My Method For Grilling New York Strip Steaks
Sometimes I’m in the mood for a really simple steak. Today was a salt and pepper day. I simply sprinkled salt and pepper on both sides of my huge steak.
Use a good quality Kosher salt and a coarse ground pepper. none of that table salt for a beautiful steak like this.
Once my grill was heated to the appropriate temperature I added my steak over direct heat. Make sure you have a probe thermometer on hand to monitor the temperature of the steaks throughout the grilling process.

How Long Do You Grill A New York Strip Steak
For creating a good crust on the strip steak, you need to cook it for at least 2 minutes on each side.
If you use a high temperature to cook it, it might take longer to cook at lower heat.
When it comes to the doneness of the meat, you need to cook the strip steak for 3 to five minutes to get medium-rare doneness on the meat.
You achieve medium doneness when you cook the steaks for 7 minutes depending on the thickness of the steak.
Sometimes it can get up to 10 minutes for medium-well doneness.
As you can see, you need to cook the strip steak a bit longer than other steaks cuts.
The reason behind this is that the New York strip steak is a little tougher than most cuts.

Should I Trim New York Strip Steak Before Cooking
Yes. NY Strip Steaks come with a band of fat around the steak, with a thicker band on one side. The thick band is too thick to benefit the steak and can cause flare ups when grilling. More importantly, the fat will shrink faster than the meat when cooking, which can cause the fat to fold or compress the meat, squeezing out valuable juices and impeding an even sear.
You will want to trim the thick band down to pretty thin, about & frac18 to ¼-inch thick. The easiest way to do this is to look to the corner of the steak to find a chunk of fat and grab hold of it. Use the fat like a tab and pull away from the steak. It should separate from the steak as you pull away and downward, leaving only a thin layer of fat behind. If this method doesnt work for you, slice the fat off with a sharp knife, taking care you dont cut into the meat. Dont worry about getting it too even.

Ny Strip Steak Recipe
New York Strip may be called different things, depending on where you have having your steak discussion. You might see it labeled Kansas City Strip, Omaha Strip, Club Steak, and Top Loin Steak.
Strip steaks are boneless center loin steaks, with a pleasantly chewy texture and a lot of beefy flavor. They usually come between 1 and ½ inches thick, and if you can buy them freshly sliced at a butcher counter thats the optimal way to go.
How Long Will Strip Steak Last
You can keep an uncooked strip steak wrapped in its original packaging in the fridge for 4 or 5 days if youve purchased it from a place with high turnover and fresh meat . If you plan to freeze the steaks, remove them from their packaging the day you buy them, then wrap them well in plastic wrap, slide the wrapped steaks into freezer proof zipper top bags, press out any excess air, then seal and freeze for up to 9 months. Make sure to label the package with the name and date.
Leftover cooked steak can be eaten within 4 days, as long as it was cooked when it was quite fresh.

What Is A Strip Steak
A strip steak is a cut of beef that comes from the short loin of the cow. Youve likely heard of the T-bone steak or the porterhouse steak read my blog about the difference between those two cuts if youre interested. In any case, both of those steaks are actually a combination of the filet mignon and the strip steak. The strip steak is slightly less tender than the filet mignon, but it generally has better marbling. Better marbling equates to more flavor, of course.
Do New York Strips Have Any Other Name
Most people I know and most places I see it sold call it New York Strip steak. However, it does go by other names too even though it is exactly the same cut of beef.
The New York Strip steak also might be found as Boneless Club Steak, Hotel-Style Steak, Ambassador steak, Kansas City Steak, or Top Loin, and even Veiny Steak. Just to make it even more confusing, in New Zealand and Australia, it is known as Porterhouse and Sirloin or striploin steak.
The New York comes from Delmonicos, a famous New York Steakhouse that became famous for its strip steaks.
Also, a T-bone steak is a steak with the New York Strip on one side of the bone and the tenderloin on the other side of the bone, which explains the tenderness. It also explains the sticker shock most people experience when they see the price of a T-bone.

Reverse Sear Strip Steak The Professional Way
- Preheat oven to 275°F. Place steaks on a wire rack over a baking sheet.
- Place baking sheet on the center rack of the hot oven. Cook until internal temperature reaches 10°F lower than the desired final temperature.
- Remove and let steaks rest for 5 minutes, covering lightly with foil.
- Preheat a heavy skillet or cast-iron skillet over high heat until very hot, about 5 minutes. A hot skillet delivers the best sear.
- Add some butter or oil and sear steaks for one minute each side. The final internal temperature of your steak should be 135°F for medium-rare and 145°F for medium.
- The sear will give your steaks the rich golden brown color and enhanced flavor that is typically associated with grilled steaks.
- Serve immediately. Unlike other methods of cooking steak, the low heat of the oven used in reverse searing does not draw the juices of the meat to the surface so additional resting time is not needed.
Prepare And Season The Steaks
There is not much fat in these cuts of meat so make sure that you defrost them properly by leaving them in the refrigerator overnight.
