Everybody loves chicken, and all cooks love a good chicken How-To. With summer and grilling season coming up, I thought it would therefore be a good time to tackle that real conundrum of how to grill chicken breasts that are juicy, every time.
The thing about chicken breasts is that they are not typically of an even thickness. This means that the thinnest part tends to dry out before the thickest part is cooked all the way through. There is only one way to fix this and it involves a tiny bit of work, but not hard work. Dont worry!
What youre going to do is flatten the chicken out to an even thickness, then marinate them a bit for flavor, and then grill for as short a time as possible. Heres how!

How Long To Cook Bbq Chicken
Whether you cook this BBQ chicken on the grill or in the oven, youll want to cook the chicken nearly all the way through before adding the BBQ sauce at the end. Sauces like BBQ sauce contain a fair amount of sugar that can easily burn. Adding the sauce at the end and searing quickly minimizes the chance of it burning.

What’s The Difference Between A Brine And A Marinade
Both brines and marinades are meant to enhance plain meat, but they do it differently. A brine has more salt than a marinade, and meat gets totally immersed in a brine. It works because the salt penetrates the meat as the brine and the meat reach an equilibrium. Brining adds moisture to the meat that keeps it from drying out while grilling, helping it to come out juicy.
A marinade often contain oil, and the oil does not penetrate the meat. The meat is usually not immersed in a marinade. Marinade flavors only the outside of the meat so there’s a chance it will come out dry after grilling.
Homemade Bbq Sauce Ingredients:

This may seem like a long list, but trust me, you have most of these things already!; Just dig around in that spice cabinet and in the door of your refrigerator.; You will most likely have them.; If you do need to grab a few things, buy them in bulk because you will be making this homemade sauce a lot once you see how amazing it is!!
- Ketchup: Adds sweet and tangy flavor to the sauce.
- Molasses: For sweetness and a warm, smoky flavor.
- Brown sugar: Rich sweetness
- Cider vinegar: Balances out all the sweetness with its tartness.
- Worcestershire sauce: Savory and sweet tangy sauce.
- Paprika: Adds an unmistakable red color and very mild pepper flavor.
- Chili powder: For spice!
- Onion powder: Sweet and savory flavor of onions are perfect in this sauce.
- Salt: To taste
- Liquid smoke: I love the smokiness the BBQ sauce gets from adding this!

Grill The Chicken Quarters
Now that your chicken and grill are both ready go ahead and place your chicken quarters onto the grill. Place the skin side of the chicken down onto the grates first.
After about 7-10 minutes you can flip the grilled chicken legs over to grill the other side. If the skin is sticking to the grates then it isnt ready to be flipped so allow a few more minutes.
The skin will naturally release from the grates when it is crisp and cooked. Flip them over and allow for them to continue cooking.
Flare ups
If your grill is prone to flare-ups then you want to make sure that you keep a close eye on the chicken.
Create an area with some indirect heat so that you dont burn the chicken.
Especially because we are cooking with the skin on you will have more fat dripping which can cause flare-ups.
Check temperature
You always want to make sure that you cook your chicken to an internal temperature of 165°F. When cooking bone-in chicken leg quarters be mindful that the bone will retain heat.
You can take the chicken off the grill around 160°F as it will continue to cook while it rests as well. Instant-read thermometers are great when grilling so you know just what temp you are at.
How To Make Homemade Bbq Sauce
Making homemade BBQ sauce is super simple! All of the ingredients are pantry and fridge staples and when simmered together make an incredible sauce that will become a family favorite.
All thats needed to make BBQ Sauce is one pot and about 10 minutes of time. Add all the ingredients to the pot and;whisk;them together. Bring the sauce up to a boil then reduce and simmer for 15 minutes. Let the sauce cool and you are ready to serve.
These chicken legs are great with the classic BBQ sauce in this recipe but they are also amazing when grilled with Carolina Gold BBQ Sauce.

When Is Chicken Safe To Eat
One of the single biggest secrets to perfect grilled chicken is understanding the internal temperature of when your chicken is done. With the salmonella potential of chicken, there is good reason to make sure the meat is cooked to proper temperature, but most people heavily overcook it to be safe, and as a result the chicken turns out dry and way overcooked.
The USDA encourages chicken to be cooked to 165 degrees Fahrenheit to kill any bacteria. And while that is true when trying to set one temp countrywide, there is a process when grilling or cooking chicken that is important and plays into when you pull your chicken. By holding chicken at lower internal temperatures for longer periods of time, you can still kill off the harmful bacteria.
That means you can achieve bacterial death in chicken with an internal temperature of 155 degrees F, if you hold that temperature for just under 50 seconds. This is a very important point for juicy breast meat versus the dry stuff you may have had in the past.

The other thing to consider is that chicken thigs and drumsticks actually have better texture if you take them to an internal temperature of 170 degrees F. This allows for a better texture because more of the intramuscular connective tissue breaks down.

While everyone has their favorite type of chicken cut personally, Im more of a wings fan today were specifically cooking with chicken breast.
Chicken breasts boneless meat makes it easy to cook, and goes brilliantly either just as a side or as part of a burger. It is true that the larger the food, the longer it will take to cook, however I think that give so much more flexibility with what you actually use them for.
When it comes to picking your breast, try to pick organic. Not only are there clear ethical reasons behind buying organic chicken meat, but organic meat is always far superior in quality.
Organic chicken meat often has a far better texture and quality of taste than non-organic varieties.
Also try to buy skinless. The meat in chicken breast is generally very lean, but the skin can contain layers of fat that can render and turn greasy when cooked on the grill.

According to the USDA, all poultry should be cooked to an internal temperature of 165 degrees F. Using an instant-read meat thermometer is really the only accurate way to gauge your chicken’s doneness. But in the case that you don’t have a thermometer, cut into the chicken and ensure that the juices run clear. Here are the estimated grilling times for chicken breasts, based on an internal temp of;165 degrees F.;
- Boneless chicken breasts: 7 to 8 minutes per side
- Bone-in chicken breasts: 15 minutes per side

How do I grill the perfect chicken breast? In order to make the best grilled chicken breast, we suggest heating your grill to 400ºF. Grill chicken for 5-7 per side and continue cooking until the internal temperature reaches 165ºF.
Should I pound my chicken before grilling? The option is yours. We dont personally pound our chicken before grilling because we love when a few edge pieces get nice and charred, but option to use a meat tenderizer to pound your chicken so that the entire thing is the same thickness.
How long to grill chicken breast? Grill your chicken breast for around 15-20 minutes, flipping after 7-8 minutes. Grill until the internal temperature reaches 165ºF.
How to prevent your chicken from sticking to the grill? We recommend spraying your grill grates with nonstick cooking spray right before before cooking. Alternatively, you can use a piece of tin foil with nonstick cooking spray.
Is it okay for chicken to be slightly pink? As long as your chicken has an internal temperature of 165ºF, it is safe to eat even if its a little pinkish.
Should you let chicken rest after grilling? Yes! By allowing your chicken to rest you not only 1. let it cool so you can eat it, but 2. the chicken continues to cook a little bit and becomes extra juicy and moist.
