Discovered by the Spanish in the 1500s, the island was claimed in 1663 for the British Crown Capt. William Hilton, hence its name. During the Civil War 50,000 Union troops garrisoned on the island to protect trade routes and plan attacks against the Confederacy. More recently, in the 1940’s Hilton Head was rediscovered as a hunting ground for wealthy sportsmen who later saw its timber potential and as the timber industry grew, electricity came to the island for the first time in 1950. Six years later, the bridge connecting the mainland to the island was completed and Hilton Head took its final step into the modern age. Remarkably, golf wasn’t introduced to this thickly wooded island till 1956, when the first course, the Ocean Course Sea Pines Resort, opened.
Since then, the number of resorts and golf courses has grown in a spectacular manner, but the spirit of founder Fraser has survived and its vision of planning a very progressive legal template by which the island could be developed without destroying its rich natural heritage has previled.

Meet Chef Brandon Carter
As executive chef and partner of FARM, Brandon Carter works tirelessly to connect the dining experience with the farmers culture.
Always cognizant of seasonality and availability of ingredients, Carter crafts ever-evolving menus that speak to the bounty of the region, and pay homage to the many farmers and artisans who inspire him.
Born in Ohio and raised in Georgia, Carter was inspired by the allure of the kitchen during a family trip to Italy at only thirteen years old. Compelled by the industrys high energy, Carter took his talents to the Culinary Institute of America where he graduated in 1999.
Just prior to FARM, Carter was executive chef at the Inn at Palmetto Bluff. He first joined the Inn at Palmetto Bluff as Chef de Cuisine in January 2011, assisting with the management of the River House Restaurant, including menu planning and all aspects of production and service. One year later, Brandon took the helm as executive chef where he oversaw four restaurants, twice as many menus, and was the grand poobah of the nationally lauded Music to Your Mouth food and wine event, which landed Palmetto Bluff on;Bon Appetits Top Ten Foodie Destination List in 2013.
