Tips For Making Grilled Turkey Legs

  • For food safety, use cool water and store the turkey and the brine in the refrigerator. Monitor the temperature of the liquid to make sure its below 40 F.
  • Use a deep, non-reactive pot or container and enough brine to keep the turkey completely submerged during the brining process. You can weigh down the meat with a heavy plate or bowl to prevent from floating around.
  • The turkey meat will have a tinge of pink as the result of the curing process so use a meat thermometer to properly gauge doneness. Just insert the thermometer into the thickest part, making sure the probe doesnt touch the bone. If the internal temperature is 165 F, your drumsticks are ready to enjoy!

These turkey drumsticks are county fair favorites for good reason. Theyre mammoth, portable and so much fun to eat! Give them a try for Thanksgiving and have a more relaxed and enjoyable holiday dinner. Theyll be just amazing with mashed potatoes, mac and cheese, and your other favorite Thanksgiving side dishes as a regular roast turkey!

Grilled Turkey: Another White Meat

When it comes to food, turkeyis not just another version of chicken-despite both types of meat being poultry. One benefit with turkey meat is that it tends to be bigger than what youd get from chicken, meaning you get more meat from the same cuts. Hence why you see grilled turkey legs being sold at places like Disney World and Renaissance festivals, rather than chicken legs. When properly cooked, turkey can truly excel in flavor, but any sort of quick cooking, like the kind done in a stir fry, is likely to turn out poorly. Texturally speaking, the relatively larger size of a turkey means that individual cuts may have a tad more stringiness to them, hence why slow-cooking it tends to yield better results. In terms of flavor, turkey tends to contain proportionately more dark meat than chicken, meaning that it has a comparatively deeper and richer taste.

Find Your Ideal Seasoning

After drying your wet brined turkey legs, you need to season them. A dry rub is your best choice if you want turkey legs with crispy skin. You can make a dry rub by mixing salt, brown sugar, paprika, garlic powder, onion powder and other spices of your choice. Alternatively, you can buy a pre-made dry rub. Before applying your dry rub, coat the legs with oil or butter. The oil or butter coating will help the dry rub adhere to the skin.

A wet rub will contain many of the same seasonings as a dry rub but includes oil, vinegar or another liquid base. After applying your wet or dry rub, put the turkey legs in the fridge for at least an hour so they can absorb the seasonings.

How Long Should A Turkey Leg Be Cooked

You cook a turkey leg at core temperature. Not on time. The core temperature indicates precisely how far the meat is doneness. The meat is safely cooked when it has a core temperature of 70°C or more. But we want the meat to be so tender that it almost comes off the bone by itself. Then we want the core temperature a little higher. After smoking and eating many turkey legs, we found out that we like the meat best when it has a core temperature between 85 and 90°C .

The turkey leg contains several tendons that you cannot eat. If the meat is not tender enough, you have to eat it between the tendons, which is not great. Somewhere around a core temperature of 75°C , another beautiful thing happens. The collagen in the connective tissue is converted into gelatin. And that is delicious stuff. Around this temperature, most moisture is also expelled by the meat that ends up on the surface. This moisture cools the meat, and then it ends up in a so-called stall. The longer that stall remains, the longer the collagen gets the chance to be converted into gelatin.

When the turkey leg has reached its desired core temperature, you will also see that the meat has withdrawn from the bone. That is the sign that the connective tissue is breaking down, and the flesh is coming loose. We want that.
