As little as 30 minutes of brining helps the chicken breast, but you can brine chicken breasts in a mild brine for eight to 12 hours.

In this recipe I am using a simple combinations of garlic powder, oregano, basil, salt and pepper. This is my go-to seasoning for chicken breasts because it is simple, versatile and delicious!

For examples of variations, I love to use fresh herbs and fresh garlic. Or Ill change it up and add some cumin to give it a Tex Mex flare.

But honestly most days I just need something quick. So I made this with dried herbs to keep things simple and easy.

Is it okay for chicken to be slightly pink? As long as your chicken has an internal temperature of 165ºF, it is safe to eat even if its a little pinkish.
Should you let chicken rest after grilling? Yes! By allowing your chicken to rest you not only 1. let it cool so you can eat it, but 2. the chicken continues to cook a little bit and becomes extra juicy and moist.

I LOVE this digital meat thermometer. Its an investment but totally worth it. Ive tried dozens of thermometers with inconsistent readings but this one is on the money every time.
If you dont own a meat thermometer, resist the urge to slice into the middle of a chicken breast thats a guaranteed way to lose most of the juices. Instead, prick the chicken with a fork to see if the juices run clear. If the juices are pink, the chicken isnt cooked through.
