Reversing Sear Steaks On The Grill
The Reverse sear method is nothing new, but I didnt notice it on pellet grills until my friend Jim Ross showed me how he did it on his Green Mountain Grill. It works by cooking the outside of your steak at a lower temperature first while closing the lid, and then increasing the heat to finish off by getting a nice char or crust on either side of the meat.
-Preheat a smoker to around 250 degrees fahrenheit.
-Season your steaks with salt and pepper to taste.
-Place seasoned steaks in an aluminum pan just large enough to hold them flat, cover tightly with foil, then place in smoker for 12 minutes. This will cook them through without burning outside before searing them over the high heat.
-Remove the steaks from the smoker, uncover, and let them rest for 8 minutes.
-Place grill on high heat with lid closed for 5 minutes to get a nice sear.
-Carefully flip steaks over without burning yourselfthis is why its important not to have flare ups when searing!
-Cook another three minutes per side or until desired doneness is reached.
You may need to adjust cooking times depending on how thick your steaks are, but that will give you good starting point in order to achieve perfectly cooked steak every time!

There is a small magnetic sensor on the hopper lid and grill body that alert the Pellet Boss when they are moved away from each other . How It Works
Once a grill reaches its set temperature, it enters a pause cycle. This pause cycle, which turns the auger on and off, regulates the amount of pellets flowing into the fire pot.
Grills have 5 P-Settings: P-1 to P-5, the default setting being P-2. The lower the P-Setting, the shorter the pause the higher the P-Setting, the longer the pause. A lower P-Setting is ideal for low outside temperatures because it will feed pellets faster, preventing the flame from going out. A higher P-Setting is good for high outside temperatures to prevent the grill from getting too hot.
What Is A P
The P-Setting, short for Pause Setting, is used on some older grills to help monitor the temperature of the grill when being used in extreme cold or hot temperatures . The P-Setting does this by controlling the length of pause between the auger cycles, which feeds pellets to the fire pot.
While most grills that have the P-Setting have been discontinued, there are still grills being manufactured with this feature, such as the Scout and Junior 20.
You can find out if your grill has a P-setting by simply looking at your controller. If it has a plain black sticker, a sticker that says “call service” or a small hole next to the digital display, then they have a p-setting like the controller below.

The Cookshack PG500 is the cheaper of the two, currently retailing at just over $1,800. The Cookshack PG500 does offer direct-flame access to the pellet fire and the control panel offers an in-direct maximum temperature setting of 600 degrees. Hence, a very capable pellet grill.
What I particularly like about the Cookshack pellet grills is they provide a cold smoking draw. Its a feature not found on my wood pellets grills at the moment. Cold smoking is obviously not directly relevant to what we are discussing with this post about pellet grills with the hottest temperatures. However, I think cold smoking is a feature more people would enjoy.

Place The Sausages At One End Of The Grill And Leave Space In Between Them So They Dont Touch Each Other While Cooking
The sausage links should be placed in a parallel way with the grills upper bars to prevent them from falling through.
You can cook the sausages on a single level or use a Grill-Mate, a device which allows you to grill foods vertically and prevents fat from dripping down onto the fire, making flare-ups less likely.
In addition, make sure that your grill is clean before cooking. Once you place the sausages over live coals, give it about 10 minutes per side to cook thoroughly until lightly browned and cooked all the way through.
If you cant fit all of your sausages on one tray, put those without a direct flame underneath where theyll be getting indirect heat. If youre cooking more than six sausages, use two trays/grills/ovens this will help avoid overcrowding which can lead to sticking.
Start by grilling the sausages for 20-25 minutes until they are browned. You wont need oil or butter to do this the sausages will release enough of their own fat to cook in.
Remember not to press down on them too much because this will release their juices and will alter their appearance by flattening them out. You want them to be plump and juicy. If you havent tried to cook them this way before, I hope that you give it a try because your family will love this char-grilled taste!
After cooking, let them rest for 5 minutes before serving this will make sure they stay juicy and tender.

Flame Out Alarm: My Grill Display Says Flame Out Check Firepot & Hopper
This alarm sounds when the grill senses that the flame has gone out.
This can happen if the grill has run out of pellets during a cook. Always check to make sure your hopper has fresh, dry pellets when you begin a cook.
It can also happen during the ignition sequence if the grill fails to reach the temperature threshold to move the grill from igniting to grilling mode. The ignition sequence runs for 6 minutes, and if the temperature does not reach 165° during that time, it will go back into igniting mode to attempt to get the grill up to temperature. If it cannot reach the required temperature after three cycles, the grill will alarm and display FLAME OUT, CHECK FIREPOT & HOPPER.
If this alarm happens when the hopper has pellets in it: Let the grill and metal cool and check your firepot to make sure it has not overflowed, and empty any ash & pellets out of the firepot. Then turn the grill on with the insides removed so you can watch the auger. Ensure that the auger is pushing pellets into the firepot, and that the fan is running. If pellets are moving and the fan is running, but no fire will start, your igniter has likely failed, and you should contact us for a replacement.
