Pros: Like all of Smithey’s elegant and attractive cookware, each of these pans are handmade and completely unique.

Cons: We found that it needs some seasoning before it becomes completely nonstick.

Smithey’s hand-forged carbon steel skillets are stunning pieces of cookware that are just waiting to become family heirlooms. Each piece is handmade and unique, which makes this carbon steel pan an impressive gift for your favorite home chef. It boasts a large cooking surface with gently sloped sides and a long handle. It warmed up quickly and transferred heat evenly and consistently throughout the entire pan. Though the pan comes pre-seasoned, it could benefit from additional seasoningâwhile it passed all three of our tests, we did notice that some egg residue stuck to the pan. It was very easy to clean with hot water.

Common Drawbacks Of Carbon Steel

The biggest and most obvious drawback is that even the best carbon steel requires maintenance in order to function properly.

An initial seasoning process is required and there are special steps that must be taken for cleaning and storage. When used and cared for improperly youll have a pan that foods always stick to, and is likely to rust.

Some people also find the appearance of this type of cookware to be less than attractive. Most options out there have a similar rudimentary design, and they cant be scrubbed and polished to a sparkly sheen.

I on the other hand love the way that the pans develop and change as they are used more and more. As your carbon steel pan develops its nonstick patina, it becomes a badge of honor that you can show off to those in the unofficial carbon steel cooking club.

You’ll notice that you need to re-season your pan if there are any signs of rust, or if your pan feels like it’s crusted with old food buildup. Typically your pan will keep building up seasoning with use, but if you ever want to “start over”, scrub the surface with an abrasive sponge , removing any roughness, then start the seasoning process over.

Made In Cookware 12.5" Blue Carbon Steel Frying Pan

In most cases, carbon steel pans are meant to be utilitarian kitchen workhorses. Rarely are they designed to be ogled by cookware nerds like myself. The Smithey Farmhouse Skillet is one noteworthy exception.

This carbon steel skillet is a work of art as much as it is a functional fry pan. But, it also costs over $200 more than most of the options on our list.

Each skillet is hand forged and hammered in South Carolina, making each piece unique. The sides are more shallow than most and they very naturally curve up from the bottom of the pan.

The shape and design translate to a very large cooking area, but tossing ingredients can be a little cumbersome.

The handle is thick and sturdy, and also features a unique hammered look. There is a helper handle on the opposite side which is great for a pan of this size.

Most brands only offer warranties against manufacturers defects, but Smithey goes a step further and will repair or replace their cookware even if it fails you after honest and normal use.

Best Overall: Merten And Storck 12

Also available at Home Depot.

Pros: It’s the cheapest and most nonstick on the list.

Cons: This piece can’t handle super-high heat like some other carbon steel pans, so make sure not to exceed 600 degrees.

This pan thoroughly impressed us in every category. It’s lightweight, easy to maneuver, and completely nonstick. It seared chicken thighs to golden perfection, baked a moist, chewy skillet cookie, and scrambled eggs without leaving any residue behind. It came pre-seasoned, and we didn’t need to add any additional seasoning, oil, or butter while cooking. It washes easily with hot water, but we could’ve thoroughly cleaned it with a dry cloth since nothing stuck to the pan during our testing. The Merten & Storck pan is compatible with all stovetops and oven-safe up to 600 degrees Fahrenheit. Not only is this pan functional and versatile, but it’s also the most affordable on our list.

What Is Carbon Steel And How Is It Made

Carbon steel is primarily made from iron. Most carbon steel cookware is made from 99% iron and 1% carbon. Cast iron on the other hand usually has between 2-4% carbon.

The higher carbon content in cast iron makes it very brittle, and the metal must be melted and poured into molds to sets.

The lower carbon content of carbon steel makes it much more malleable. To make a pan, a piece of carbon steel is cut from a sheet and then pressed or hammered into the desired form.

Because of this, carbon steel cookware can be much thinner and smoother than cast iron.

Is Carbon Steel Durable

A good carbon steel pan will last for generations, especially when cared for properly.

One of the reasons cast iron pans are so thick is that it is a rather brittle material. Its not common, but cast iron pans can crack, but theyll never bend. Carbon steel on the other hand is more malleable.

Rather than cracking, carbon steel will bend. This is what allows manufacturers to stamp and mold pans using thinner gauged metal. This also means that it is more durable than cast iron.

While its rare that a carbon steel pan will ever crack, it can bend or become warped. All of our choices have solid track records for maintaining their shape, but there are occasions where owners did have warping issues.

Carbon Steel Vs Stainless Steel

Review of the MADE IN Blue Carbon Steel Skillet

Stainless steel was a novel discovery because the chromium content inside of it acts as a layer of protection against corrosion. Practically speaking, this means that stainless steel is easier to maintain. It doesnt require seasoning and wont rust.

Stainless steel is also considerably more expensive than carbon steel, and can be more challenging to cook with. Carbon steel is much more affordable, and can achieve a non-stick property with proper seasoning. This is a benefit you wont find with stainless steel.

How To Maintain And Clean Carbon Steel

The maintenance and cleaning of carbon steel are very important and also one of the reasons more people dont use this kind of pan.

If you have a cast-iron pan that you regularly use and take care of then a lot of this information will be familiar. If this is your first time, dont get discouraged, after a few uses youll develop a routine that becomes second nature.

Seasoning

Seasoning is the process of adding a protective layer to your pan to protect against rust and makes your cookware more nonstick. That layer is made by bonding oil to your cookware in a hardened layer.

As you continue to cook foods with oil and fat on a seasoned carbon steel pan, you can continue to add layers and durability to the protective layer.

There are a wide range of techniques to season carbon steel cookware, and Ive previously published a simple guide on how you can get started with seasoning in your kitchen. Its a simple fast method that works better than any other Ive tried. Its also a big time saver, and will give you tips on which oils to use for best results.

Cleaning

When it comes time to clean your carbon steel pan avoid using soap as that will break down your seasoning layer. Instead, use hot water and a stiff-bristled brush. I like to keep a bamboo wok brush in the kitchen for this and my other cast iron cookware.

Other Skillets We Tested

This direct-to-consumer brand began selling carbon-steel skillets in late 2020 after raising nearly $2 million through Kickstarter to fund the project. Its clear why this pan has developed such a cult following. The gently sloped sides come up just high enough to avoid too much splatter, but not high enough to trap any moisture. The pan is on the heavier side of the 10-inch skillets we tested, but its nicely balanced and easy to maneuver. The handle was not too large and felt good in the hand. After time on the stove, it was still cool enough to touch, but Misen also includes a grippy silicone cover just in case . Misens skillet is thicker than some of the other pans we testedsimilar to a pricier stainless-steel pan. This gave a nice, even golden brown color on chicken skin yet was still responsive to changes in heat. The only downside to the Misen skillet is that it does not come with any seasoning, so Misens recommended process, the pan developed a deep brown layer of seasoning that only continued to improve. After several uses, a fried egg easily skittered across the surface. Unfortunately, the Misen, which won in our original testing, looks to be out of stock at the moment.

A Worthwhile Splurge: Smithey Carbon

If youre looking for a skillet that is both high functioning and will look nice displayed on your stove top, then I suggest this gorgeous hand-forged pan from Smithey. In fact, were it not for the price this might have been chosen best overall. Made in limited quantities in Charleston, this skillet is inspired by the design of traditional fire tools and arrives already seasoned. While I did get good results right out of the box, the skillets nonstick surface definitely improved after a few uses. The round handle is easy to grip and isnt so long it feels unwieldy. I especially liked the low, sloped sides and the expansive cooking surface . The obvious downside here is the price tag, but these skillets are clearly made to endure generations of cooking. The unique design also makes them ideal to bringing right from the stovetop or oven to the dining table. If youre a seasoned cook, then this skillet is worth the splurgeits an instant family heirloom .

What To Know About Carbon Steel Pans

One of the key things to remember with carbon steel pans is that washing in a dishwasher is never a good idea. The combination of hot water, steam, and detergent that dishwashers use can wreak havoc on the oil coating of your pan and will most likely cause rust. In most cases, you dont really need to ever use soap at all. Some hot water and a good ball of steel wool are more than enough to scrape off any bits of food stuck to the surface. If you make a mistake and accidentally rust your pan, its not the end of the world. Simply scrub off the rust and re-season.

Another thing to remember about using a carbon steel pan is that acidic foods can be extremely caustic to the surface of the metal and should be avoided at all costs. A quick spritz of lemon likely wont kill your nonstick surface, but you should avoid simmering tomato sauce for hours.
