La Margarita Co. restaurant was started in 1984 by Pedro Rosales after many years of hard work, school, and planning. His plan was to bring something different to Salem in the form of Mexican food. Pedro decided to use a mesquite wood grill to cook the different meats he used. At the time, there were only 2 or 3 Mexican restaurants in all of Salem. It was slow going at first, as little by little people began to hear about this new restaurant. Consequently, La Margarita began to get busy and the clientele began to grow.

Four of us went here for my birthday last week. The only one who was pleased with the food was the person who was afraid it might be too hot for her taste. The rest of us found it VERY bland and lacking in flavor….We had chili relenos and enchiladas. I’m told that even the salad was ho-hum. As for the margaritas, the blended ones, serves in a highball glass, were difficult to drink but at least they didn’t skimp on the alcohol. But overall we were very disappointed, considering the good reviews we had read. New cook? Bad day??More

I hadn’t visited here for years, so I was eager to see if it was as good as I remembered. I was hoping for jicama instead of the commonly served chips, but no jicama. The chips and salsa were good though. I ordered a chili…relleno, and it was excellent! The black beans were wonderfully seasoned. The only real disappointment was the margarita, made with top shelf tequila, but the mixer they used gave it an unappealing taste. Too bad.I will definitely return for another relleno!More
