Making a glaze requires constant attention since sugars burn quickly. A simple glaze recipe includes:

What Is The Internal Temperature For Grilling Pork Chops
The ideal internal temperature for pork chops is between 145° F for fresh pork cuts and 160° F for ground chops. Our go-to thermometer to achieve precise temperature readings is any of the ThermoPro meat thermometers.
Depending on your type of grill, you can choose between a wireless unit, instant-read, thermometer with a probe, and a wireless remote controlled digital thermometer. Brined Pork Chops With Grilled Stone Fruit
For the brine:
- 1/4 cup firmly packed brown sugar
- 1 tsp. dried thyme
- 1 tsp. juniper berries
- 1/8 tsp. red pepper flakes
- 2 Tbs. kosher salt
- 1 Tbs. freshly ground black pepper
- 6 bone-in pork chops, each at least 1 inch thick
- 6 ripe but slightly firm plums, peaches or nectarines, halved and pitted
- Canola oil for brushing
To make the brine, in a large bowl, combine the water, vinegar, brown sugar, thyme, juniper berries, red pepper flakes, salt and black pepper. Stir until the sugar and salt dissolve.
Place the pork chops in a large sealable plastic bag and pour in the brine. Seal the bag closed, squish the brine around the chops and refrigerate overnight.
At least 30 minutes before you plan to begin grilling, remove the chops from the refrigerator. Discard the brine, rinse the chops briefly in cold water and pat dry with paper towels.
Prepare a charcoal or gas grill for indirect grilling over medium heat the temperature inside the grill should be 350° to 375°F. If using charcoal, bank the lit coals on either side of the grill bed, leaving a strip in the center without heat, and place a drip pan in the center. If using gas, preheat the burners, then turn off 1 or more of the burners to create a cooler zone. Brush and oil the grill grate.

How Long To Grill Bone
Grill time for bone-in pork chops will vary depending on thickness, so its better to asses by temperature than time. When testing this recipe, I used thick cut pork chops that were about 1 1/2 inches thick, and it took about 15 minutes over the indirect heat for them to reach 120 degrees F, which I then finished with the sear over medium high heat, another 5 minutes total.
Seasoning The Perfect Pork Chop

Preheat the grill. If you are using a charcoal grill, light the charcoal. If you are using gas, light up at least two burners on high and allow the grill to preheat for 10 minutes. If possible, keep one portion of the grill cool so you can move the pork chops if there is a flare-up during cooking.
The brine has enhanced the pork chops and lightly flavored them. The spice rub will add additional flavors. It’s best to use a fine grind of seasoning large chunks of herbs will fall off during grilling. There is no need to include salt in the rub, but black pepper is highly recommended.

Combine all ingredients, mix completely, and apply the rub evenly over both sides of the pork chops.
