Normally I would recommend using an instant read thermometer to gauge the doneness of meat on the grill however, that method can be a little tricky with this method. Its recommended that pork is done around 145°F, but you need to cook pork ribs to around 190°F to 200°F to really break down fat and collagen, resulting in a tender finished texture. Also, given that the ribs are wrapped in foil, its hard to figure out where to put the thermometer without unwrapping the ribs.

Ive tested this recipe several times and have found that 1 hour over direct medium heat will give you tender ribs that dont fall off the bone . Just make sure youre maintaining 350°F 400°F within the covered grill, and the ribs will turn out great every time.

In this recipe, the ribs go back on the grill uncovered for 10 to 12 minutes longer to allow them to soak up hickory smoke and a barbecue sauce baste. Youre not really cooking the ribs during this phase just infusing them with flavor.

Go Easy On The Seasonings

When it comes to seasoning ribs, you want to be very conservative good ribs have a great flavor all on their own and don’t need a lot of enhancement. It is also important to avoid adding barbecue sauce to ribs early in the process. Most barbecue sauces, whether store-bought or homemade, contain some kind of sugar . This can cause your barbecue ribs to burn, even when cooked indirectly.

Try using a good rub before you grill, and if you like, a barbecue sauce after the grilling is done. If you are adding a sauce, try using a mop. A mop is a thin barbecue sauce that you brush on during grilling to help maintain moisture and to add flavor. Sometimes you will hear it referred to as a baste.

You can also fill a spray bottle with a thin barbecue sauce, thin meaning it is practically water. Try a mixture of paprika, water, and a few other seasonings. By spraying the ribs with this mixture during grilling you will add moisture, reduce burning, and add flavor to your barbecue ribs.

How To Hold Ribs

Sometimes time and circumstances wont allow you to enjoy your BBQ ribs immediately, in which case its imperative that you hold and store them in a way that wont heavily impact flavor or quality.

Remove the ribs from the grill and allow to cool for 10-15 minutes. Using plastic wrap, wrap the ribs tightly in a few layers. Its key here that you dont use aluminum foil as BBQ sauce and foil can actually react due to the acidic nature of the sauce.

Turning tough meat tender requires two things: heat energy and time. When meat is held at a temperature of around 130°F and up, tough connective tissue will break down into gelatin. The rate at which this conversion takes place is a function of temperature the lower the temperature, the longer it takes. At the same time, the lower the temperature, the more internal moisture the ribs will retain as they cook. To determine the optimal temperature and timing range, I cooked several dozen ribs at temperatures ranging from 130°F all the way up to 180°F .

At the lower end of the spectrum, the meat takes far too long to tenderizeup to three days or more, and even then, the meat comes out more mushy and soft than tender and meaty. Too hot, and the meat falls apart in shreds, tasting more boiled than barbecued. Cooking Ribs On The Grill With Foil

There is no doubt that wrapping them in foil will enhance the end result. There are multiple advantages to doing so. When you wrap the ribs in foil, it prevents them from soaking up too much smoke that causes them to get fried up. The meat is better able to retain moisture and comes out with a delicious-looking color.

The foil also speeds up the cooking time. Although, dont wrap the ribs in foil from the beginning. Its usually preferable to wrap them up when the ribs are cooked halfway through. This allows the meat to be cooked evenly, absorb just enough flavor from the grill, and still be perfect.

How To Grill Beef Ribs In The Oven

Grilling beef ribs in the oven follows the same process as grilling on open flames or a gas grill.

With the oven, you will need to preheat it to around 225°F before placing your beef ribs inside.

Put the meat on the middle rack and allow it to cook for 1½-2 hours, turning a couple of times in between.

You can cover it with foil to ensure it doesn’t dry out and remove the foil in the last 20-30 minutes to brown.

Another way to give that glazed, seared, and charred effect is by turning the oven to the broiler setting, which comes closest to grilling.

How To Apply Bbq Sauce

When the ribs are approaching done, apply your BBQ sauce. Be careful here: as tempting as it might be to thickly paste on the sauce, I strongly recommend spreading it in thin layers. Doing this will give us the satisfying and sticky surface of our ribs.

If we apply it to thickly then it wont have the chance to dry, giving us a disgusting wet coating.

Layer carefully by applying a thin layer on one side, before turning over and doing the other side. Once both sides are coated, close the lid on your grill and leave for 5 minutes before repeating the process again. Repeat 4-5 times in total. Once done, remove from heat and put to one side.

To Precook Or Not To Precook

The rationale behind pre-cooking ribs is to tenderize the meat before it hits the grill. Then the grilling portion of the cooking process is more to add the char and adhere the sauce to the ribs. But is it necessary? If youre making side ribs, then yes, its a very good idea. As mentioned earlier, side ribs tend to be tougher than back ribs and benefit from some low-heat cooking to tenderize the meat.

Pre-cooking back ribs is optional it can make for an exceptionally tender rib, but it can be bypassed if youre not interested in cooking for hours. Do not precook country-style ribs if you intend on grilling them or they will be very dry.

How Long To Cook Ribs On The Grill

Ive found that the sweet spot for cooking ribs on the grill is about one hour. Yes, many barbecue restaurants will cook for hours and hours. This is more of a slow-cooking method and theyve got pitmasters to watch those grills like a hawk for hours at a time.

I personally dont have time for that. So if you want to cook pork ribs on the grill at home, I recommend grilling them for 45 minutes with just the dry rub, then dousing them with bbq sauce, flipping them over, and grilling for an additional 15 minutes.

If youre cooking grilled beef ribs, you may need a little more time simply because beef ribs are typically bigger than pork ribs. Adjust your initial cooking time by adding about 15 minutes. If the ribs have an internal temperature of between 200 and 203 degrees F, theyre done and you can move onto the saucing step!

Alternatives To Boiling Ribs

How Long to Cook Ribs on the Grill?

Luckily, there are many techniques of grilling that dont require you to grill, boil or simmer ribs.

  • Slow smoking your meat is one method to delicious, tender ribs. Many cooks choose this method of low and slow cooking to create the perfect texture and taste. If youre going to smoke your ribs, plan to smoke them at low heat for between 6-8 hours.
  • You can also get tender, juicy ribs if you use the steaming technique. Simply place ribs with either apple juice/cider or beer in a roasting pan with water. Cover with aluminum foil and bake in the oven before transferring them to the grill.
  • Brining is one option to create the perfect ribs. Make a simple brine solution with water and salt, adding your favorite items to enhance the flavor, such as onion or garlic. Brine overnight for flavorful, tender barbecue.
  • Lastly, simmered and braised ribs are a popular alternative to a charcoal grill method. If you low simmer your ribs with your favorite barbeque sauce, then braise with either more bbq sauce or your favorite dry rub, youll have tasty ribs to serve immediately.

Combine the chicken stock and vinegar in a roasting pan. Add the ribs, cover the pan with aluminum foil, and bake for 2 hours. Remove the ribs from the pan and put them on a plate. Transfer the leftover stock to a small saucepan on the stove. Turn up the heat to high and let it boil on high heat until it is reduced by half. Stir in the BBQ sauce and set aside.

At this low temperature, ribs retain plenty of moisture as they tenderize. The result is an extra-meaty rib that has the texture of a moist pork chop, but is still tender to the tooth. It pulls away from the bones nicely with just a little tug. I’ve never gotten meat with this texture using more traditional means of cooking, so if you really want to see what sous vide can do, this is the way to go.

Prepping And Marinating Beef Ribs For Grilling

Prepping any meat before grilling is essential to get the best results. Here is how you can prepare your beef ribs before grilling:

  • Remove the beef ribs from the packaging.
  • Wash and rinse it out well. You can soak it in some vinegar water for a while to clean and tenderize it simultaneously.
  • Drain the water, and if it is a full rack, you can cut it up into pieces if you choose to. .
  • Pat the ribs dry to remove excess water.
  • Rub your marinade well on one side of the ribs, then turn it over and rub the marinade on the other side.

In your marinade, acidic ingredients such as vinegar, lemon juice, coke, etc., will help to tenderize your meat slightly quicker, making it soft and juicy.

That works incredibly well during grilling because the ribs can dry out quickly on an open flame .

Cook Ribs Low And Slow

When you cook ribs in a smoker, they sit for a long period of time at a low temperature. To mimic this process, you will need to set the grill to a low temperature and cook your ribs for several hours. You want the inside of your grill to hold a temperature around 225 F/110 C for the entire cooking time, which means you need to check on the grill to make sure the temperature is maintained. While you’re checking the temp, take a look at the ribs it is important to keep a close eye on your ribs because once the surface of the meat starts to burn there’s no going back.

If you are using wood chips, you will probably have to add more wood every hour. This is particularly important for the first 2 hours. Your ribs will be done when they become tender and the meat is loose around the bones, which can be 4 to 5 hours.

To speed up the process or to increase the tenderness of the ribs, you can pre-cook the rack. Ribs cooked on a barbecue smoker at a low temperature for several hours will be very tender. However, ribs cooked on a grill, especially a gas grill, will not be as tender, even when cooked indirectly. You can precook by either boiling the ribs for about 30 minutes or by placing them in a slow cooker. Once you are ready to grill, season the ribs and cook them indirectly until done. The disadvantage of this is that you can literally boil out the flavor of the meat and the ribs will not absorb the flavor of the smoke as well.

Grilled Ribs On The Bbq

There is no fancy recipe here, were simply making grilled ribs on your barbecue and have them come out tender, juicy, and just about ready to fall off the bone. A little tug and the bone is stripped clean!

How To Prep Ribs

How to Cook Barbecue Ribs on a Gas Grill

Before grilling, you will need to prep the ribs. Make sure to pat your ribs dry first so theyre easier to work with.

Then, using a sharp knife, trim off any excess fat and any silver skin you may see. Also be sure to remove the membrane covering the rib bones by using a butter knife to rib a little holl in the small end of the rack. Using the knife and a paper towel, pull the membrane away from the ribs.

Then, its time to apply the rub. For this recipe, make a herby mixture out of sugar, thyme, oregano, rosemary, red pepper flakes and other seasonings. Season the ribs generously with this blend and let it marinate in the refrigerator. You can change the seasonings according to your palate. If you want a sweeter rub, add more sugar. Or if you want your ribs to have more kick, add extra cayenne pepper or red pepper flakes. The ribs can be left in the fridge for up to two days. Just make sure you remove them from the fridge an hour or so before cooking ribs are best cooked from room temperature.
