So youre ready to take the dive into the world of cooking ribs on the grill? I promise its easy and youll be obsessed with the finished product. Youll need about 15 minutes of prep time and an hour of cooking time. So, make sure you account for that when planning out your meal!

Youll want your grill preheating to low heat for about 15 minutes before youre ready to throw the ribs on. I use a propane grill, so 15 minutes is all I need. If youre using a charcoal grill, youll need more time for it to preheat, so plan accordingly.

You also dont want to put ribs on the grill that just came out of the fridge, or else the meat might get shocked. So, while your grill is heating up, let the ribs rest on the counter for about 15 minutes.

  • Youre going to start by mixing up your dry rub. Combine all the dry rub ingredients in a bowl and give them a good stir.
  • When your ribs have warmed up a bit on the counter, remove the ribs from the package. To remove the membrane, turn the ribs bone-side up and pull up a little section of the membrane at one end of the rack. Then continue to pull up until the whole thing comes off. Then discard the membrane before moving on to the second rack of ribs.
  • Once the ribs are all coated and the grill is heated up, place the ribs on the grill with the meat side down.
  • Leave the ribs to cook bone-side down for 10 to 15 minutes.
  • Once cooked, take the ribs off the grill and cover them loosely with aluminum foil. Let them rest for 10 to 15 minutes.

    Remove from the grill and let the ribs rest for a few minutes, then cut the ribs. Its that easy.

    Keep in mind, were aiming for low and slow cooking here, and even at 225 degrees Fahrenheit, the ribs will still need at least five hours maybe even six hours to finish.

    Unlike grilling steaks, the ribs internal temperature wont determine whether theyre done or not. Of course, when cooked to the safe internal temp of 190 degrees Fahrenheit, the ribs will be safe to eat however, they might not be delicious just yet.

    In fact, it takes a significant amount of time for the connective tissues to break down and become tender. Most of the time, we need to cook the ribs to an internal temperature of 205 degrees Fahrenheit to become tender.

    A basic timeline could look similar to this:

    • Unwrapped smoking: Three hours.
    • Cooking wrapped in foil: Two hours.
    • Unwrapped at a high temperature: One hour.

    Depending on your grill, your ribs might require slightly more or less time than mentioned above. Its essential to rotate the ribs occasionally throughout the cook you must also check on the fire, smoking wood and the water pan every 30 minutes or so.

    When youve been grilling your ribs for 30 minutes, its time to check they are properly browned all over. If you notice any raw-looking spots on the surface, keep grilling the ribs for 10 to 15 minutes more.

    Youll next make your ribs even more tender if you steam them with some apple juice when tightly wrapped in foil. This will lock all the juice inside the packet with the ribs. Ensure the package is as watertight as possible once youve poured in your apple juice.

    Pop your tightly wrapped spare ribs back onto the grill, again using the indirect cooking zone.

    Shut the lid of the grill and ratchet up the temperature to 375F. This is hot enough for the apple juice to boil, further tenderizing your ribs, while also speeding up the time it takes to cook them.

    After 30 minutes of steaming in the foil, dial the heat down and start unwrapping your ribs.

    You should find the ribs are flexible now and mostly cooked. If you pick up the rack from one end, you should see it drooping.

    If, however, you find the ribs are still not fully browned, close the package up and grill them for 10 minutes more.
