The basics of cleaning an infrared grill are the same as for any grill, but take extra caution in cleaning the heating element and infrared surface. At least twice a year, an infrared grill should be inspected for wear, paying close attention to any damage to the heating element, the infrared plate and the grate.

The Weber Genesis II E-310 gas grill is also an exceptional performer, and it offers several clever, life-improving design elements that we love. The grates are about 20 percent bigger, too, but overall the Genesis II takes up barely more area than the Spirit II, so theres no appreciable trade-off between the two if your patio space is tight. Essentially, the decision comes down to how youll use your grill: If you often cook for crowds, the Genesis II is worth the extra couple hundred dollars.
Performance-wise, we found the two Weber models nearly identical, with the Spirit just slightly edging the Genesis II on burger-searing performance. And that gap would probably close with a bit more time to learn the Genesis IIs finer points. In terms of materials, the two are almost twins, offering heavy cast-aluminum fireboxes and porcelain-coated cast-iron grates. The Genesis II, however, features a frame made of welded rails, while the Spirit II is made of folded metal . Theyre both sturdy enough, but the Genesis II is appreciably stiffer and more solid-feeling. And we like that it has casters: Its easier to swivel into a corner for storage than the casterless Spirit.
Moving the tank to the outside also frees up space below the grill, which Weber fills with a generous and sturdy storage shelf. Thats a nice feature you can keep trays, grill tools, or even a small cooler there.

How Do Infrared Grills Work
Infrared radiation is part of the electromagnetic spectrum that is invisible to the human eye. At very short wavelengths like with your infrared remote this energy can’t be seen or felt. But at longer wavelengths, infrared can be felt in the form of heat. When you walk barefoot on hot sand at the beach, the heat you’re feeling is the infrared radiation emitted by the sand .
When it comes to grilling, that’s all infrared radiation is: heat waves that are emitted by a hot object which has itself been heated by a propane or natural gas-powered heat element.
The hot object in an infrared grill is usually a piece of steel, ceramic or glass, with a gas element underneath it.
So the difference between infrared and conventional grilling is that conventional grilling is accomplished by heating air that then cooks the food whereas infrared grills don’t produce hot air, they simply produce heat . As a result, infrared grills are capable of emitting much higher amounts of heat directly onto the food, rather than using air as a medium.
This is how infrared grills can produce temperatures of up to 1,200 F. Compare this to the 550 F or so you probably get from your conventional grill or maybe 700 to 750 F when you max out one of those Kamado-style charcoal grills. Moreover, it only takes two to three minutes for infrared grills to start producing these temperatures, which saves a lot of time with preheating.

Cons: Infrared Grills Are Expensive
A portable infrared grill can be purchased for under $500, but a full-sized infrared grill one that’s comparable in size to a standard four burner gas grill can run upwards of $1,000 .
That’s a lot of money to spend on a tool that basically does one thing well, which is cook steaks. Anything else anything whether it’s chicken, vegetables, fish, seafood, hamburgers is going to need to be cooked at a lower temperature.
And yes, there are infrared grills with variable temperature systems that allow you to cook at temperatures as low as 200 F, which is what you’d need to barbecue a brisket or pork shoulder, for instance. There are also hybrid models with infrared burners on one side and conventional ones on the other. These grills allow your infrared grill to cook at the normal temperatures of a conventional gas or charcoal grill. But all that means is that you’re spending infrared grill money to do something you can do with a conventional gas or charcoal grill, which, depending on how you feel about your money, might not be the very best use of it.
Even when it comes to cooking steaks, which is the one thing an infrared grill indisputably excels at, it’s not exactly foolproof. Because the temperatures are so high higher than most people are accustomed to dealing with it’s easy to accidentally overcook or even burn your steaks by leaving them on there too long.
Why Does My Infrared Grill Smoke So Much
The heat is on too high a setting
Sometimes, if the heat is too high for the type of food that you are grilling, there might be excess smoke. The solution to this is to make sure the heat is on an appropriate level. Try turning the heat down a little, and see if that reduces the amount of smoke produced.

Difference Between A Sear Station And An Infrared Burner
A less expensive option is the Weber Genesis and Summit Series grills. These are all traditional burner units perfect if you mostly cook hotdogs and hamburgers.

How To Cook On An Infrared Grill

Apply a light coat of high heat cooking oil to the grates, such as canola or peanut oil before and after grilling to make cleaning easier. Char-Broil wood chips can be placed on or between the cooking grates for added smoke flavor. No need to pre-soak. Then preheat your grill on high, with the lid closed for 5 to 10 minutes. If youre used to open flame gas burners, reduce the heat settings you normally use, by 30 percent and the cooking time by about half. You can grill with the lid open or closed. But, closing the grill lid usually results in faster cooking times.

Try removing the burner and slightly shaking it upside down over a trash can. While the burner is removed from the grill, clean out the orifice and venturi tubes. If the burner ports on the ceramic burner are clogged the burner can pop and have a high flame pattern. Unclog any holes in the burner surface using a wooden toothpick.
If this does not help, take a close look at the ceramic tile as it may have a crack. If so, the burner will need to be replaced. The flame is being pulled back into the burner and fails to ignite the gas inside the burner, resulting in the pop or boom.
How We Tested Gas Grills
Over the course of four days in Spring 2017, we put our gas grills through a battery of tests designed to demonstrate their qualities and highlight their differences. We cooked burgers on high heat to see how well the grills seared meat and how intense and even was the heat they could generate across the whole grate surface. We slow-grilled cut-up chickens to see if the grills could hold a low temperature evenly across the whole grate. And we roasted whole chickens indirectly on both low and high heat to see if the grills could create browned skin and perfectly cook meat without charring. Sam Sifton, editor of the Cooking section of The New York Times joined us for these tests. In 2018 we repeated these tests, pitting the new Weber Spirit II E-310 against our upgrade pick, the Weber Genesis II E-310.
For the high-heat, whole-grate burger testan indicator of the grills ability to pump out uniform, high heat without creating an infernowe heated the grills on high with their lids down for 15 minutes . We then oiled the grates and distributed 12 to 15 6-ounce patties across the whole cooking surface. After about 10 minutes of cooking , we compared how well each grill had seared the burgers, looked for any patties that were charred or still unacceptably raw, and took a taste.
