For examples of variations, I love to use fresh herbs and fresh garlic. Or Ill change it up and add some cumin to give it a Tex Mex flare.

I change up the herbs sometimes too! Rosemary and thyme are a great combination as well. And I have tons of both growing in my backyard.

But honestly most days I just need something quick. So I made this with dried herbs to keep things simple and easy.

Also, salt and pepper to your taste, but I do so pretty liberally. Chicken breast is pretty much a blank slate , so I salt and pepper generously.

    Stay Away From High Heat

Chicken is not steak or burgers, where you want a fairly high heat to get a good sear on the outside. Since chicken needs to cook thoroughly but you dont want the skin to burn, its wise to cook it over medium, indirect heat for most of the cooking time. For a charcoal grill, this may mean building a two-level fire or only having coals on half of the grill, and for a gas grill, a medium heat works best.

    2 brine options:

    • Beer brine: Even if youre not a beer lover , soaking chicken in beer adds an incredibly rich, deep flavor to the chicken. Its my favorite grilled chicken trick. For best flavor, use a full-bodied, dry & hoppy beer, such as an IPA.
    • Buttermilk brine: If beer isnt your thing , you can use buttermilk, which is totally classic & has the added benefit of tenderizing the chicken. If you dont have buttermilk on hand, you can DIY it by adding a splash of vinegar or lemon juice to regular ol milk.
