Here are some frequently asked questions – and answers – about how to cook vegetables on the grill.

What are the best vegetables for grilling?

You’ll want to choose vegetables that are hearty and contain less water – sorry, but you’ll have to skip the tomatoes. Our favorites are corn, zucchini, asparagus and peppers.

Can you grill frozen vegetables?

The short answer is yes, but you’ll want to grill them in foil packets since they will contain more liquid than fresh vegetables. And remember my tip from above – hearty veggies that don’t contain high amounts of water are best.

What spices go well with vegetables?

The sky is the limit! This recipe calls for plain old salt & pepper, but you can add just about any herb or spice you love. Play around with flavor profiles like Italian or Asian. And if you find a good combo, let me know!

How To Prepare Grilled Vegetables Skewers

Choose your skewer. I most often use metal skewers for threading veggies, but bamboo skewers will work too. If using wooden skewers, soak the skewers in water for at least 15-30 minutes so they dont burn on the grill.

Cut the vegetables the same size. Cut the vegetables into the same size chunks so they cook evenly. Cutting the vegetables too thin have a tendency to fall off the skewers as they cook, so keep them thick. Tender vegetables like zucchini or summer squash can be cut thicker because they take less time to cook and curving chunks of sliced onion over the rounded tops of mushrooms not only melds flavor, but maximizes skewer space too.

Pack them tight. Because the vegetables shrink as they cook, pack them together tightly. Because of my OCD tendencies, I like to keep my sequencing of the vegetables the same for each skewer, but feel free to use just one type vegetable per skewer if youre serving the vegetables all together on a platter.

Indirect Grilling In A Grill Pan

  • Start with a grill pan or disposable aluminum foil pan.
  • Cut vegetables into the same thickness for even grilling.
  • Combine vegetables with olive oil, salt, and pepper.
  • Divide the vegetables by size and density, putting more dense vegetables like as carrots and potatoes into one grill pan and softer vegetables like asparagus and green beans into a separate pan. Denser vegetables will take longer to cook.
  • Cook on medium heat.
  • Turn the vegetables, occasionally shaking the pan to keep the vegetables from sticking. Cook until they reach the desired tenderness.

    What To Serve With Grilled Vegetables

    Grilled vegetables work wonderfully as a classic barbecue side, but the best part about them is that they are so versatile, the choices of what to serve them alongside are endless. I have been liking to throw these into stir-fries for a pop of marinated veggie deliciousness, add them on a bed of pasta for texture, and in tin foil packets for a juicy, ready-to-go meal. They are also great on skewers because they not only have a gorgeous variety of colors but taste good too. I am excited to hear how you work these delicious veggies into your favorite recipes!

    Served raw, radicchio and trevisano are a little too bitter for my tastes, but on the grill, they become sweet and succulent. In this simple recipe, we char halved heads of radicchio and serve them with olive oil, gorgonzola, and saba, a sweet syrup made from grape must, though any sort of balsamic vinegarbased condiment will work in its place. Want a vegan variation? Try dressing grilled radicchio or trevisano with a sour-sweet cherry gastrique instead, for a bold mix of flavors that’s a great accompaniment to whole grilled fish, grilled chicken, or other simple mains.

    Best Seasonings For Vegetables List

    Apart from the way you cook your vegetables, the knowledge of what to season veggies with further enhances the taste and lets you experiment with the best seasonings for veggie and make different dishes.

    The basic two seasonings that we use for flavour are salt and pepper.

    But there are different types of spices and herbs for vegetables that can be used to make them more exciting and make different styles of dishes.

    I have broken down the seasoning list into some of the good spices for vegetables that you can use to make types of vegetable side dishes to go with roasts or any main.

    Best Seasoning For Stir

    Stir frying method of cooking vegetables requires more personal attention. It is one of the best way to season mixed vegetables.

    You have to stand and be on guard while stirring the vegetables.

    Time wise stir frying vegetables can actually take less time depending on the type of vegetables used.

    Some of the best vegetables to make a stir fry side with are zucchini, mushroom, green beans, sugar snaps beans, carrots, peas, peppers to name a few .

    Below are my recommended herbs and spices for stir fry veges.

    Fines Herbs

    Bring the aristocratic French flair into your repertoire.

    A combination of aromatic herbs like tarragon, chives, chervil will make your main envy the vegetable side.

    How to add Fines Herbs to vegetables

    To bring the best out of both the seasoning and the vegetables, I would recommend stir-fying vegetables in butter and adding the herbs while frying.

    Panch Phoron

    Panch phoron may be a bit lesser known spice blend. All it is, is a blend of 5 whole spices like mustard seeds, fennel seeds, cumin seeds, fenugreek seeds and nigella seeds.

    As you can see from the mix of spices that it has bites of all flavours in one teaspoon.

    The colourful blend of spices give the vegetables an interesting texture and flavour.

    How to add Panch Phoron to vegetables

    Add one to two teaspoon of panch phoron to warm oil for 2 cups of chopped vegetables. Let the spices splutter in warm oil for few seconds before adding raw vegetables. Stir fry as you normally would.

    Grilled vegetables are a delicious, easy grilling side dish. If you already have the grill going for veggie burgers, mushroom burgers, or black bean burgers, putting on a few grilled veggie kabobs is an easy way to complete the meal. These skewers would also be a perfect side with BBQ Jackfruit Sandwiches, Cauliflower Po Boys, or a hearty salad like my couscous, orzo, pasta, or potato salad.

    Alternatively, make them the main meal! Drizzle the finished grilled vegetables with tangy Greek salad dressing, cilantro lime dressing, or chimichurri and serve them over quinoa or farro with tzatziki sauce and lots of pita. Not in the mood for tzatziki? Pesto, hummus, or chipotle sauce would be delicious too.

    How Do You Make Grilled Vegetables

    This recipe starts with fresh vegetables. I like to go with a rainbow colored combination of red bell peppers, small carrots, yellow squash, asparagus, red onions and mushrooms. The vegetables soak in a garlic and herb marinade, then go on the grill to sear to perfection. I use my charcoal grill when the weather is nice, or my stovetop grill pan when its cold outside.

    Tips For The Best Grilled Vegetables

    In my effort to keep things simple and my eating clean, I skip the marinade and the skewers and simply slice and season.

  • Slice the vegetables the same thickness so they cook at the same rate.I use a handheld mandoline to make my zucchini, eggplant, and onion slices perfectly coordinate. I aim for slices that fall somewhere between 1/3 and 1/2 I cant do math so I eyeball it. Slicing the veggies too thin will make them too tender as and disintegrate on the grill.
  • Put oil on the vegetables before grilling. Follow the golden rule of grilling: oil what you grill, not the grill itself. Drizzle the vegetables with olive oil then spread it evenly with your fingers. The mushrooms will absorb the oil quickly so work fast but dont fret too much about them, theyll produce plenty of their own juice.
  • Season simply. Sprinkle the vegetables somewhat generously with kosher salt and freshly ground black pepper. They will absorb the salt as they cook, enhancing their inherent sweetness. Feel free to add dried herbs such as oregano, mint, tarragon, or basil if youd like.
  • Grill em up hot. Start your veggies over medium heat, about 350°F to 450°F. Lay long slices and asparagus or carrots crosswise over the grates so they dont fall through. Close the grill lid and cook the vegetables undisturbed, flipping after 3-5 minutes.

    How Long To Cook Each Vegetable On The Grill

    Learning the cooking time for your vegetables is key for making sure theyre perfectly charred and delicious without being overcooked or burnt. Heres a basic guide, but feel free to move your veggies around to hotter or cooler spots on your grill to help speed up or slow down the cooking:

    • Bell pepper: if you slice them in half you can grill each half for about 8-10 minutes, flipping halfway through. Cook ½ strips for 6-8 minutes per side.
    • Onions: grill round slices of onion for about 8-10 minutes, flipping halfway through. If you quarter them theyll take closer to 15-20 minutes per chunk.
    • Zucchini & yellow squash: both ½ rounds and ½ strips will take about 5-8 minutes, flipping halfway through.
    • Potatoes: in a foil pack, fingerling or cubed potatoes will take about 20-25 minutes to cook.
    • Brussels sprouts: in a foil pack these will take about 20 minutes. On a skewer they will take about 10 minutes, flipping the skewer halfway through.
    • Mushrooms: large portobello mushrooms will take 8-10 minutes, flipping halfway through. Baby bella mushrooms will take about 10-12 minutes in a foil pack, and about 8-10 minutes on a skewer.
    • Corn: corn will take about 15-20 minutes total on the grill, just be sure to rotate your cobs whenever youre flipping your other veggies and once youve removed the other veggies so that it gets nicely charred all over.

    How Long Do You Keep Vegetables On The Grill

    Cooking times for grilled vegetables will vary depending on the thickness of your slices. Grill with the lid down to create an oven environment and check the progress of your cooking half-way through cook times.

    • Artichokes: Boil first for 10-12 minutes then quarter and grill 4-6 minutes
    • Asparagus: 6-8 minutes
    • Tomato: 6-8 minutes halved
    • Zucchini: 5-7 minutes

    The veggies may look a little dry as they come off the heat, but will begin to sweat and deflate as they rest.

    Not to spicy but flavourful, cajun spice seasoning brings out the yumminess to any dish it is added to. It also makes a good seasoning for mixed vegetables.

    Its Time To Fire Up The Grill

    I cant think of a vegetable that cant be grilled. From corn to carrots to peppers and potatoes the grill has you covered.

    When you grill a vegetable, magic happens. Unlike diluting their natural flavors in a pot of boiling water, the grill releases the vegetables natural sugars and juices and forms a caramelized yummy char.

    The below infographic explains how to easily grill 20 vegetables.

    Step one is to clean and cut the vegetables. Potatoes and zucchini do well as wedges. Carrots, corn and beets can be grilled whole. For eggplant and squashes, we like to cut them in half.

    Then, drizzle them with a little healthy olive oil, so they wont stick to the grill, and season with kosher salt and course ground black pepper.

    If youre not using kosher salt yet, you should really give it a try. It adds so much more flavor than table salt.

    Heat your grill to about 400 degrees. You can use a gas grill, charcoal grill, ceramic cooker even a small tailgate grill.

    If you dont have a grill yet we need to talk but you can use a grill pan on the stovetop set to medium-high.

    Then, just follow the suggested grilling times on the infographic or our grilled vegetable recipes. Most veggies can be grilled in up in 15 minutes or less.

    For thin vegetables, you might want to use a veggie basket so they dont slip through the grate.

    Youre going to end up with tender veggies adorned with impressive grill marks. Theyll be too pretty to resist.
