight, not volume, of salt since the size of the salt granules vary greatly across brands and weight is the most accurate measurement.

    Brining doesnt have to be elaborate or take a long time. Since these are chops and not a big bird like a turkey, even brining for 30 minutes does wonders, and thats about how long itll take to heat up the grill. The chops can sit in the brine for up to two hours, but dont go beyond that or the texture of the meat can get spongy. You can even brine individually frozen pork chops just put them in the brine for the full two hours. Theyll be defrosted and ready to grill at that point.

    Cook Pork Chops To 145f

    So given this reality, there are some strategies to still produce perfectly grilled pork chops.

    The first is the final cooking temperature. In the recent past, pork was cooked to 165°F or higher, which resulted with a plate of cardboard. The newest recommendation is for a final cooked temperature of 145°F. The meat must be held at this temperature for 3 minutes.

    You only need a few pantry staples and about 5 minutes to prepare these pork chops for the grill. Let’s get started!

    Ingredients:

    • Seasoning blend: garlic powder, kosher salt, dried parsley, dried minced onion and dried basil

    Step 1: Prepare the Seasoning

    We’re using our favorite all-purpose or “house seasoning” on these chops, which is a simple blend of equal parts garlic powder, kosher salt, dried parsley, dried minced onion, and dried basil. We use this seasoning on everything from pork to salmon, chicken to pasta, salads and roasted veggies. It’s truly an all-purpose mixture that makes almost anything taste better, so feel free to mix it up in bulk and keep it in your pantry for any variety of other uses!

    Pat the pork dry, rub with olive oil, and then sprinkle with seasoning. I typically use about 1 teaspoon of olive oil per chop and about ¼ teaspoon of seasoning on each side. You can obviously adjust these amounts to suit your personal taste, though.

    Unfortunately, getting perfectly grilled pork chops is not easy. Most pork chops on the market are very lean, which is the result of the other white meat campaign. While low fat equals lower calorie, low fat also can translate into dry and lacking flavor.

    Think of prime steaks for example. What you are paying for is the intramuscular flecks of fat called marbling. Unless you are able to source meat from a heritage hog that was raised with flavor in mind, there will be virtually no marbling in a pork chop.
