We love cooking a whole standing prime rib roast, especially in out Traeger Ironwood 885 smoker. The downside is that smoking a 15 pound prime rib roast takes all day. Sometimes all you want is a delicious steak that doesn’t take a bunch of time to cook. Follow along and we will show you how to turn that monster hunk of meat into manageable steaks you can grill, smoke, or freeze.

The Reverse Grilled Steak

This method is quite similar to the one above but renders a juicier steak it takes more patience too.

Light up the grill and cook your steak on the cooler side. Once it reaches the right core temperature, transfer it to the hottest spot on the grid and caramelize the exterior. If you want the perfect color and texture, this method is better for you, since you have more control over the results. If you´re going for a more well done steak, the traditional Grilled Steak method might be right for you.

To fry a steak: Preheat the oven to 375 ° Fahrenheit. Cover the steaks with a paper towel. Fry the steak in a hot frying pan for just one minute on each side. Transfer the steak to a wire rack on a baking sheet with an edge and place it in a preheated oven. Bake for 10 to 20 minutes until cooked through.

How To Grill Prime Rib Roast

Step 1: Rinse your roast under cold water. Pat dry with paper towels and place roast on wire cooling rack. Salt all sides of the roast with coarse sea salt and place in the refrigerator for 3 days.

TIP: Place a plate under your roast in case it drips while drying.

Step 2: Preheat your grill to 225235 degrees.

Step 3: While the grill is preheating, prepare your prime rib by applying a light coat of olive oil over the entire roast. I use this spray bottle for olive oil but use what you have.

Step 4: In a mixing bowl, whisk together all ingredients for the beef rub. Apply liberally over the entire roast. On top of the beef rub, sprinkle chopped fresh rosemary. Allow roast to sit on the counter and come up towards room temperature while your grill preheats.

Step 5: Insert a reliable meat thermometer in the roast, place roast on grill over indirect heat, as far from the heat source as possible. Be sure to place the roast with the bones facing the heat source. I cant stress enough the importance of using a reliable meat thermometer, it can be the difference between perfection and disaster with an expensive cut of meat. Dont ask me how I know.

Step 6: When the internal temperature reaches 122 degrees , remove the roast from the grill and set aside. Increase the direct-heat zone of your grill to extra-high.

Step 7: Place the roast directly over high heat for a total of 5 minutes, turning often so that all sides get a nice crust built up.

Ingredients:

  • 1 clove of garlic, minced
  • 1 tsp dried rosemary, crushed
  • 1 tsp freshly ground black pepper
  • Coarse sea salt for finishing

Total time: 12 min + 35 minutes resting before and after cookingPrep time: 5 min Cook time: 5 to 8 min Serves: 2 people

Directions:

1. In a small bowl, whisk together the EVOO, tamari, Worcestershire sauce, garlic, rosemary, and pepper. Place the steaks in a large sealable plastic bag. Pour the marinade over the steaks. Seal the bag and gently massage the steaks to make sure they are well coated. Set the bag aside for 30 to 45 minutes until the steaks come to room temperature.

2. Preheat your George Foreman grill for 5 minutes with the top closed.

3. Place the steaks on the grill and close the top. Discard the excess marinade. Cook the steaks for 5 minutes and check the internal temperature with a digital meat thermometer. You are looking for 125°F for medium rare and up to 155°F for medium well. You can turn the steaks 45 degrees to get some hatched grill marks. Continue grilling until you have achieved the desired doneness. The steaks will continue to cook while resting, so take them off just shy of the desired temperature.

4. Remove the steaks to a clean cutting board, season with coarse salt, and allow them to rest for 5 minutes. Dont skip this step.

Ingredients:

  • Two 8 ounce, 1-inch-thick, boneless ribeye steaks
  • 1 to 2 TBS extra virgin olive oil
  • 1/2 tsp coarse sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 stick unsalted butter, at room temperature
  • 4 ounces good blue cheese, at room temperature

1. Take the steaks out of the refrigerator 30 minutes before grilling. Place them on a large plate.

2. Preheat your George Foreman grill to high for 5 minutes with the top closed.

    The benefit of using a Traeger grill is you also do not have to stand beside the grill to make sure that the fire does not go out. You can set and forget the grill while you do other activities.

    If you have the Traeger grill with the feature, just sit back and wait for the grill to reach the desired temperature and check it on your smartphone if the temperature is steadily climbing.

    Just before the grill reaches the desired temperature, get the rib-eye steak out of the fridge and then let it sit at room temperature for at least 15 minutes to thaw it a little bit before cooking.
