Loftis: We stay relevant because our food is paramount. We also stayed on trend with our buildings and have gone through different remodeling, mostly in 2017. About three years ago, our wood cooked salmon has been the number one selling item. It stems from the transition of people eating healthier, and the younger generation isnt as attracted to a heavy steak. Weve embraced it and offer more seafood items and poultry.

Loftis: Their focus is to grow the business and that involves opening new restaurants. Were committed to opening three this year, with one more opening in October, which will bring us to 51. We have three signed leases in 2020, and were working on the pipeline for 2021 and 2022.

Not only was Firebirds Wood Fired Grill named one of the countrys top 50 emerging restaurant chains by a leading industry trade magazine, but it has new private equity ownership that wants to expand it. Firebirds Wood Fired Grill is a restaurant chain primed to grow.
J.H. Whitney Capital Partners acquired it from Angelo Gordon & Co., for an undisclosed sum, in December 2018. Firebirds now has 50 locations in 19 states. It debuted three outlets in 2018 and has added two in 2019 with one more on the way this year.
On a Technomic ranking of the top 500 U.S. based restaurant chains, Firebirds revenues spiked 11.2% in 2018. Its average unit sales at its 48-units in 2018 were $3.8 million.
While many chains expand by franchising to curtail the need to obtain capital, every one of its outposts is company-owned. None is franchised.
Firebirds Wood Fired Grill started out as a steakhouse in 2000 in Charlotte, N.C. and is known for its wood-fired grill that gives the meat a smoky flavor. But it has broadened its menu to emphasize seafood, all prepared from scratch in the kitchen. Besides its ribeye steak and filet mignon, it specializes in wood-grilled salmon and grilled shrimps.

This is the brands first location within the Lone Star State and it has been in the works for quite sometime. Ground was first broken in March 2020 and it was originally planned for the restaurant to open by the end of that year.
Unfortunately, the COVID-19 pandemic caused much of the development and construction to be delayed, but in speaking with What Now Dallas, Firebirds VP of Marketing Stephen Loftis said theyre on track and excited about opening next year.
An official statement from the brand describes Firebirds as an American restaurant and steakhouse known for its scratch kitchen, bold flavors and inviting atmosphere. Signature menu items include hand-cut aged steaks that are cooked over locally sourced woods, fresh seafood, hearty salads, specialty crafted cocktails and select wines.
The 7,157-square-foot Fort Worth location will be an open concept featuring a contemporary design with exposed steel, floor-to-ceiling windows and abstract artwork. It will be open 11 AM to 10 PM on Sundays thru Thursdays and 11 AM to 11 PM on Fridays and Saturdays. Happy Hour, featuring bar bites and drink specials, will be offered in the restaurants signature FIREBAR and on the patio weekdays from 4 to 7 PM.
For the new restaurant, Firebirds will be hiring on site for all positions starting Dec. 8.
