So, below you will find internal temperatures corresponding to doneness:

Transfer the pork chops to low heat and cook until an instant-read thermometer registers 145-degrees, 68 minutes more.
The cook times are important but the temperature is really the indicator you should be looking for. Avoid piercing the meat with a for or knife to check for doneness as this releases those precious juices we want! Instead opt for a thermometer. Its fast, efficient and most of all accurate.

Yes, you can use a million different types of seasoning for pork chops on the grill, but I like my grilled boneless pork chops the same way I like my handmade, juicy burgers: simply with a generous amount of kosher salt. We all have iodized salt in our cabinets because it is the cheapest at the store, but that doesnt mean it is the best salt for cooking. Not only does the addition of iodine alter the flavors of whatever you add it to, but its tiny crystal size makes it dissolve too quickly, leading to over-salting. If you remember only one point from this post, let it be this: everything you cook and bake will taste better if you use kosher salt instead of iodized salt!

When you are going to cook boneless center-cut pork chops, preheat your oven to 400 degrees F and then bake them for 25 minutes. What Temperature Pork Should Be Cooked To Eat Safely
For years, cooks have been told to cook pork until well done, resulting in a dried out piece of meat nobody wants to eat. No more!
According to recent changes in the USDA guidelines, it is safe to eat pork cooked medium rare. Cook the pork chops to an internal temperature of 140°F and still barely pink inside, then rest for about 5 minutes for the residual heat will continue to cook and raise the internal temperature.
For thin cut, bone-in pork chops about 1/4 inch thick, cook over direct medium-high to high heat for a total of 3-5 minutes, with the lid closed, turning once.
For 1-inch thick boneless pork chops, cook for 8-12 minutes over direct heat turning every 3-4 minutes or until well grill marked with the lid closed. Add another 5 minutes resting time for the juices to set in the meat.
If cooked properly, the pork chops will release a bit of juice as they rest, a sign theyre still nice and juicy on the inside.

How To Reverse Sear Pork Chops On A Grill

One popular way to get the most smoke flavor, the perfect cooking temperature, and those appetizing grill marks, is to reverse-sear the pork chops.
Set the Traeger grill temperature to 275 degrees Fahrenheit and preheat, with the lid closed, for 10 to 15 minutes.
Because of the lower temperature, youll more than double the cooking time. Cook at the same temp for 60 minutes .
After you reach an hour, you should remove the pork chops from your grill and set your temperature to 500 degrees Fahrenheit. Once the grill is hot, place the pork chop back on the grill and sear for three minutes per side or until they reach an internal temperature of 145 degrees Fahrenheit . Then rest for at least three minutes and serve.

What Chops to Choose: Any pork chop will work, but I prefer a center cut 1 inch thick, either bone-in or boneless. ¾ inch is a little thin and can dry out more. A brine will help some, but you will be happier with thicker.
Chops thicker than 1 ½ may require either reverse searing or some time over indirect heat. I usually don’t do these thicker chops since I consider them too big for a serving.
Trim the Fat Layer: There is usually a layer of fat on the edge any pork loin. I suggest trimming it, but others think it adds some flavor and helps prevent drying. If not trimmed, it may cause “cupping,” complicating the grilling.
If the fat layer is over ¼ inch, trim it to ¼ inch thick and score every inch to prevent cupping of the pork during cooking.
