Make The Pork Chop Glaze

How to Grill Pork Chops the Right Way | Grilling Fridays | Serious Eats

Glazing a pork chop adds a sweet flavor to the surface, creates a light crust, and helps to keep the chop from drying out. Ideally, the glaze should be simple with a sweet element to enhance the final flavors.

Making a glaze requires constant attention since sugars burn quickly. A simple glaze recipe includes:

  • 1 cup apple jelly
  • 1/4 cup dry white wine
  • 2 tablespoons Dijon mustard
  • Combine all ingredients in a saucepan and heat while stirring. The glaze should be completely blended before using on the pork chops.

What Is The Internal Temperature For Grilling Pork Chops

The ideal internal temperature for pork chops is between 145° F for fresh pork cuts and 160° F for ground chops. Our go-to thermometer to achieve precise temperature readings is any of the ThermoPro meat thermometers.

Depending on your type of grill, you can choose between a wireless unit, instant-read, thermometer with a probe, and a wireless remote controlled digital thermometer. All these units have a wide temperature reading range, are easy to use, with an accuracy of +/- 1.5F. Further, their extended warranties of up to 3 years make them excellent for a seasoned grill master.

Then, to get the readings using your choice ThermoPro meat thermometer, check for the pre-set temperature settings recommended for your type of meat. Or, adjust the settings up or down to your preferred range. Place the thermometer at the thickest part of the flesh.

    • 1 Tbs. freshly ground black pepper
    • 6 bone-in pork chops, each at least 1 inch thick
    • 6 ripe but slightly firm plums, peaches or nectarines, halved and pitted

To make the brine, in a large bowl, combine the water, vinegar, brown sugar, thyme, juniper berries, red pepper flakes, salt and black pepper. Stir until the sugar and salt dissolve.

Place the pork chops in a large sealable plastic bag and pour in the brine. Seal the bag closed, squish the brine around the chops and refrigerate overnight.

At least 30 minutes before you plan to begin grilling, remove the chops from the refrigerator. Discard the brine, rinse the chops briefly in cold water and pat dry with paper towels.

If using gas, preheat the burners, then turn off 1 or more of the burners to create a cooler zone. Brush and oil the grill grate.

    How Long To Grill Bone

Grill time for bone-in pork chops will vary depending on thickness, so its better to asses by temperature than time. When testing this recipe, I used thick cut pork chops that were about 1 1/2 inches thick, and it took about 15 minutes over the indirect heat for them to reach 120 degrees F, which I then finished with the sear over medium high heat, another 5 minutes total.

    Seasoning The Perfect Pork Chop

    Juicy Grilled Pork Chops

Preheat the grill. If you are using a charcoal grill, light the charcoal. If you are using gas, light up at least two burners on high and allow the grill to preheat for 10 minutes. If possible, keep one portion of the grill cool so you can move the pork chops if there is a flare-up during cooking.

The brine has enhanced the pork chops and lightly flavored them. The spice rub will add additional flavors. It’s best to use a fine grind of seasoning large chunks of herbs will fall off during grilling. There is no need to include salt in the rub, but black pepper is highly recommended.

    Rub suggestion:

  • 1 teaspoon dried mustard
  • 1 teaspoon mild chili powder
  • Combine all ingredients, mix completely, and apply the rub evenly over both sides of the pork chops.

How Do You Cook Pork On A Charcoal Grill

Bake for 20 to 30 minutes at indirect high heat, with the lid closed, on the side of the grilling grate that does not have any charcoals underneath. This will crackle the skin and give it a charred appearance. During this period, refrain from opening the lid. Take a brief glance at the crackling after 20 minutes by opening and closing the lid.

What Cut Of Pork Chops Are Best For Grilling

When buying pork chops, there are a lot of options since chops can be cut from different areas of the loin. The section at the front of the loin near the shoulder, called the blade end, is the fattiest cut. Rib chops are leaner and have a large, smooth section of meat. Bone-in center-cut chops have both the loin and tenderloin, and the sirloin is from the back end and has lots of muscles.

For grilling, I like rib or center-cut chops since theyre tender and dont have too many chewy muscles. While I personally like bone-in since I like nibbling on the meat attached to the bones, boneless will work too. I always buy pork chops that are at least 1-inch thick, as thinner pork chops tend to cook too quickly before they have a chance to develop a nice crust on the outside.

    Flipping The Pork Chops

After another minute or two, open the lid and check the doneness. The chops should be well browned, with good grill marks on the cooked side. The pork chops should appear gray along the sides of the meat and still raw on the top. At this point, flip them over and repeat the process from the last step, rotating 45 degrees after a minute or two. Once the entire surface is cooked, it’s time to apply the glaze. Glaze them quickly, turning the pork chops as needed so that the glaze can cook on the meat without it burning.

What Are Grill Temperature Settings Suitable For Pork Chops

Getting your temperature right will make a difference between eating juicy grilled pork chops and struggling with some dried out, tough chops. Then, do you love your chops boneless or bone-in? You can set a temperature that will keep the meat tender, preserve its juices, and leave it with that smoky flavor you want. And, since these cuts are lean, no need for marinating them before grilling. Your meal can be ready in half an hour.

Note that each grill will cook different pork chops at different temperatures and cooking time. Hence, for successful grilling, ensure you follow the recommended temperature settings by using a reliable thermometer and a timer. Again, as you gain more grilling experience, you can then determine the best temperature for that individual flavor you want.

Then, most grills operate at a temperature setting of between 350° to 450°F for pork chops. This temperature varies according to the thickness and cooking time for the chops. For example, thin chops will overcook and turn out dry. But, thick cuts are excellent in retaining most of their juices when grilling. Boneless cuts of ¾ inches of thickness need at least 8 minutes to cook until tender. In contrast, a bone-in chop of ½ inches thickness will take up to 12 minutes to be ready.

How Long Does It Take To Grill Pork Chops

    Brined Pork Chops

One of the important things to keep in mind when making pork chops is timing. Are you planning to make a couple of side dishes to go with the meat? Perhaps some creamy mashed potatoes or a fresh salad? Then it is key to know how long it will all take to cook so you can have an idea of when to start cooking your side dishes so that it is all ready to eat at the same time and hot to serve.

Over a medium heat, pork chops that are about an inch thick will take about 8 to 10 minutes to cook. If you are cooking thick pork chops, you will need to allow about 15 minutes for them to cook through. Pork chops with a bone in could take as long as 18 to 20 minutes to cook.
