Preheat grill to 300f degrees. It is very important to try to preserve this temperature level through the cooking process so your ribs dont cook too quickly. I have 3 burners and I will usually keep the middle burner off and simply keep the two end burners on low so its a great, low, indirect heat for the ribs.

Treat The Meat To A Spice Rub

Taste of Home

Trust us: You want to add the spice rub. Like making the marinade, its simple to prep, just tossing some ingredients together in a bowl. Here, we use the remaining ½ cup sugar, plus salt and seasonings.

Take the ribs out of the fridge. Drain and discard the marinade from the 13×9. Pat the ribs dry . Rub the spice mixture over all sides of the ribs, patting with your fingertips to encourage it to adhere.

Test Kitchen Tip: When it comes to ribs, some people only use a marinade. Some people only use spice rub. We like to do both! Marinading adds layers of flavor that penetrate deep into the meat, while the spice rub adds flavor to the surface of the meat. When the grill sears the ribs, the spicy, crackling exterior of the meat makes a delicious contrast to the tender, succulent meat inside.

Thermal Considerations For Cooking Ribs In A Drum Smoker

Some upright barrel cookers have a tendency to cook on the higher side of temps. One way to combat that high heat is to use larger lumps of charcoal, which burn more slowly, spreading the heat out more evenly throughout the cook. If you only have small lumps or briquettes, dont overload your basket and dont light too much of it up at once!

But we can use the knowledge that these cookers cook a little hotter to our advantage. In fact, cooking ribs a little hotter and faster is a great way to go! Monitor the air temp using a Smoke X4 to be sure that your pit temp stays in the range between 275°F and 300°F . If you have a Billows BBQ Control Fan, by all means, use it!

Because well be cooking on the high-temp side of things, and because the evaporation of juices from the surface of the meat is actually integral to the way a barrel cooker works, we forego any wrapping on these ribs. Give them a good rubdown with your favorite BBQ blend and hang themprobed with a leave-in probe thermometer, of course. The pull temp youre looking for on these ribs is 195°F . You can go a little higher if you like them closer to fall-off-the-bone, but as they are suspended by their bones, I wouldnt push my luck too far!

When the high-temp alarm sounds on your Smoke X4, verify the temp at a couple places in each rack with an instant-read thermometer like Thermapen® ONE. Youll be surprised how even the temperatures are across the whole rack!

How Can I Support Family Farms

When you pick up some pork ribs at Walmart or Kroger you are more than likely buying pork that was raised in Iowa by a family that has been doing it for generations. How cool is that?! Plus, I think it is super important, as a consumer, to know where my food is coming from and how it is being raised. Its comforting to know that families, who care about us and their animals, are producing this food that I am enjoying.

How To Check The Internal Temperature Of Baby Back Ribs

Measuring the internal temperature of your baby back ribs is the best way to ensure that you have properly cooked the meat. However, checking the temperature of cooked baby back ribs is tricky because you want to make sure you have proper placement of the probe.

You do not want to commit the mistake of placing the thermometer probe in the middle of the bones. The meat in this section will be lower in temperature than those that are close to the bone. For an accurate reading of temperature, you want to insert the probe on the meatiest part of the ribs, but not close to the bones.

Once you achieve the ideal temperature, you can take the ribs off the heat and let them rest before carving or serving.

    Cooking The Ribs Past Done

As mentioned in the introduction, you will want to cook the ribs past done. While you only need to cook the ribs to 145 degrees F to be safe to eat, this temperature is not hot enough for the ribs to start making gelatin. The ribs need to at least reach 165 degrees F to become tender.

Its recommended you keep cooking the ribs until they reach 195 degrees F and up to 203 degrees F for the best flavor and quality. You can use a meat thermometer, but make sure you are cooking it properly. The meat closer to the bones will always be warmer than the meat in the middle, so try to measure different temperatures in different parts of the meat. Thinner meat probes will also work better than thick ones.

The problem with all of these methods is twofold. First, if you are an inexperienced cook, you may not know exactly how deep a crack should be or just how easily the probe should slide in and out, etc. Further, while a good indication, bones sticking out from the meat doesnt always happen.

Second, and more important, these methods are never 100% accurate. Theyre fine as general guidelines, but with 100% accuracy possible through technology, why risk wasting a great rack of ribs and six hours of your time?
